Oh soooo yummy!! This recipe is easy to whip up and is so full of flavour. I got this recipe from a family friend.

2 cups uncooked long grain rice
3 1/2 cups water
1/3 cup cooking oil
1/2 cup soya sauce
1/2 envelope onion soup mix

Steps:

  • Prehaeat oven to 350 degrees.
  • Combine all ingredients in casserole dish.
  • Cover and bake for 1 hour.
  • Stir once after 40 minutes.

ELEANOR'S BROCCOLI & RICE SUPREME

This is my husband's grandmother's broccoli casserole and it is his absolute favorite! The original recipe calls for cheese whiz, but personally I prefer velveeta. You could substitute any kind of cream soup, but I like the cream of mushroom for this recipe. Enjoy!

1 cup rice
1 cup milk
8 ounces Velveeta cheese (cubed)
1 (10 ounce) can cream of mushroom soup
2 tablespoons butter
2 stalks celery (chopped)
1 onion (chopped)
10 ounces frozen broccoli
1/2 teaspoon salt

Steps:

  • Cook the rice according to package directions. In a small pan, melt butter and saute chopped celery, and chopped onion. Cook for 5 minutes or until soft. In a large bowl, mix soup, milk, and cheese. Combine rice, cheese mixture, vegetables and broccoli and mix well. Pour into a small casserole dish and bake for 45 minutes at 350 degrees.

1 1/4 cups raw rice
1 1/2 cups miniature marshmallows
1 (8 ounce) can crushed pineapple, drained (save the juice)
1 (3 ounce) package lemon gelatin
1 cup boiling water
whipped topping

Steps:

  • Wash and steam 1 1/4 cups rice (can use rice cooker). Drain off any liquid. Add marshmallows, crushed pineapple, drained (save the juice) and cool in refrigerator. Dissolve gelatin in boiling water. Add chilled pineapple juice. Cool until slightly thickened and add to rice. Add whipped topping to make desired creaminess.

This is one of my favorite dishes that my mom made. My kids love it too. The rice is wonderful and the chicken stays moist because of the slow cooking.

1 -1 1/2 lb chicken, cut-up (I prefer thighs and bone-in breasts)
1 1/2 cups Minute Rice
1 (10 3/4 ounce) can cream of celery soup
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
1/4 cup butter or 1/4 cup margarine, melted
1/4 cup water
seasoning salt, to taste
pepper, to taste

Steps:

  • Mix all ingredients except chicken and spread in a greased, (I use non-stick spray.)13x9 inch pan.
  • Place chicken on top (skin side up).
  • Season the chicken pieces with salt and pepper.
  • Cover tightly with foil.
  • Bake at 300 degrees for 2 hours.
  • Remove foil. You can place under broiler for a few minutes to brown chicken pieces if you like (my mother did not, but I like my chicken browned so I added this step).

This was shared by a friend many years ago. It's an oldie, but still a goodie. The original recipe called for a can of water chestnuts, drained and diced. I omit them, but they're good if you enjoy a little 'crunch' in a casserole. Along with a fruit dish (hot or cold, depending on the season) and rolls, this makes a very nice Sunday dinner.

1 package uncle ben long grain and wild rice blend (Original Recipe)
3 cups cooked chicken, shredded
1 can cream of celery soup
1 (2 ounce) jar chopped pimiento, drained
1 medium onion, chopped
2 (14 ounce) cans French style green beans, drained
1 cup mayonnaise
1/2 teaspoon salt
1 tablespoon fresh lemon juice (I add a little extra)
1 1/2 cups shredded sharp cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Cook rice according to package directions.
  • In a very large bowl, mix rice with next 8 ingredients, stirring well to blend.
  • Pour mixture into a lightly-greased 13x9-inch casserole dish.
  • Sprinkle shredded cheese evenly over the top.
  • Bake, uncovered, for approximately 45 minutes, until mixture is bubbly.

Steps:

  • Preheat oven to 350 degrees.
  • Prepare chicken Rice-A-Roni, per package directions.
  • Spread rice evenly in buttered 9x13 baking dish.
  • Place uncooked, diced chicken breast on top of rice.
  • Mix whipping cream and chicken soup together, and pour on top of chicken and rice.
  • Baked, uncovered for 30-40 minutes, or until the juice of the chicken pieces runs clear.

While this may appear to be just another carbon copy wild rice recipe, there is one key difference...you don't have to cook your chicken ahead of time! Good enough for company or a potluck, but really very simple and total comfort food. It was a big hit in our family and will be a keeper for sure! The base recipe was a Silver award winner from Yankee Magazine recipe contest submitted by Glenna Anderson Muse, with a lot of changes.

2 (4 1/3 ounce) boxes wild rice mix
3 -4 boneless skinless chicken breasts, cut into bitesized pieces
2 (15 ounce) cans diced tomatoes, drained
1 (10 1/2 ounce) can cream of mushroom soup
1 small red onion, diced (I omitted and used 1 teaspoon onion powder instead)
1 (8 ounce) can water chestnuts, coarsely diced
2 celery ribs, diced
1/3 cup pecans, chopped
1 cup light mayonnaise
salt and pepper (to taste)
1/4 teaspoon ground nutmeg
1 teaspoon garlic powder
8 ounces monterey jack and cheddar cheese blend

Steps:

  • Preheat the oven to 350 degrees F.
  • Prepare the rice according to the package directions.
  • Place the cut up chicken breasts in the bottom of a greased 13x9-inch casserole dish.
  • Combine the rice with all of the remaining ingredients (except the cheese).
  • Spoon the rice mixture around the chicken breasts.
  • Sprinkle the cheese on the chicken and rice.
  • Cover and bake for 30 minutes.
  • Remove the cover and cook 15 minutes more, or until the cheese is brown and bubbly and the chicken is cooked through.
