Rise And Shine German Fruit Pancake Recipes
GERMAN PANCAKES
This was one of my favorites breakfasts growing up. It isn't sweet in itself (no sugar), so you can sweeten to taste with syrup, jam, fruit, or a dusting of powdered sugar--whatever you like. It's very good, so don't be surprised if everyone wants seconds or even thirds!

Steps:
- Preheat oven to 450* F. Spray a glass pie plate with nonstick spray and rub it with a paper towel to coat well. Spray and rub a second time (this makes it release much better).
- Beat the eggs in a batter bowl.
- In a small bowl, combine flour and salt; add to eggs in 4 additions, mixing well after each.
- Add milk in 2 additions, stirring after each.
- Note: don't beat too hard or use a whisk--too much beating or incorporating too much air will prevent it turning out well.
- Stir in butter; pour into pie plate.
- Place in center of oven and bake at 450* F for 10 minutes.
- Turn temperature down to 350* F and bake an additional 20 minutes.
- Remove from oven; cut into wedges and serve hot with desired accompaniments.
