RASPBERRY SMASH
Smashing (called muddling in the bartending biz) the raspberries with the vodka, sugar, and lime wedges brings out the berry flavor.

Steps:
- Run 1 lime wedge around rims of 2 old-fashioned glasses. Dip rims in sugar. Place both lime wedges, raspberries, vodka, and 4 teaspoons sugar in cocktail shaker; using muddler or wooden spoon handle, smash fruit mixture. Add ice; shake 10 seconds. Divide between glasses (do not strain), top with Champagne, and serve.Adapted from Bella Vista.

Steps:
- Tip the raspberries and sugar into a 1.5L sterilised jar. Pour over the gin, seal the jar and swirl around to dissolve the sugar. Store in a cool, dark place and turn the jar once a day for the first week. After 2-3 weeks, strain the gin through a sieve. Pour the gin into mini bottles, and label. The gin will keep its vibrant pink colour for a few months and will be drinkable for a year. Use the boozy raspberries in a cocktail or trifle, or turn them into a granita.

- In a small pot, combine the sugar and 1/2 cup water. Heat over medium-high heat until the mixture comes to a boil and the sugar dissolves. Remove from heat and allow to cool, approximately 10 minutes. You have just made your own simple syrup!
- Meanwhile, slice your limes and muddle 2-3 raspberries in the bottom of each serving glass. (If you have an ice maker, gather about 4 cups of ice.
- Add 1 oz lime juice, 1 oz simple syrup, and 1.5 oz gin to each glass, overtop of the raspberries. Top with 1 cup of ice and 1/2 cup of soda water.
