TANGY CARROT, RED CABBAGE & ONION SALAD



Tangy carrot, red cabbage & onion salad image

This autumnal salad makes a fresh and healthy side dish and is great served with grilled halloumi or burgers

4 carrots , cut into thin sticks or grated
½ red cabbage , finely shredded
2 small red onions , finely sliced
handful mint leaves
handful coriander leaves
handful toasted peanuts , roughly chopped
juice 2 limes
1 tbsp groundnut oil
1 red chilli , deseeded and finely chopped
1 tbsp soft brown sugar

Steps:

  • Tip the carrots, cabbage and onions into a bowl. Make the dressing by stirring the ingredients together until the sugar has dissolved. Pour over salad, tossing the vegetables in the dressing. Add the herbs, toss again, then scatter over the peanuts.

Salad types wise, the choice is wide and you could use so many types depending on the season and availability but I particularly like the crunchy Chinese cabbage and you could add some red or green pepper, edamame beans, avocados, some nuts such as cashew or walnuts nuts and if you use cashew nuts I would definitely go for a peanut dressing (yuuuumm).

2 carrots (organic)
1/2 red cabbage (organic)
10 cherry tomatoes (organic)
1/2 cucumber (organic)
1-2 sticks celery (organic)
salad creme or any vinaigrette you like
parsley or coriander (to your taste)
1 tbsp olive oil extra virgin

Steps:

  • Wash all ingredients and peel the carrot and the cucumber if you prefer (I rarely peel the cucumber though. Only the non-organic ones.
  • Shred the cabbage and great the cucumber and the carrot. Place in a bowl. Chop the celery and set it all aside.
  • Chop the cherry tomatoes and place all in a bowl.
  • Mix everything add salt and some pepper to taste and sprinkle the vinaigrette all over in the desired quantity.

Shredded Red Cabbage and Carrot Salad image

This is a beautiful salad that keeps well for a few days in the refrigerator. For best results, make sure to shred the cabbage very thinly.

3/4 pound red cabbage, cored and finely shredded
1/4 pound carrots, peeled and finely grated
1 tablespoon finely chopped flat-leaf parsley
1 teaspoon minced fresh chives
1 teaspoon minced fresh dill
1 tablespoon freshly squeezed lemon juice
1 tablespoon sherry vinegar or white wine vinegar
Salt
freshly ground pepper to taste
1 small garlic clove, finely minced
1 teaspoon Dijon mustard
6 tablespoons extra virgin olive oil or canola oil (or a mix of the two), or use 2 tablespoons plain low-fat yogurt or buttermilk and 4 tablespoons oil

Steps:

  • Cover the shredded cabbage with cold water, and let sit for 15 minutes while you prepare the remaining ingredients. Drain.
  • Toss together the cabbage, carrots, parsley, chives and dill.
  • Whisk together the lemon juice, vinegar, salt, pepper, garlic and Dijon mustard. Whisk in the oil. Toss with the vegetables and herbs. Taste, adjust seasonings and serve. Alternately, allow to sit for 30 minutes to an hour in the refrigerator, then serve.

1/2 cup currants (if dry soak in water for 10 mins and drain well)
3 freshly squeezed lemons
3 tablespoons balsamic vinegar or 3 tablespoons red wine vinegar

1 tablespoon sumaq
1 tablespoon dill weed
chopped cilantro or chopped parsley
1/4 cup extra virgin olive oil

Steps:

  • Toss all the ingredients together and chill for an hour and serve.
