1 cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 ½ teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cream of tartar
2 teaspoons ground cinnamon
1 teaspoon salt
½ cup chopped walnuts

Steps:

  • In a medium bowl, cream the butter with the white sugar and brown sugar. Stir in the eggs and vanilla. Sift together the flour, baking soda, cream of tartar, cinnamon and salt; stir into the creamed mixture. Finally, mix in the nuts. Divide dough into 3 equal parts, shape each piece into a log about 1 1/2 inches in diameter. Wrap logs in wax paper and chill for 3 hours or overnight.
  • Preheat oven to 400 degrees F (200 degrees C). Cut dough logs into 1/4 inch slices and place them on an unprepared cookie sheet. Bake for 8 to 10 minutes, until light brown.

This is a great looking cookie on a tray of mixed cookies. Good at christmas or for bazaars or church fellowships. Or just for cookie lovers everywhere. Don't know where the recipe came from. I've had it for years.

Number Of Ingredients 11

2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup shortening
1/2 cup margarine or 1/2 cup butter
1 cup sugar
2 large eggs
1 teaspoon vanilla
1/2 cup chopped walnuts or 1/2 cup pecans
1 cup chopped candied cherries or 1 cup mixed candied fruit

Steps:

  • Combine flour, baking powder, baking soda and salt; set aside.
  • Cream shortening, butter or margarine and sugar until creamy. Add eggs and vanilla and mix thoroughly, I use my electric mixture usually on high power to really whip it up good.
  • Stir flour mixture into creamed mixture.
  • Mix well.
  • Add fruit and nuts.
  • Chill for at least 1/2 hour for easier handling.
  • Shape dough into smooth rolls about 1 1/2 inches in diameter.
  • Wrap in waxed paper or clear wrap and chill overnight or until firm.
  • Slice with sharp knife in 1/4 inch slices.
  • Place on ungreased cookie sheet.
  • Bake at 375°F for 8-10 minutes or until golden.

2 cups all-purpose flour
1/2 teaspoon baking soda
3/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
1 cup dark brown sugar, firmly packed
1/2 teaspoon pure vanilla extract
1 large egg
3/4 cup pitted coarsely chopped dried dates (about 5 ounces)
1/2 cup coarsely chopped dried apricots (about 3 ounces)
1/2 cup coarsely chopped pecans (about 2 1/2 ounces)
Royal Icing for Fruit and Nut Refrigerator Cookie

Steps:

  • Whisk flour, baking soda, and salt together and set aside. Combine butter and sugar in bowl of an electric mixer fitted with the paddle attachment. Beat on medium speed until light and fluffy. Add vanilla and egg and beat until smooth. Add flour mixture and beat until combined.
  • Remove bowl from mixer and using a wooden spoon, stir in dates, apricots, and pecans. Knead dough briefly until smooth, about 30 seconds. Divide dough in half. Form each half into a rectangular log, 2-by-1 1/2-by-7 1/2 inches. Wrap each log in parchment then in plastic wrap. Refrigerate or freeze until firm, about 4 hours in refrigerator or 2 hours in freezer. Dough can be made ahead up to this point and frozen for up to 3 months.
  • Heat oven to 375 degrees. Line baking sheets with Silpats (French nonstick baking mats) or parchment paper. Unwrap one log. Using a very sharp knife, slice dough into cut into 1/4- to 1/8-inch slices. Place on prepared sheets, 20 per sheet, about 1 inch apart. Bake until firm and barely browning around the edges, 10 to 12 minutes. Remove from oven and cool on sheets for about 3 minutes before transferring to wire racks to cool completely. When cool, drizzle with royal icing and let sit 1 hour to set icing.

WALNUT REFRIGERATOR COOKIES

My friend, Carolyn, brought these cookies into the quilt shop where I work and I begged her for the recipe. This is a delicious, fast refrigerator cookie that has just the right amount of sweetness. I made a batch at my first opportunity and my hubby loved them as much as I did, especially with a hot cup of coffee. The rolls of dough would be great to put in the freezer too, so you could have these little gems whenever you want too.

2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/4 teaspoon salt
1/4 teaspoon baking soda
1 cup butter or 1 cup margarine, softened
1 large egg
1 teaspoon vanilla extract
1 cup walnuts, finely chopped

Steps:

  • In a large mixing bowl, combine flour, both sugars, salt and baking soda.
  • Add butter, egg and vanilla. Beat with an electric mixer until blended.
  • Stir in walnuts.
  • Roll dough into three 5-inch long rolls; wrap each in wax paper or plastic wrap. Refrigerate for 2 hours or until firm enough to slice.
  • When dough has finished chilling, preheat oven to 350°F and grease a baking sheet.
  • Slice dough, one roll at a time, crosswise into 1/4-inch thick slices. Place slices 1 inch apart on baking sheet.
  • Bake 8 to 10 minutes or until lightly browned. Cool on wire rack.

This is a really old recipe that I found in my late MIL's recipe box, which I "inherited." They are surprisingly simple, and very tender and just a lovely cookie to serve anytime.

1/2 cup light brown sugar
1/2 cup sugar
2 tablespoons lemon juice
1 egg
2 cups flour

1/2 cup pecans (can use almonds)

Steps:

  • Mix in order given.
  • Chill.
  • Bake in 400 degree oven for about 9 minutes.
  • Note: I don't know how many cookies this recipe makes. If you know, please submit. I am guessing 2 dozen.
  • Note: Cooking time does not include chill time.

Melt-in-the-mouth, rich & crispy. Mix when convenient...slice and bake when convenient. Adapted from Betty Crocker's Picture Cook Book (1950 Edition). The original recipe called for shortening, but l prefer unsalted butter. You could use any solid fat, like coconut oil or even lard. That's up to you. Cooking time is for the entire batch, 2 dozen at a time. Prep time includes 2 hours for chilling. You may need more.

2 3/4 cups sifted all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
1 cup unsalted butter, softened
1/2 cup white sugar
1/2 cup brown sugar

1 1/2 teaspoons vanilla
1/2 cup finely-chopped nuts
1/2 cup finely-chopped dates

Steps:

  • Sift together the flour, soda, salt and cinnamon. Toss the dates with a small amount of the flour mixture (to prevent sticking) and set aside.
  • ln a large bowl, cream the butter with the sugars until smooth. Add the eggs and vanilla and mix thoroughly.
  • Mix in the dry ingredients and combine thoroughly.
  • Stir in the nuts and dates.
  • With your hands, press and mold the dough into a long, smooth roll about 2 1/2 inches in diameter. Wrap in waxed paper, twisting the ends to hold the roll in shape. Chill until firm - several hours or overnight. (To speed up the chilling process, place in freezer.).
  • Preheat oven to 400 degrees F. (Moderately hot).
  • With a thin, sharp knife cut into thin slices 1/16" to 1/8" thick. Place on ungreased baking sheet, slightly apart.
  • Bake until lightly browned, about 6 to 8 minutes.

1 teaspoon baking soda
1 tablespoon ground cinnamon
1 pound margarine
1 cup white sugar
1 cup light brown sugar

Steps:

  • In a bowl, whisk the flour, baking soda, and cinnamon together until evenly blended; set aside. Beat the margarine, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Add the eggs one at a time, allowing each egg to blend into the margarine mixture before adding the next. Mix in the flour mixture until just incorporated. Fold in the chopped nuts; mixing just enough to evenly combine.
  • Scrape the dough onto a sheet of waxed paper, and form into a log. Roll tightly in the waxed paper, and refrigerate until firm, about 4 hours.
  • Preheat an oven to 350 degrees F (175 degrees C). Spray baking sheets with cooking spray.
  • Unwrap the dough, and cut into 1/4-inch slices. Place the cookies onto baking sheets, spaced 1-inch apart. Bake in the preheated oven until the edges are golden, 8 to 10 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.
