2 teaspoons canola oil
2 cups medium yellow onion, diced
1 cup celery stalk, diced
2 teaspoons garlic, minced
1 cup shredded carrot
3 qt low-sodium chicken broth
1 teaspoon kosher salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
½ teaspoon dried dill
½ teaspoon dried chive
½ teaspoon dried parsley
20 matzo balls

Steps:

  • In a large pot, heat the canola oil over medium heat. Once the oil is shimmering, add the onion, celery, and garlic and sauté until translucent and tender, about 5 minutes.
  • Add the carrots and continue cooking for another 2 minutes, until all of the vegetables are heated through.
  • Add the chicken broth, salt, pepper, garlic powder, dill, chives, and parsley. Bring to a boil, then reduce the heat to medium-low and simmer for about 30 minutes, until vegetables are tender.
  • When ready to serve, add the matzo balls to the simmering soup and cook until heated through, about 5 minutes.
  • Ladle into bowls.
  • Enjoy!

6 cups low sodium chicken stock, preferably homemade
1 carrot, peeled and sliced
1 rib celery, sliced
1/2 onion, peeled and chopped
1/4 cup fresh chopped parsley
1 cup matzo meal
1/4 cup chicken stock
4 eggs, separated
1/4 cup rendered chicken fat or kosher for passover vegetable oil
Salt and pepper

Steps:

  • In a large saucepan combine the stock, carrots, celery, onion and parsley. Bring to a boil, reduce heat and simmer until vegetables are tender.
  • In a mixing bowl, combine the matzo meal, 1/4 cup stock, 4 egg yolks, chicken fat or vegetable oil and salt and pepper. In another bowl, beat the egg whites until frothy but not stiff. Fold the egg whites into the matzo meal mixture. Refrigerate for 15 minutes. Shape the matzo mixture in to 2 inch balls while occasionally dipping your hands in cold water. Carefully add the balls to the simmering soup as you form them. Cover the soup and cook for 30 minutes. Serve hot.

One 5- or 6-pound hen
2 large celery stalks with leaves, chopped
2 large carrots, sliced in big chunks
1 onion, quartered
3 sprigs parsley
3 sprigs fresh dill (or 1 teaspoon dried)
Salt and pepper, to taste
4 eggs, lightly beaten
4 tablespoons chicken fat (from the above soup)
1 cup matzoh meal
2 teaspoons salt
1/4 cup hot water
12 cups salted water

Steps:

  • Wash the chicken with water and place in pot. Cover with water and bring to a boil over high heat, skimming off bubbling foam as it forms. Add celery, carrots, onion, herbs, salt and pepper and simmer, half-covered at lower heat, for at least 45 minutes, until the chicken seems done. The chicken will come away easily from the bone. Pour soup through strainer to get a clear broth. Let cool. When broth has completely cooled, skim off the fat and save for the matzoh balls.
  • In a mixing bowl, mix together 4 eggs and 4 tablespoons chicken fat. Stir in the matzoh meal and salt. Add 1/4 hot water. Cover and refrigerate for at least 1 hour. Form the matzoh dough into balls the size of walnuts. Bring the salted water to a boil. Add the matzoh balls, cover, and cook for 20 minutes (don't even peek!). Bring the chicken broth to a simmer. Remove matzoh balls from hot water with a slotted spoon and add to the simmering chicken broth just a few minutes before serving.

2 cups matzo meal
9 eggs
1/2 cup Kosher for Passvoer canola or vegetable oil
Salt and pepper to taste
1 tablespoon salt
3 carrots cut into chunks
2 medium onions cut into chunks
2 parsnips cut into chunks
3 turnips cut into chunks
12 cloves of garlic
1 leek thinly sliced
3/4 teaspoon tumeric
Pepper to taste
Handful of parsley and dill
Water

Steps:

  • For the matzo balls: Mix all of the ingredients together until evenly distributed (there should be no lumps). Cover with waxed paper and refrigerate for 30 minutes. Roll dough into balls about the size of a golf ball. To keep batter from sticking to your hands, rub them with oil or water as needed. Drop balls immediately into a large pot of boiling water. Cook the balls for about 20 minutes or until done. They will sink to the bottom and then float back up to the top as they cook and the water returns to temperature. The balls should have expanded to be about 2 1/2 times their original size (about the size of a tennis ball). Check to make sure that the balls are done by cutting in half. The center should look grainy and yellow. Remove balls from pot and use immediately or set them in a pot of cold water and let cold water run over them until completely cooled. Set them in cold water in the refrigerator until ready to use. They may be reheated either in the broth or in the water.
  • For the broth: In a large stockpot, add all ingredients and water. Bring to a boil, reduce heat and simmer for about 2 hours. Taste and adjust seasoning. Let cool. Strain vegetables out of the broth. Use immediately or it may be frozen.

1 whole chicken
3 parsnips, peeled and cut into bite-size pieces
7 large carrots, cut into bite-size pieces
1 bunch celery, cut into bite-size pieces
1 onion, cut into bite-size pieces
1 bunch fresh dill, chopped
1 bunch fresh parsley, chopped
6 cups water
4 eggs
¼ cup vegetable oil
1 cup matzo meal
1 quart chicken stock
1 rotisserie chicken, bones removed and meat cut into bite-size pieces
salt and pepper to taste

Steps:

  • Place raw chicken in a large stockpot.
  • Add parsnips, carrots, celery, onion, dill, and parsley to the stockpot; cover with water, and boil until the chicken is 200 degrees F (95 degrees C) or begins to fall apart, about 1 hour.
  • Remove chicken from the stock and set aside for another use.
  • Whisk together eggs and oil in a medium-sized mixing bowl.
  • Add matzo meal to the bowl with eggs and oil, stirring until well combined. Cover and refrigerate for 20 minutes.
  • Remove matzo mixture from the refrigerator and gently hand-roll into 1 inch balls. Be careful not to over-roll as this can make the matzo balls tough.
  • In a separate pot, heat chicken stock. Place matzo balls into the stock and simmer until they are soft, at least 1 hour.
  • Transfer the matzo balls into the soup pot with the vegetables. Season with salt and pepper to taste.
  • To serve, place pieces of the roasted chicken into soup bowls and ladle the chicken soup with matzo balls over it. Enjoy!
