TRADITIONAL REUBEN CASSEROLE

This recipe was given to us by my husband's aunt. It has the same ingredients as a Reuben sandwich. If you love Reubens you should love this!

1 ½ cups thousand island dressing
1 cup sour cream
1 tablespoon minced onion
6 slices dark rye bread, cubed
6 slices light rye bread, cubed
1 pound sauerkraut, drained
1 ½ pounds corn beef, cut into bite-size pieces
2 ½ cups shredded Swiss cheese
¼ cup margarine, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a bowl, mix the thousand island dressing, sour cream, and onion.
  • Arrange the dark and light rye bread cubes in the bottom of the prepared baking dish, reserving about 1/2 cup each for topping. Layer the bread with sauerkraut and corned beef. Spread the dressing mixture over the corned beef. Sprinkle with Swiss cheese, top with remaining bread cubes, and drizzle with margarine.
  • Cover, and bake 15 minutes in the preheated oven. Uncover, and continue baking 10 minutes, or until bubbly and lightly browned.

1 can (14 ounces) sauerkraut, rinsed and well drained
1-1/4 cups chopped cooked corned beef
1 cup sour cream
1 small onion, chopped
1 garlic clove, minced
1 cup shredded Swiss cheese
2 slices rye bread, cubed
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350°. In a large bowl, combine sauerkraut, corned beef, sour cream, onion and garlic. , Transfer to a greased 11x7-in. baking dish. Sprinkle with cheese and bread cubes; drizzle with butter. Bake, uncovered, until heated through and cheese is melted, 25-30 minutes.

Whenever I have leftover mashed potatoes, this is the recipe I think of first. Not only does it use up leftovers, it's convenient when you need to have supper ready quickly. The men in my family especially enjoy this casserole.

3 to 4 cups mashed potatoes
1 can (16 ounces) sauerkraut, rinsed and drained
4 green onions, sliced
2 cups diced cooked corned beef
1 cup shredded Swiss cheese
Paprika

Steps:

  • Warm potatoes slightly to soften them. Place in a bowl with sauerkraut and green onions; mix well. Spoon two-thirds into a greased 3-qt. baking dish. Cover with he corned beef and cheese. Top with remaining potato mixture. Sprinkle with paprika. Bake, uncovered, at 350° for 30 minutes or until heated through.

1 jar(s) sauerkraut (16 - 24 ounces)
1 large onion (minced)
3/4 tsp caraway seeds
2 1/2 c swiss cheese (shredded)
5/8 c thousand island dressing
1 lb corned beef (cooked and sliced very thin)
5 slice dark rye bread (cubed in 1-inch pieces)
1/2 c melted butter
1 tsp deli style brown mustard

Steps:

  • 1. Preheat oven to 375 degrees. Butter a baking 10 inch baking dish. Put about half of the corned beef over the bottom of the baking dish.
  • 2. In a bowl, combine caraway, sauerkraut and onion, mix well. Pour into the baking dish over the corned beef layer, spreading evenly. Put half of the cheese over the mixture in pan. Distribute evenly half of the thousand island dressing over the cheese layer.
  • 3. Put remaining corned beef over dressing layer. Top with remaining cheese, then dressing.
  • 4. Mix the mustard in with the butter, toss the bread cubes in with it to coat as evenly as possible. Put this mixture on top of casserole evenly.
  • 5. Bake at 375 degrees for 30 - 40 minutes.

1 lb swiss cheese (sliced)
20 ounces corned beef (1 1/4 lbs sliced deli will work)
1 (14 ounce) can sauerkraut, rinsed and well drained
2/3 cup thousand island dressing
1 egg white, lightly beaten
3 teaspoons caraway seeds (optional)

Steps:

  • Unroll one tube of crescent dough into one long rectangle: seal seams and perforations.
  • Press onto the bottom of a greased 13X9 baking dish.
  • Bake at 375 degrees for 8-10 minutes or until golden brown.
  • Layer with half of the cheese and all of the corned beef.
  • combine sauerkraut and dressing; spread over beef, top with remaining cheese.
  • On a lightly floured surface roll out and press together seam of second tube of crescent dough in a 9X13 rectangle then place over cheese.
  • Brush dough with egg white and sprinkle with caraway seeds.
