DENVER BISCUITS
Denver biscuits are biscuits that have yeast in them to make them raise mile high.

Steps:
- Dissolve yeast and sugar into 1/4 cup of milk. Add to 1 pint milk that has been scalded, mashed potatoes, shortening, sugar, and flour. Mix well and let rise 2 hours. Mix in baking soda, baking powder, and salt. Add enough flour to make soft dough, let rise 1 hour. Roll out the Denver biscuits on floured board, place in greased pan. Let rise 2 hours. Bake your Denver biscuits at 400 degrees for 20 minutes.

Steps:
- Preheat oven to 450 degrees Plavee flout in large bowl. Cut butter with fork until crumbly.
- Cover and place in fridge 10 minutes.
- Slowly pour in buttermilk and stir hust until moistened.
- Turn dough unto floured surface and knead 3-4 times with your hands, adding flour as needed to prevent sticking.
- With well-floured hands pat dough out into the center as if folding letter. Repeat 2-3 more times, beginning with patting the dough out.
- Pat the dough out a final time until it is 1/2" thick.
- Cut with biscuit cutter dipped in flour and place the biscuits on the baking sheet with the sides touching.
- Bake 12-15 minutes, until lightly browned.
- Remove biscuits from the oven and brush the tops with melted butter.

- Combine sugar, soda and sour cream and mix well.
- Stir in biscuit mix.
- Sprinkle small amount of dry biscuit mix on counter and dump out batter.
- Knead 10-12 times.
- Cut out 12 biscuits about 2 inches round.
- Bake at 450 for 16-18 minutes til golden brown.

HARDEE'S CINNAMON RAISIN BISCUITS
When I lived in the mid-west, I use to get these biscuits as a morning breakfast on occasion....well, on more occasions than I should have. I loved the warm tender biscuits with cinnamon swirlled in it and the sweet icing melting down. Having moved to California 12 years ago, I have really missed these as there are no Hardee's out here. I've found a copy cat recipe for it and I'm on cloud 9!! The person who posted this on another site said she use to work at Hardee's so this is the real-deal ! I can't wait to make these for my husband and kids!

Steps:
- Mix flour, baking powder, salt, baking soda and sugar.
- Blend in shortening with a fork until mixture is fine.
- Add milk and stir until just mixed. Only add enough milk to form dough. Add raisins and mix.
- Add cinnamon and mix until swirled through batter. Do not mix batter any more than you have to.
- Scrape batter onto well-floured surface. Flour top and pat down with hands until 1/2-inch thick.
- Cut with 2-inch cutter and place on greased baking pan.
- Bake at 400°F for 10-15 minutes until golden brown.
- Frost with powdered sugar glaze icing.

Important: Use fresh, aluminum-free baking powder; this is less salty than regular baking powder and allows you to add more without affecting taste.

- Preheat oven to 500 degrees F (260 degrees C).
- Mix flour, baking powder, and salt together in the bowl of a stand mixer with a paddle attachment. Add unsalted butter and mix at medium speed until well incorporated and the mixture resembles wet sand, about 4 minutes.
- Remove the bowl from the mixer and fold in buttermilk until dough sticks together.
- Dump dough onto a flour work surface; pat into a rectangle. Pat remaining dry crumbs into the mixture by hand.
- Cut dough in half with a floured bench knife; stack cut halves on top of each other. Press layers together to about 1 1/2-inch thickness, shaping a long rectangle as you go. Repeat 3 to 5 times.
- Cut dough into 8 even squares with the bench knife. Cut off uneven edges and put these scraps to the side; clean cuts on all sides will encourage rise. Pat scraps together to make 1 odd-shaped ninth biscuit.
- Place biscuits close together in a 9-inch square pan and brush with melted salted butter. Place pan on top of the warm stove for 10 to 15 minutes to rise.
- Bake biscuits in the preheated oven, checking halfway through bake time, until tops are golden brown and a toothpick inserted into the center comes out clean, 14 to 18 minutes.

- Whisk together the flour, baking powder, sugar and salt. Cut in the shortening until mixture resembles coarse crumbs. Add the buttermilk and stir together with a spoon. Turn out onto a generously floured surface. DO NOT KNEAD.
- Roll or pat out your dough to about 1 inch thick. Cut out biscuits. I used a 3 inch biscuit cutter so they would be a bigger biscuit to use for breakfast sandwiches. Spray a baking sheet lightly with cooking spray. Place biscuits touching on baking sheet. Brush tops with additional buttermilk. Bake in preheated 425 degree oven for 15 to 20 minutes until brown on top. Makes 10 biscuits.
