1 (14 ounce) can Rotel Tomatoes
1 (14 ounce) can black beans, drained and rinsed
1 (10 ounce) can white shoepeg corn, drained and rinsed
1 bunch green onion, chopped
1 (8 ounce) bottle Italian dressing (I like Kraft Zesty Italian)

Steps:

  • Drain all canned ingredients.
  • Mix vegetables together in bowl.
  • Coat with the Italian dressing.
  • You may not need the entire bottle.
  • Cover and chill overnight.
  • Serve with corn chips or crackers.

1 can black beans, rinsed and drained
1 can white shoepeg corn, drained
3 cups fresh salsa (Sam's or Costco carry large containers)
1/2 cup Italian dressing
1/4 cup fresh cilantro, chopped and lightly packed
Tortilla or baked pita chips

Steps:

  • In a large container, combine beans and corn. Drain liquid from salsa. Add salsa and Italian dressing to beans and corn. Chop some fresh cilantro and add for extra flavor. Let stand in refrigerator for 2 hours before serving. Serve with chips, enjoy!

Have fun with this dish. This is a great dish to experiment with, you can add or subtract ingredients to fit your personal taste. I have added black-eyed pea relish, jalapeños, and even pear relish on occasions, depending on my mood and what I had on hand. This is a fun dish and people of all ages love it.

2 (15 7/8 ounce) cans black-eyed peas, drained
2 (10 ounce) cans shoe peg corn or 2 (10 ounce) cans corn, drained
2 (10 ounce) cans Ro-Tel tomatoes, drained
1 (15 7/8 ounce) can black olives, chopped
1 green pepper, chopped really small
1 red pepper, chopped really small
1 (15 7/8 ounce) can black beans, drained
1 larger purple onion, chopped really small
3 ripe tomatoes, chopped small
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cumin
1 teaspoon chili powder (optional, only if you want a bit of a kick to it)
1 teaspoon parsley flakes
16 ounces house Italian dressing or 16 ounces zesty Italian dressing

Steps:

  • Mix all ingredients together.
  • Refrigerate at least 8 hours before serving, so flavors can fuse (this is the key to this dish).
  • Serve with Tostitos Scoops or whatever chips you prefer.

I have been making this dip for large gatherings for many years. It's one of the most requested appetizers I make.

Number Of Ingredients 9

1 lb ground beef
1 lb breakfast sausage, regular
1 large onion, chopped
1 can(s) cream of mushroom soup
12 oz picante sauce
2 lb velveeta, cut in pieces
1 small can chopped green chilies
1 small can, chopped jalepenos (optional - use your own judgment)
2 large bags tortilla chips for dipping

Steps:

  • 1. Brown ground beef, sausage and onion in skillet. May be made ahead of time and frozen.
  • 2. Place all ingredients in large crock pot and heat on medium until cheese is melted and all ingredients are mixed together. Stir frequently.
  • 3. Be sure to put crock pot on Low or Warm after cheese melts so dip doesn't burn.
  • 4. Place chips in large bowl or basket next to the crock pot.
  • 5. Provide a large spoon for guests to put dip on small plates so folks won't dip chips into the crock pot. Warning: this won't stop some of 'em.
  • 6. This will become your most requested appetizer at any large gathering.

Steps:

  • Brown sausage, drain grease and return sausage to pan. Mix in cream cheese and Rotel until melted and smooth. Serve with tortilla chips.
