The perfect main course for salad lovers. This salad uses fresh spinach instead of lettuce.

6 cups fresh spinach, rinsed and dried
½ cup dried cranberries
½ cup walnut halves
1 tomato, sliced
1 pound top round steak, thinly sliced
1 pinch salt
1 pinch ground black pepper

Steps:

  • Arrange spinach on a large plate. Sprinkle with cranberries and walnuts, and arrange tomato slices on top. Set aside.
  • In a non-stick skillet (or a regular skillet coated with non-stick spray) cook steak over medium heat until no pink remains and steak is thoroughly cooked.
  • Arrange cooked steak over salad. Sprinkle salt and pepper on top, and drizzle with your favorite dressing. Note: I suggest using a light flavored dressing. Citrus dressings taste especially good on this salad!

8 ounces bacon
3/4 cup olive oil
1/4 cup red wine vinegar
Pinch salt and pepper
Pinch salt and pepper
1 clove garlic, minced
1 pound leaf spinach, tough stems removed
8 ounces mushrooms, thinly sliced

Steps:

  • In a medium skillet, cook the bacon over medium-high heat until just crisp. Drain on paper towels and crumble when cool enough to handle. Set aside.
  • In a small bowl, whisk together the oil, vinegar, salt, pepper and garlic.
  • Wash the spinach leaves very well and spin dry. Tear the leaves into small pieces and place in a medium salad bowl. Add the mushrooms and bacon, and toss to combine. Pour 2/3 cup of the dressing over the salad (reserve the rest for another use) and toss again. Serve immediately.

I put this recipe together as my own variation on a classic. It became an instant hit with the whole family, and has been requested for our regular rotation. Prep time does not include marinating time.

1 large garlic clove, minced
1 tablespoon minced onion (dried or fresh)
2 teaspoons coarse black pepper
1 tablespoon kosher salt (or other coarse salt)
1 tablespoon fresh thyme leave
2 tablespoons olive oil
1 1/3 lbs top sirloin steaks
1/2 cup raspberry balsamic vinegar
1 pint fresh raspberry, divided
1/4 cup honey
1/3 cup sugar
2 tablespoons fresh oregano leaves (or 1/2 cup fresh basil leaves)
3/4 cup extra virgin olive oil
6 ounces fresh Baby Spinach
1/3 cup walnuts, chopped
1/2 cup gorgonzola, crumbled

Steps:

  • Preheat grill or broiler.
  • In a small bowl, mix together the pepper, garlic, onion, salt and thyme. Rub olive oil all over the meat. Rub seasoning mixture all over the meat. Place in a shallow dish and marinate at room temperature for about an hour, or while preparing the remaining salad and vinaigrette. (Can also cover and marinade in the fridge for up to 2 days. Remove meat from fridge an hour before grilling).
  • Put walnuts in a small pan over med-low heat. Let toast until you can smell them (while you are preparing the remaining recipe).
  • In a blender or food processor, combine raspberry vinegar, 1/4 cup raspberries, honey, and oregano (or basil); whirl 1 minutes or until well blended. With the motor on, add olive oil in a slow steady stream, whirling until dressing is smooth.
  • Grill steak about 3-4 minutes per side or until done to your preference. (Using a meat thermometer - Rare: 120F; Medium Rare: 125F; Medium: 130F).
  • When the steaks are done to your liking, remove from oven, let sit 15 minutes before serving (meat temperature will rise 5 to 10 degrees after it is removed from the oven). Slice steak across grain into 1/4-inch slices.
  • While steaks are resting, prepare salad by layering equally on each plate the spinach, remaining raspberries, walnuts and cheese. Place strips of steak on top of each salad. Serve dressing on the side.

2 teaspoons Dijon or honey mustard
2 teaspoons raspberry-flavored vinegar
Freshly ground black pepper, to taste
1 teaspoon garlic salt
1 teaspoon dried basil
2 teaspoons sugar
1/8 teaspoon salt
4 cups baby spinach, washed well
4 mushrooms, sliced
4 strawberries, sliced
1/2 medium red onion, halved and sliced
Candied Almonds, recipe follows
1/2 cup sugar
1 cup slivered almonds

Steps:

  • In a large bowl, whisk together olive oil, mustard, vinegar, pepper, garlic salt, dried basil, sugar, and salt until dressing is well combined.
  • In another large bowl, combine the spinach, mushrooms, strawberries, and red onion. Add the dressing and toss well. Sprinkle with the Candied Almonds.
  • In a saute pan over medium heat, add the sugar and heat until it melts, about 6 minutes. Add the slivered almonds and cook until the sugar has caramelized, stirring constantly. Remove from the pan to a parchment lined sheet pan and cool. Once it has cooled, break into small pieces and set aside.

DRESSING:

1 tablespoon raspberry vinegar
1 green onion, finely chopped
1-1/2 teaspoons sugar
1-1/2 teaspoons gluten-free Worcestershire sauce
1 teaspoon poppy seeds
1/4 teaspoon salt
Dash paprika

Steps:

  • In a large skillet, cook and stir almonds and sugar over low heat until sugar is dissolved and almonds are coated. Spread on foil to cool; break apart., In a large salad bowl, combine the spinach, strawberries and almonds. In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. 1 whole avocado, chopped
5 -6 green onions, finely chopped
1 cup fresh raspberry
1/2 cup chopped pecans
3 tablespoons raspberry preserves
1 teaspoon balsamic vinegar
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
1/2 cup extra virgin olive oil

Steps:

  • Place pecans on baking sheet and toast in oven at 400 degrees for about 5 minutes.
  • Mix together dressing ingredients in small glass or bowl and wisk quickly until well blended.
  • Layer salad: spinach, avocado, green onions, raspberries, toasted pecans.
  • Top with dressing and serve immediately.

1/2 cup extra virgin olive oil

1 tablespoon poppy seed
2 tablespoons sesame seeds

Steps:

  • Blend first five dressing ingredients together until well combined.
  • Add poppy seeds and sesame seeds. Do not blend them.
  • Place spinach, raspberries, and almonds in a large bowl.
  • Pour dressing over salad and toss gently.

1/2 red onion, sliced very thinly
1 cup pecans, candied if you have them
2 tablespoons poppy seeds
2 tablespoons Dijon mustard

1/3 cup raspberry vinegar

Steps:

  • Mix the oil into the poppyseeds, dijon and honey.
  • Add vinegar.
