12 oz Dr. Pepper (or Diet Dr. Pepper)
2-3 Tbsp Coconut Cream
1-2 Tbsp Raspberry Syrup
3-4 Tbsp Crushed Frozen Raspberries

Steps:

  • Fill your cup with desired amount of ice.
  • Add Dr. Pepper, coconut cream and raspberry syrup. Stir until well incorporated.
  • Add raspberries and stir. Enjoy!

1 ½ cups graham cracker crumbs
½ cup brown sugar
¼ teaspoon ground cinnamon
½ cup butter, melted
1 (8 ounce) package cream cheese, softened
¼ cup confectioners' sugar
1 teaspoon vanilla extract
1 (3 ounce) package raspberry-flavored gelatin mix (such as Jell-O®)
1 cup boiling water
1 tablespoon lemon juice
2 cups frozen raspberries
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Combine graham cracker crumbs, brown sugar, and cinnamon in a bowl; stir in melted butter. Set aside 1/2 cup of graham cracker mixture; press remaining mixture into a 9x13-inch dish. Chill crust until firm, about 30 minutes.
  • Beat cream cheese, confectioners' sugar, and 1 teaspoon vanilla extract together in a bowl until soft and fluffy. Spread cream cheese mixture over graham cracker crust and chill until firm, about 30 more minutes.
  • Whisk raspberry gelatin and boiling water together in a separate large bowl until gelatin has dissolved; stir in lemon juice. Gently fold frozen raspberries into warm gelatin; cold raspberries will cause gelatin to begin to set. Spread raspberry mixture over cream cheese layer in pan.
  • Spread whipped topping over raspberries and sprinkle dessert with reserved crumb topping. Chill at least 2 more hours.

1 cup butter, softened
2/3 cup sugar
1/2 teaspoon almond extract
2 cups all-purpose flour
1/3 to 1/2 cup seedless raspberry jam, plus additional if desired
GLAZE:
1 cup confectioners' sugar
1/2 teaspoon almond extract
2 to 3 teaspoons water

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, about 5 minutes. Beat in extract; gradually add flour until dough forms a ball. Cover and refrigerate until dough is easy to handle, 1 hour. , Preheat oven to 350°. Roll into 1-in. balls. Place 1 in. apart on ungreased baking sheets. Using the end of a wooden spoon handle, make an indentation in the center. Fill with jam., Bake until edges are lightly browned, 14-18 minutes. Remove to wire racks to cool. , If desired, spoon additional jam into cookies. Combine confectioners' sugar, extract and enough water to achieve drizzling consistency; drizzle over cookies.

I got this recipe from a Taste of Home cookie book. These cookies are sublime. I made them for Christmas, but they would also be pretty for Valentine's Day. Try them and you will be delighted! Prep time include refrigeration time.

2 cups butter, softened
1 cup sugar
4 egg yolks
2 teaspoons vanilla extract
1 drop lemon juice
5 1/3 cups all purpose flour
1/4 teaspoon salt
1 (12 ounce) jar raspberry preserves (I used seedless)
1 cup confectioner's sugar
1 drop raspberry extract (I used a bit more)
1 drop red food coloring (optional)
1 -2 tablespoon milk

Steps:

  • In a large mixing bowl, cream butter and sugar until light and fluffy.
  • Add egg yolks, one at a time, beating after each addition.
  • Add vanilla and lemon juice. Mix well.
  • Combine flour and salt and gradually add to the creamed mixture. Mix well.
  • Refrigerate for 1 hour.
  • Divide dough into three portions.
  • On a lightly floured surface, roll out each portion to a 1/4 inch thickness.
  • Cut with a 2 1/2 inch round cookie cutter with crimped edges.
  • Place an inch apart on an ungreased baking sheet.
  • Bake at 350º for 8-10 minutes until edges just begin to brown. Remove to wire racks to cool.
  • Spread raspberry jam on one cookie and top with another cookie to make a sandwich. Continue until all are sandwiches.
  • Combine icing ingredients until a drizzling consistency is achieved. Drizzle over cookies.
