Mexican Hot Cocoa image

Yield about 5 quarts.

Number Of Ingredients 7

12 cups water
3 to 4 cinnamon sticks (3 inches)
2 cans (16 ounces each) chocolate syrup
3 cans (12 ounces each) evaporated milk
1 can (14 ounces) sweetened condensed milk
1-1/2 teaspoons vanilla extract
Whipped cream, ground cinnamon and cinnamon sticks, optional

Steps:

  • In a large kettle, combine water and cinnamon sticks. Bring mixture to a boil; reduce heat, cover and simmer for 10-15 minutes or until liquid turns light brown. Remove cinnamon sticks and discard. , In another bowl, combine the chocolate syrup, milks and vanilla; slowly stir into cinnamon water. Return mixture to a simmer just to heat through. Top servings with whipped cream, cinnamon and cinnamon sticks if desired.

3 -4 tablespoons granulated sugar
3 tablespoons Nestle Toll House Baking Cocoa
1/4 teaspoon ground cinnamon
2 1/3 cups milk
1/2 teaspoon vanilla extract

Steps:

  • In a small heavy-duty saucepan; combine sugar, cocoa and cinnamon.
  • Over medium heat, gradually stir in milk and stir constantly until hot, do not boil.
  • Remove from heat and stir in vanilla extract. Beat with a wire whisk until frothy and pour into cups. Serve immediately.

Perfect Mexican Hot Chocolate image

This Mexican hot chocolate recipe makes a batch of rich, spiced hot chocolate that warms winter perfectly.

2 cups whole milk
1/2 teaspoon vanilla extract
2 tablespoons plus 1 teaspoon sugar
1/2 teaspoon ground cinnamon or 2 cinnamon sticks, lightly crushed
Pinch kosher salt
Generous pinch cayenne pepper or hot chili powder (optional)
3 1/2 ounces chopped dark chocolate, such as Valrhona 70%
Whipped cream, to serve (optional)

Steps:

  • Combine the milk, vanilla, sugar, cinnamon, salt, and cayenne or chili powder (if using) in a medium pot. Heat over medium heat until simmering. Reduce the heat a little and gently simmer, stirring occasionally, for about 10 minutes to bloom the cinnamon and spices.
  • Add the chopped chocolate. Cook, whisking, until the chocolate is fully melted and emulsified. Taste for sweetness and spice.
  • If using cinnamon sticks, strain the liquid through a mesh sieve into cups. If not using cinnamon sticks, pour the Mexican hot chocolate directly into mugs.
  • Serve warm with a dollop of fresh whipped cream, and perhaps a garnish of a few chocolate shavings or additional cinnamon sticks.

12 ounces evaporated milk
1 1/2 cups hot water
1/4-1/3 cup sugar
1/4 cup unsweetened cocoa powder
1 dash salt
1/2 teaspoon vanilla

Steps:

  • Measure water into a 2-quart sauce pan. Add sugar, cocoa and salt. Heat water over medium heat. Stir mixture until cocoa dissolves completely. Gently bring mixture to a boil. Reduce the heat to a fast simmer and simmer it for about 5 minutes. Finally add the evaporated milk and stir to blend. Reheat briefly, but don't boil. Pour the hot chocolate into small mugs.
  • This recipe makes 4 6-ounce size servings.
  • I added a spoonful of whipped topping on the top of each filled mug. It was delicious!

1/4 cup unsweetened cocoa powder
1/2 cup sugar
4 ounces bittersweet chocolate or 4 ounces semisweet chocolate, chopped
1 pinch salt
miniature marshmallow
whipped cream (optional)

Steps:

  • Bring milk, cocoa powder and sugar to simmer in heavy large saucepan over medium-high heat, whisking frequently.
  • Add chocolate; whisk until melted and smooth.
  • Add salt; bring to simmer, whisking constantly until frothy.
  • Ladle into 4 mugs.
  • Sprinkle with marshmallows or dollop of whipped cream.
  • Makes 4 servings.

2 cups skim milk
4 tablespoons cocoa powder
5 tablespoons sugar
1/4 teaspoon cinnamon
1 teaspoon butter
1/3 cup skim milk
2 teaspoons cornstarch
1/2 teaspoon vanilla extract
20 mini marshmallows (extra stale)

Steps:

  • Heat the 2 cups of milk, cocoa powder, sugar, cinnamon, and butter on medium. Use a whisk to make sure the cocoa powder doesn't clump.
  • Put the corn starch in a small cup and add 1/3 cup of milk. Mix together with a fork untill it is completely dissolved.
  • Add corn starch mixture to cocoa mixture and whisk. Heat untill thickened but don't boil.
  • Take off the heat and add vanilla.
  • Put 10 marshmallow into each of 2 mugs and pour hot cocoa over.
