PLAIN AND PERFECT BREAD PUDDING

Steps:
- Preheat the oven to 325 degrees F. Butter a 9-inch baking dish.
- Arrange the bread cubes tightly in the prepared baking dish. Beat together the butter, milk, vanilla and eggs in a large bowl. Add the granulated and brown sugars and mix until dissolved. Pour the mixture over the bread.
- Put the baking dish on a baking sheet. Bake until the crust is golden brown, 55 to 70 minutes. Let rest for 20 minutes before serving.
RICH & THICK COCOA BREAD PUDDING
This is my Sons favorite dessert when he comes for dinner. It is wonderful warm with a scoop of vanilla ice cream melting down the sides.

- 1. Spray a 13x9 dish with non stick spray. Cut the wheat bread into medium size cubes then put in the 13x9 and let it sit out for a day or you could set it out the night before with a dish towl over it.
- 2. In a large pyrex liquid mixing bowl if you have one or a regular large bowl, mix your milk, eggs and vanilla and blend to break the yolks up. Then mix your sugar with your cocoa and stir them until mixed well, then add cocoa mix to the milk mixture and blend well.
- 3. Slowly pour chocolate milk mixture all over the dry bread. With a spatula press the bread down gently all over to absorb the liquid. I cover the mixture and let it sit 20 minutes to let bread absorb liquid. At this time sprinkle mini chips over the top. While waiting the 20 minutes preheat your oven to 350F.
- 4. Bake the bread pudding for 1 hour 20 minutes or until pudding is mostly firm and center test done with a toothpick. Remove from oven let cool. I serve it slightly warm with a scoop of ice cream on top. Enjoy! 8) I keep leftovers covered and in the refrigerator.
COCOA-CHOCOLATE PUDDING
Shave chocolate over the top of this rich chocolate pudding for a special touch.

- Bring 1 1/2 cups of the milk, the sugar and cocoa to a simmer in a medium saucepan over medium-high heat, stirring occasionally to dissolve the sugar. Meanwhile, whisk the remaining 1/2 cup of milk with the cornstarch, vanilla, egg yolks, and salt in a medium bowl. Gradually whisk the hot milk mixture into the egg mixture.
- Return the milk-egg mixture to the saucepan and continue to cook, whisking constantly, until the pudding comes to a full boil. Reduce the heat to maintain a simmer, and continue whisking until thick, about 2 or 3 minutes more.
- Divide the pudding among 4 to 6 small ramekins or dessert cups. Cover with plastic wrap and refrigerate until set, at least 4 hours or up to overnight. Serve each pudding with a dollop of whipped cream and a sprinkle of chocolate shavings.

- Preheat the oven to 325 degrees F (165 degrees C).
- Combine cream, milk, and 1/2 cup sugar in a heavy saucepan and bring to a simmer over medium-low heat, stirring until sugar dissolves, 3 to 5 minutes. Remove from heat, add 1 cup chocolate chips and whisk until melted and smooth.
- Whisk egg and vanilla extract together in a large bowl to blend. Gradually whisk in hot chocolate mixture. Set custard aside to cool, stirring often, for about 10 minutes.
- Add bread cubes and remaining chocolate chips to the custard and toss to coat. Transfer to a 1 1/2-quart shallow oval baking dish. Sprinkle 2 tablespoons sugar over the pudding.

- Chop the chocolate into 1/4-inch chunks. Reserve 2/3 cup and set aside (you'll use this for sprinkling over the bread pudding before baking).
- In a medium saucepan, whisk together the half and half, brown sugar and cocoa powder; bring to a boil. Off the heat, whisk in the remaining chocolate, bourbon and cinnamon.
