2 cups strawberries
1 cup cold water
1 (3 ounce) box sugar-free strawberry gelatin (Jell-o brand is good)

Steps:

  • In a saucepan, crush strawberries.
  • Add in water and gelatin powder; mix well.
  • Bring to a boil over medium heat, stirring constantly.
  • Reduce heat to low; simmer for 5 minutes Pour into jars; allow to cool before putting on the lids.
  • Store in the refrigerator for 1 week, or in freezer for 1 month.

1 (12 ounce) bag cranberries (fresh or frozen, if using frozen do not thaw)
1 cup sugar (you can use a bit more)
1/2 cup fresh orange juice
1 cup water
1 teaspoon lemon juice

Steps:

  • Bring all ingredients to a boil in a 2-3 quart saucepan over medium heat, stirring occasionally.
  • Reduce the heat and simmer uncovered, stirring occasionally until slightly thickened, about 20 minutes, (the jam will continue to thicken as it cools).
  • Using a fine-mesh sieve, force the jam through and then discard the skins and seeds.
  • Cool in a bowl stirring occasionally.
  • Store covered in the fridge.

4 cups crushed fresh strawberries
1 1/2 cups sugar substitute
1/4 ounce ball fruit jell freezer jam pectin

Steps:

  • Clean and slice up strawberries. Crush. In a big bowl mix splenda and pectin together. Add crushed strawberries. Stir well for 3 minutes. Put into freezer containers leaving 1/2 inch from the top. Let sit 30 minutes. Put on top. Refrigerate or freeze. Enjoy.

4 cups strawberries
1 1/2 cups Splenda sugar substitute
1 (8 ounce) package fruit pectin

Steps:

  • Wash and hull strawberrys, use food processor to smooch to a chunky pulp.
  • In large bowl mix Splenda and Fruit Pectin. Mix these dry ingredients together well.
  • Add 4 cups strawberys to the mixture and stir well an additional for 3 minutes.
  • Ladle into freezer containers and let stand for 3 minutes while the jam thickens.
  • Jam may be stored 1 year in freezer or 1 month in refrigerator.
  • OPTIONAL; blueberries, rasberries, blackberries, or mixtures.

After spending too much money on store bought sugar free jams, I was given this recipe by a friend. It tastes better than most you find in the store, and is much cheaper. I use granular splenda, and don't measure it, I just add until it tastes sweet enough.

16 ounces frozen strawberries
1 1/2 teaspoons plain gelatin
2 tablespoons cold water
6 -10 packets Splenda sugar substitute (or equivalent in granular form)
1 -2 tablespoon water, if needed

Steps:

  • Thaw strawberries.
  • In a bowl, soften gelatin in 2 tablespoons cold water.
  • If your strawberries are whole, crush them, or chop into small pieces.
  • Place strawberries into a heavy sauce pan, along with any any juices.
  • If they don't have much juice from thawing, add 1-2 tablespoons water.
  • Bring to a boil, reduce heat and simmer until strawberry pieces are softened.
  • Stir in softened gelatin until completely dissoved.
  • Remove from heat and stir in Splenda.
  • Chill well before serving.
  • Note: do not add too much water along with the strawberries, they will probably release enough moisture while heating.

The jam is stored in the freezer, so you may use any airtight, leak proof freezer container for storage. Tastes better if allowed to sit for a week. freezes beautifully for up to 6 months.

1/2 cup white grape juice concentrate (simmered down from 1-1/2 cups)
2 1/2 tablespoons lemon juice
1/4 teaspoon grated lemon rind

  • Place berries juices and lemon rind in saucepan.
  • Mash berries slightly to release juice.
  • Heat berries to boiling.
  • Sprinkle with unflavored gelatin, and stir gelatin in well.
  • Remove from heat, skim top and pack into hot jars with hot lids.
  • Cool to room temperature before freezing.
