Ribeye steak is great on its own, but cooked in homemade creamy black truffle butter, it is simply indulgent! This recipe only takes 20 minutes from start to finish, making a quick, yet satisfying and impressive dinner.

For the truffle butter:
1 stick butter, room temperature
1/2 black truffle, finely chopped
pinch of flake sea salt
For the steaks:
1 tablespoon canola oil
2 rib-eye steaks
Few garlic cloves
Few sprigs of fresh thyme
generous pinch of sea salt and freshly ground black pepper

Steps:

  • Start by making the truffle butter. Mix the room temperature butter with the chopped truffle and flake sea salt to a homogenous paste. Set aside.
  • Preheat a cast-iron skillet over high heat until smoky. Add 1 tbsp canola oil and sear the steaks for 4 minutes or until a brown crust has formed. Flip, add the truffle butter in, and cook for another 4 minutes while basting the steaks with the butter sauce.
  • Remove the steaks from the pan and loosely cover for 5-7 minutes. Slice or serve as a whole, with extra truffle butter on top.

2 sticks salted butter, softened
1/3 cup finely minced fresh parsley, plus more if needed
1/4 teaspoon red pepper flakes
A pinch of coarsely ground black pepper, plus more if needed
1 clove garlic, finely minced
1 lemon, zested and halved
Salt, optional
Salt and freshly ground black pepper
4 rib eye steaks, 2 inches thick
2 tablespoons butter

Steps:

  • For the cowboy butter: Well in advance, make the cowboy butter. Place the softened butter in the bowl of a mixer fitted with a paddle attachment. Whip the butter until it's fluffy. Add the parsley, red pepper flakes, black pepper, garlic, lemon zest and the juice of half the lemon. Mix it until it's totally combined, scraping the sides as needed. Add more parsley, more lemon juice, more pepper or salt if you'd like.
  • Lay out a long piece of plastic wrap and scoop the butter mixture in a long strip down the middle of it. Carefully pull one side of the plastic wrap over the butter, squeezing it gently to form it into a log. Continue to roll the log of butter into a roll. When it's all rolled up, twist the ends (like a piece of candy) until they become very taut (this means the butter is pressing together inside the plastic to form a cohesive roll). Place the roll of butter into the fridge so it will harden, or into the freezer if you need to speed along the process.
  • For the steaks: Preheat the oven to 475 degrees F. Sprinkle salt and pepper on both sides of the steaks.
  • Melt the butter in a heavy ovenproof skillet over medium-high heat. When it's melted and golden brown, sear the steaks for about 45 seconds per side. Set in the oven to finish, about 3 minutes.
  • Lay a thick slice of cowboy butter on top of each steak so it will begin to melt. Serve within 5 minutes.

½ cup unsalted butter, softened
2 teaspoons truffle oil
⅛ truffle, thinly shaved
1 pinch sea salt to taste
4 (6 ounce) New York strip steaks
1 pinch sea salt and ground black pepper to taste
2 tablespoons olive oil

Steps:

  • Mix butter, truffle oil, shaved truffle, and sea salt together in a bowl. Cover and refrigerate for at least 1 hour.
  • Place a baking pan in the oven and preheat to 350 degrees F (175 degrees C).
  • Season steaks with salt and pepper.
  • Heat oil in a heavy skillet over medium-high heat until shimmering. Add steaks, working in batches if necessary, and sear until browned, about 3 minutes per side.
  • Remove the hot baking pan from the oven and place steaks on top.
  • Bake in the preheated oven until steaks are firm and reddish-pink and juicy in the center, 8 to 10 minutes. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).
  • Let steaks rest for 5 minutes. To serve, dab 1 tablespoon truffle butter on top of each steak.

¼ cup vegetable oil, divided
3 large white onions, sliced 1/4-inch thick
½ cup butter, room temperature
1 small shallot, minced
1 teaspoon white truffle oil
2 (14 ounce) Black Angus ribeye steaks
kosher salt and freshly ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat 2 tablespoons oil in a saucepan over medium-high heat. Add onions; cook, stirring occasionally, until onions are dark and soft, about 25 minutes.
  • Mix butter, shallot, and truffle oil in a bowl until blended. Refrigerate until set, about 10 minutes.
