If you are looking for a different and delicious salad, this is it. Cooked cold rice with crumbled bacon, slivers of fresh spinach, green onions and celery and mixed with an Italian dressing. Great make ahead.

1 cup Italian salad dressing (I like Good Seasons prepared per pkg)
2 tablespoons soy sauce
1 teaspoon sugar
6 cups chilled cooked rice
4 cups thinly sliced fresh spinach
1 cup thinly sliced celery
1 cup sliced green onion
1 cup crumbled crisp cooked bacon

Steps:

  • Combine Italian dressing, soy sauce and sugar in a large salad bowl and mix well.
  • Add rice and mix.
  • Chill covered until ready to serve.
  • Add rest of ingredients just before serving and mix well.

My friend Nancy served this salad at a backyard barbeque years ago, and I had to have the recipe. I've been making it ever since and it's always a hit. I often make it a day ahead and then bring it to room temperature and add the nuts just before serving.

1 1/2 cups white rice
1 (10 ounce) box frozen chopped spinach
1/2 cup slivered almonds
1/4 cup red onion, cut in 2 inch slices
1/2 cup canola oil
2 tablespoons cider vinegar
2 tablespoons soy sauce
1 teaspoon sugar

Steps:

  • Cook rice in salted water according to package directions, then let cool.
  • Thaw spinach and squeeze out the water.
  • Toast almonds in a 250-300 degree oven till light brown.
  • Combine dressing ingredients in a jar or cruet and shake well to combine.
  • Toss together cooled rice, spinach and onions.
  • Add dressing and mix well.
  • Refrigerate several hours or overnight to combine flavors.
  • Add toasted nuts just before serving.
  • Can be served cold, but it's better at room temperature.

A hearty salad with a rice base, spinach, vegetables and dried fruits and nuts, a light vinaigrette dressing, and a topping of tangy crumbled Feta. This Rice and Spinach Salad is a fine accompaniment to many meals and a great addition to potlucks.

¾ cup raw long-grain rice, cooked according to package directions, and cooled completely
2-3 oz fresh spinach (preferably small leaf; if large, torn into bite-sized pieces)
¾ cup celery, chopped
2/3 cup sweet red pepper, coarsely chopped
½ cup white button mushrooms, sliced
½ cup dried cranberries or raisins
½ cup peanuts or cashews
1/3 cup red onion, diced or sliced
1/3 - ½ cup crumbled Feta
2 tbsp soy sauce
2 tbsp olive oil (plain or flavor-infused)
1½ tbsp vinegar (e.g., white, red wine, or champagne vinegar)
½ tbsp maple syrup or honey
1 tsp Dijon mustard
1 - 2 garlic cloves, minced
Chopped fresh herbs (e.g., parsley, dill, oregano, thyme) (optional)
Sprinkle of fine sea salt
Freshly ground black pepper

Steps:

  • Vinaigrette Dressing: Combine all ingredients in small dish. Whisk ingredients well to combine. Set aside.
  • Salad: Cook rice according to package directions. Cool completely. Wash and chop/slice vegetables. Measure out all ingredients.
  • Assembly: In serving bowl, combine the cold cooked rice with all other ingredients except the Feta. Toss gently to combine. About 15-20 minutes prior to serving, drizzle enough of the dressing over salad mixings to lightly coat. Refrigerate. At time of serving, add more vinaigrette dressing if needed and sprinkle the crumbled Feta over top of salad.

4 cups water
1 cup wild rice
1 red bell pepper
3 cups fresh spinach leaves, chopped
1 8-ounce can sliced water chestnuts, drained, diced
1/2 pound cooked medium shrimp
2 celery stalks, sliced
2/3 cup chopped green onions
2 tablespoons red wine vinegar
1/4 teaspoon dry mustard
1/2 cup olive oil
1/2 teaspoon dried basil
1/2 teaspoon dried tarragon

Steps:

  • Combine water and rice in heavy medium saucepan. Season lightly with salt and bring to boil. Reduce heat to low; cover and cook until rice is tender, about 40 minutes. Drain and cool.
  • Meanwhile, char red bell pepper over gas flame or under broiler until blackened on all sides. Place in paper bag and let stand 10 minutes. Peel, seed and chop bell pepper.
  • Combine wild rice, bell pepper, spinach, water chestnuts, shrimp, celery and green onions in large bowl.
  • Whisk vinegar and mustard in small bowl to blend. Gradually whisk in olive oil. Add basil and tarragon. Season dressing to taste with salt and pepper. Add dressing to salad and toss to coat. (Can be prepared up to 4 hours ahead. Cover and refrigerate.)

I got this recipe from my sister-in-law, who is a very good cook. It's delicious and easy. The cook time is boiling the rice. I use my microwave for the bacon.

  • Mix cooked rice with next 6 ingredients.
  • Toss lightly.
  • Brown bacon and put in with salad just before serving.

1 cup Uncle Ben's converted brand rice (or other white rice)
1/2 cup Italian salad dressing
1 tablespoon soy sauce
1/2 teaspoon sugar
2 cups fresh spinach, cut into thin strips
1/2 cup sliced celery
1/2 cup sliced green onion, including tops
1/2 cup bacon, fried crisp & crumbled (about 5 strips)

Steps:

  • Cook rice according to package directions. Cool slightly, about 10 minutes. Combine the Italian dressing, soy sauce and sugar and stir into rice. Cover and chill at least one hour or as long as overnight. Just before serving, fold in the spinach, celery, green onions and bacon.

1 1/2 cups water
3/4 cup brown rice
Coarse salt and ground pepper
2 tablespoons olive oil
2 teaspoons red-wine vinegar
2 tablespoons chopped fresh dill
1 garlic clove, minced
1/4 teaspoon sugar
1 medium cucumber, peeled, halved lengthwise, seeded, and sliced crosswise 1/4-inch thick
2 cups baby spinach
1 pint cherry tomatoes, halved

Steps:

  • Bring the water to a boil in a medium saucepan. Stir in brown rice and 1 teaspoon coarse salt. Cover and simmer over low heat until rice is tender and has absorbed all liquid, about 40 minutes. Remove from heat; let stand 10 minutes, then fluff with a fork.
  • In a large bowl, whisk together oil, vinegar, dill, garlic, and sugar. Season generously with salt and pepper. Add rice, cucumber, spinach, and tomatoes, and toss to combine. Serve immediately.
