FUDGY FLAX BROWNIES (NO FLOUR, OIL OR BUTTER)



Fudgy Flax Brownies (NO Flour, Oil or Butter) image

These flourless Fudgy Flax Brownies are the fudgiest, richest, softest, chewiest brownie! Made without any flour, oil or butter. Flourless, healthier and so good!

1/2 cup raw cacao powder
1/2 cup golden flaxseed meal
1 teaspoon baking soda
1/2 teaspoon fine Himalayan salt
1/2 cup full fat coconut milk
1 egg
1 teaspoon vanilla extract
4 tablespoons raw honey (or maple syrup)
1 tablespoon sunflower seed butter (or other nut butter)
1/4 cup semisweet mini chocolate chips (dairy/soy-free brand)

Steps:

  • Preheat the oven to 350°F.
  • In a bowl, mix together the cacao powder, flaxseed meal, baking soda and salt.
  • In a separate bowl, whisk the coconut milk, egg, vanilla, honey and sunflower seed butter.
  • Gently mix wet and dry ingredients to form a batter.
  • Fold the chocolate chips into the batter and pour it evenly across the bottom of a 9-inch square silicone pan. If you are using an aluminum or non-stick pan, you can line it with parchment paper or grease it with coconut oil.
  • Bake until a toothpick inserted into the center comes out clean, about 15-20 minutes. Set pan over a wire rack to cool then cut into squares.

This is about the fudgiest, heaviest brownie I've ever baked. I'm not too much a fan of the light, cakey brownie, so this one hits the spot.

1 cup butter, melted
1 1/2 cups sugar
1 1/2 cups light brown sugar
1 tablespoon vanilla extract
4 eggs
1 1/2 cups flour
1 cup cocoa powder
1 teaspoon salt
1 1/2 cups semi-sweet chocolate chips or 1 1/2 cups dark chocolate chips

Steps:

  • Preheat oven to 350 degrees F.
  • Use baking spray on a Baker's Edge pan or 9 x 13 pan. (Don't try to make this in a smaller pan unless you half the recipe -- it's a lot of batter.).
  • I usually don't use a mixer on brownie batters, but this one comes out thick. So, mix the butter sugar and vanilla on low speed until creamy.
  • Beat in each egg separately until well blended.
  • Whisk together the flour, cocoa and salt in another bowl.
  • Mix the flour mix with the butter/egg mix until well blended.
  • Stir in the chocolate chips.
  • Spread into the prepared pan and bake for 40 minutes.
  • A toothpick will not come out clean until this is basically a brick, so don't use that test. If it comes out with crumbly bits on it rather than wet slime, it's done.

MINTY FUDGE BROWNIES

I adopted this from the Recipezaar account. They are more a cakey brownie when right out of the oven but get more fudgy after cooling. They have a nice light mint flavor. If you can't find the mint chocolate chips you can recreate with regular semi-sweet chips and a few drops of peppermint oil (as that is what makes the mint chips minty).

1 1/4 cups flour, unbleached
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/2 cup butter
3 tablespoons water
10 ounces mint chocolate chips
1 1/2 teaspoons vanilla extract
3 large eggs
1 cup chopped nuts (optional)

Steps:

  • Preheat oven to 325° F and grease a 13x9-inch baking pan.
  • In a small bowl, combine flour, baking soda, and salt; set aside.
  • In medium saucepan, combine sugar, butter and water; bring JUST TO A BOIL then remove from heat.
  • Add mint-chocolate chips and vanilla extract; stir until chips are melted and mixture is smooth.
  • Transfer to a large bowl and let cool slightly (so you don't cook the eggs).
  • Add eggs, one at a time, beating well after each addition.
  • Stir in flour mixture gently (be sure not to overmix).
  • Stir in nuts, if using.
  • Spread into prepared pan.
  • Bake for 28-32 minutes.
  • Cool completely in pan on a wire rack.

RICH CHOCOLATEY FUDGE BROWNIES

These brownies are so incredibly moist and rich but they still have little to no fat. Whenever I make them at my house, they're usually gone within a day or two. They can be cooked in almost any metal pan as long as the batter doesn't go any higher than 2/3s of the way up the sides but I usually use a 9 x 13 pan.They're great alone but taste even better reheated in the microwave for a few seconds with a dollop of whipped cream on the side.

1 cup applesauce
1 cup cocoa
2 cups sugar
4 eggs (or 8 egg whites, I usually do two normal eggs and 3 or 4 egg whites)
4 teaspoons vanilla
1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon paprika
1 cup marshmallows, nuts, chocolate chips, dried fruit ect

Steps:

  • Preheat oven to 350 degrees.
  • Grease pan or spray with pam.
  • Combine applesauce and cocoa until smooth.
  • Add sugar and beat until smooth.
  • Add eggs gradually, making sure each one is thoroughly mixed inches.
  • Add vanilla, flour and salt and mix until moist.
  • Add any additions (nuts, fruit, marshmallows, spices ect.).
  • Pour into baking pan and bake for 20-30 minutes depending on your oven. Try the toothpick trick at the 20 minute mark and if it comes up with only a few crumbs, the brownies are finished.

¾ teaspoon baking powder

½ cup evaporated milk
⅓ cup sweetened cocoa mix
1 teaspoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch square baking pan.
  • In a large bowl, combine the flour, baking powder, salt, sugar and unsweetened cocoa. Stir in the oil, vanilla, and 3/4 cup of evaporated milk until well blended. Spread the mixture evenly into the prepared pan.
  • Bake for 25 to 30 minutes in the preheated oven, until a toothpick inserted into the center comes out clean.
  • To make the frosting: In a small saucepan, combine the remaining evaporated milk, sweetened cocoa, and butter. Cook over medium heat until almost boiling, remove from heat and chill until brownies are ready. When brownies are completely cool, frost with the chilled icing and cut into bars, or frost them individually.
