REAMES TOMATO BASIL CHICKEN NOODLE SOUP image

Number Of Ingredients 11

Ingredients

1 12 oz pkg Reames frozen noodles, cooked per direction
1 pound chicken breasts, cut into bite-sized pieces
1 large onion, chopped
3 T olive oil
2 T minced garlic
2 t salt
2 t pepper
2 14-1/2 oz cans diced tomatoes, (if available use basil, garlic and oregano diced tomatoes)
2 14-1/2 oz cans chicken stock
2 c fresh chopped basil
1 c grated Parmesan cheese (optional)

Steps:

Cook noodles per package directions and set aside. In soup pot, saute chicken pieces and onions in olive oil until onions are transparent and the chicken is done. Add garlic, salt and pepper. Saute for 1 minute more. Add the diced tomatoes and the chicken stock. Heat until the mixture is boiling; then add the noodles and the 2 cups of fresh basil. Bring the mixture back to a boil and serve immediately. For added serving appeal top off each serving with Parmesan cheese and your favorite crackers.
