An easy springtime recipe, using strawberries and rhubarb, that is simple enough for kids to help with. This recipe is terrific with vanilla bean ice cream.

Ingredients

4 cups chopped rhubarb
2 cups sliced strawberries
1 (3 ounce) package strawberry-flavored gelatin mix (such as Jell-O®)
¼ cup white sugar, or more to taste
1 (15.25 ounce) package yellow cake mix
1 cup warm water
¼ cup butter

Steps:

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
Place rhubarb and strawberries in baking pan. Evenly spread strawberry-flavored gelatin mix over fruit, then repeat with cake mix. Pour water over cake mix layer; do not stir. Dot the top of the cake with butter.
Bake in the preheated oven until cake is bubbly, about 20 minutes.

5 cups sliced fresh or frozen rhubarb, thawed and drained
1 package (6 ounces) strawberry gelatin
1/2 cup sugar
2 cups miniature marshmallows
1 package white or yellow cake mix (regular size)
Whipped topping, optional

Steps:

Place rhubarb in a greased 13x9-in. baking pan. Sprinkle with the gelatin, sugar and marshmallows. Prepare cake mix according to package directions; pour batter over marshmallows. , Bake at 350° until a toothpick inserted in the center comes out clean, 40-45 minutes. Cool for 10 minutes; invert cake onto a serving plate. Serve with whipped topping if desired.

1 (18 ounce) box white cake mix or 1 (18 ounce) box yellow cake mix
3 eggs (or as called for by your cake mix) or 3 egg whites (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1 cup sugar
2 -4 cups rhubarb, cut in pieces and engough to cover cake
1 (3 ounce) package strawberry Jell-O gelatin dessert

Steps:

Prepare cake mix as directed.
Pour into 9x13 or 15x10x1 inch pan.
Drop rhubarb over cake mix.
Sprinkle sugar over rhubarb.
Over this sprinkle 1 small pachage strawberry Jell-o (dry).
Bake at 350F for one hour or until cake is done.

Rhubarb is usually served in the spring however, I like to have some in the freezer and surprise my family with its bright flavor in the winter. This cake is DH's great Auntie Grace's recipe which she first made for me at the baby shower for my oldest son. It's delicious!

1 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1/3 cup butter (she used margarine)
1 egg, beaten
1/4 cup milk
4 cups rhubarb, cut in 1/2 to 1 inch pieces
1 (3 ounce) package strawberry Jell-O gelatin dessert
1/2 cup flour
1 cup sugar
1/4 cup butter

Steps:

Preheat oven to 375°F.
Lightly grease a 9x13-inch baking pan.
In a small bowl, sift together 1 cup flour, the baking powder. salt and 2 Tablespoons sugar.
Cut in 1/3 cup butter/margarine.
Stir in the beaten egg and milk; mix well.
Spread the mixture in the prepared pan.
In a small bowl combine the 1/2 cup flour, 1 cup sugar and 1/4 cup butter to make a crumb-like struesel.
Distribute the rhubarb evenly over the cake mixture.
Sprinkle the strawberry jello evenly over the rhubarb and cake.
Sprinkle the stuesel crumbs evenly over all.
Bake for 40 minutes or until a toothpick comes out clean.
