1 whole chicken (3 1/2 to 4 pounds)
Salt and freshly ground black pepper
Salt and freshly ground black pepper
4 sprigs fresh rosemary
4 sprigs fresh thyme
1 onion, cut in half
1/2 head garlic
1/2 lemon, cut in half
Olive oil
6 small Yukon gold potatoes, cut in half
6 whole shallots, peeled
2 carrots, peeled and cut on the bias
2 heads escarole, rinsed, and cut into 1 1/2-inch pieces
2 tablespoons Dijon mustard

Steps:

  • Preheat the oven to 450 degrees F.
  • Rinse the chicken inside and out and pat dry. Generously sprinkle salt and pepper inside the cavity, and then add the rosemary, thyme, onion, garlic and lemon. Once the herbs are inside the cavity, truss the chicken.
  • Place the chicken in a roasting pan and rub olive oil over the skin. Sprinkle with salt and pepper, and then place in the oven for 15 minutes.
  • After 15 minutes, take the chicken out and add the potatoes, shallots and carrots to the pan. Roast until the juices run clear, another 45 minutes. Remove from the oven and let rest on a carving board for about 10 minutes.
  • While the chicken is resting, remove the vegetables from the pan and drain most of the chicken fat. On medium heat, add the escarole to the pan and saute until wilted halfway. Combine the Dijon mustard, vegetables and escarole into a serving dish. Carve the chicken, place on top and serve.

Nothing hits the spot quite like a simple roast chicken with vegetables. Nestled on a bed of fingerling potatoes, carrots, shallots, and fragrant lemons, this one-and-done dish is an excellent candidate for a special Sunday roast any time of year.

1 whole chicken (about 4 pounds)
Kosher salt and freshly ground pepper
6 small carrots, peeled and halved lengthwise
3 shallots, peeled and halved lengthwise
1 1/2 pounds fingerling potatoes, halved lengthwise
1 lemon, halved
3 tablespoons extra-virgin olive oil
1/4 cup fresh parsley leaves

Steps:

  • Place chicken on a large plate and season generously with salt and pepper; cover with plastic wrap and refrigerate overnight.
  • Preheat oven to 450 degrees. Let chicken stand at room temperature 30 minutes. Meanwhile, toss carrots, shallots, potatoes, and lemon with 2 tablespoons oil; season with salt and pepper. Arrange in a large roasting pan, with shallots in center and carrots, potatoes, and lemon toward edges.
  • Rub chicken with remaining 1 tablespoon oil, tie legs with twine, and nestle in center. Roast, flipping vegetables around edges once, until chicken is golden and a thermometer inserted into thickest part of breast (avoiding bone) registers 160 degrees, 55 to 60 minutes. Transfer chicken and lemon halves to a carving board and tent loosely with foil. Flip vegetables; return to oven and roast until caramelized and tender, 15 to 20 minutes more. Carve chicken and transfer to a platter or return to roasting pan. Sprinkle with parsley, squeeze lemon over top, and serve with vegetables.

Upgrade boring roast chicken in with fresh herbs and vegetables, and serving it with aromatic gravy!

4 lb chicken
4 sprig(s) fresh tarrigon
4 tsp tarrigon
4 sprig(s) fresh thyme
4 tsp thyme
1 3/4 tsp salt
3/4 tsp ground pepper
2 lb small new potatoes, halved
2 lb carrots, cut into 2 " pieces
2 Tbsp olive oil

Steps:

  • 1. Preheat oven to 450F. Grease heavy large rimmed baking sheet. Pat chicken dry with paper towels. Starting at edge of cavity, slide finger, under skin over each breast half, making pockets. Place 1 sprig tarragon and 1 sprig thyme in each pocket. Sprinkle chicken with 1 1/2 tsp. each minced tarragon and thyme; season with 3/4 tsp salt and 1/4 tsp pepper. Place remaining 2 sprigs tarragon and 2 sprigs thyme in cavity. Place chicken on baking sheet. Roast 30 minutes
  • 2. Meanwhile, in large bowl, toss potatoes and carrots with oil, 2 tsp. each minced tarragon and thyme and remaining salt and pepper. After chicken has roasted 30 minutes, remove from oven. Tilt pan and spoon off most of fat. Arrange chicken in center of pan; spoon vegetables around bird; turning potatoes cut side down.
  • 3. Return pan to oven. Roast until chicken juices run clear when meat is pierced with fork, 30-40 minutes longer. Transfer chicken and vegetables to platter to rest. Pour pan juices into pot; skim fat.
  • 4. Add broth to baking sheet; set over medium heat. Bring to boil; stirring up any browned bits; pour into pot. Boil until reduced slightly, about 5 minutes; add any juices from chicken platter. Mix remaining tarragon and thyme into sauce. Serve with chicken and vegetables.

4 bone-in, skin-on chicken breast halves
4 cloves garlic, minced, or more to taste
2 tablespoons olive oil
1 ½ teaspoons salt, or more to taste
freshly cracked black pepper to taste
1 sprig fresh rosemary, leaves stripped and finely chopped
8 carrots, peeled and chopped
4 red potatoes, quartered
2 slices onion

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Wash chicken breasts and pat dry. Separate the skin from the meat to create a pocket on each breast.
  • Combine garlic, olive oil, salt, pepper, and rosemary leaves in a small bowl; stir to combine. Rub about 1/6 of olive oil mixture under the skin of each breast and rub another 1/6 on the outside of the skin. Sprinkle with additional salt and pepper if you wish.
  • Arrange carrots, potatoes, and onion in the bottom of a roasting pan or casserole dish and season with salt and pepper. Place chicken, skin-side up, on top of the vegetables.
  • Roast in the preheated oven for 30 minutes. Remove from the oven and cover with aluminum foil. Lower the temperature to 375 degrees F (190 degrees C) and cook until vegetables are tender and chicken is no longer pink at the bone and the juices run clear, 20 to 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
