SOUTHERN SQUASH CASSEROLE

A classic Southern Squash Casserole is the perfect way to enjoy the bounty from your summer garden! The cheesy filling is topped with a buttery crumb topping for the ultimate family-friendly side dish recipe!

2 tablespoons butter, divided
4 small yellow squash (about 2 lbs.), sliced ( (about 6 cups total))
1 small onion, diced
1 red bell pepper, diced
½ teaspoon salt
¼ teaspoon pepper
2 eggs
1 cup grated cheddar cheese
¼ cup sour cream
¼ cup mayonnaise
¾ cup crushed butter crackers ((I used 18 Ritz crackers))

Steps:

  • Preheat oven to 350°F. Spray an 8-inch or 9-inch square baking dish with cooking spray and set aside.
  • Melt 1 tablespoon butter in a large skillet over medium heat. Add squash, onion, and bell pepper to the skillet, cooking and stirring for about 10 minutes (or until vegetables are tender). Remove from heat and season with salt and pepper.
  • Meanwhile, in a separate bowl, whisk together eggs, cheese, sour cream, and mayonnaise.
  • Stir the egg mixture into the squash mixture.
  • Transfer the squash mixture into the prepared baking dish.
  • In a separate bowl, combine crushed crackers with remaining 1 tablespoon of melted butter. Sprinkle buttered cracker crumbs over top of casserole.
  • Bake for 30-35 minutes, or until casserole is set and topping is golden brown.

This is my mom's recipe. This squash casserole is filled with flavor and baked with a wonderful stuffing crust. If you like yellow summer squash, then you'll love this great recipe!

2 tablespoons butter
3 pounds yellow squash, chopped
2 onions, chopped
1 cup shredded sharp Cheddar cheese
1 cup mayonnaise
3 eggs, beaten
12 saltine crackers, crushed
1 (1 ounce) package dry Ranch-style dressing mix
1 teaspoon salt
2 cups dry bread stuffing mix
½ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a large saucepan over medium-high heat. Cook squash and onions until tender. Remove from heat, and stir in Cheddar cheese, mayonnaise, eggs, and crackers. Season with Ranch dressing mix and salt.
  • Spread the squash mixture into a medium baking dish. Mix together stuffing and 1/2 cup melted butter, and sprinkle over the squash mixture.
  • Bake 20 to 30 minutes in the preheated oven, or until firm and lightly browned.

This recipe was given to me by a great friend. I make this during the holidays and everyone loves it. This is the one request that is a must at family gatherings.

7 yellow squash, sliced
¼ cup milk
½ cup butter, sliced
2 eggs, beaten
1 bunch green onions, tops thinly sliced
salt and pepper to taste
3 tablespoons white sugar
1 cup shredded Cheddar cheese
2 cups crushed buttery round crackers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of water to a boil. Add squash and cook until tender but still firm, about 15 minutes; drain.
  • To the squash add milk, butter, eggs, green onion tops, salt, pepper and sugar; mix well. Transfer to a 9x13 inch casserole dish. Sprinkle with cheese and crushed crackers.
  • Bake in preheated oven for 30 minutes.

5 t0 6 medium yellow summer squash
1/2 sweet onion, such as vidalla
1 tbsp water
salt and pepper to taste
1 can evaporated milk
butter

Steps:

  • Preheat oven to 350 degrees. Slice squash in half lengthwise. Place cut side up in 8 x 8 glass baking dish. Thinly slice onion and sprinkle over squash. Add water and cover with plastic wrap. Make a small slit in plastic wrap and microwave 4-5 min. until slightly cooked. Uncover and drain off any liquids. Level off squash in pan, sprinkle with salt and pepper, and pour just enough evaporated milk over squash to come to the top of squash. Do not completely cover. Dot with butter and bake until cooked through and lightly browned, about 35 to 40 min.

1/2 cup crushed unsalted saltine crackers
1 envelope ranch buttermilk salad dressing
1 cup shredded Cheddar cheese
2 tablespoons butter, melted
1/2 cup fresh bread crumbs

Steps:

  • Cook squash and onion together in water until tender; drain well. In a bowl, mix mayonnaise, eggs, saltines, ranch dressing, and shredded cheese together. Mash squash with a fork and combine with ranch mixture. Pour into a greased casserole dish. Mix melted butter with bread crumbs and put on top of casserole. Bake 20-25 minutes in a 350° oven.

4 cups sliced yellow squash
½ cup chopped onion
35 buttery round crackers, crushed
1 cup shredded Cheddar cheese
2 eggs, beaten
¾ cup milk
¼ cup butter, melted
1 teaspoon salt
ground black pepper to taste
2 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl.
  • In a medium bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into a 9x13 inch baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter.
  • Bake in preheated oven for 25 minutes, or until lightly browned.

  • Preheat oven to 400 degrees then line a half sheet pan with a silat or foil. Slice spaghetti squash in half using a large, sharp knife then scrape out the seeds with a spoon and place cut side down on the prepared sheet pan. Roast for 30-40 minutes, or until the squash shreds relatively easily with a fork (don’t overcook or the squash will become mushy.) Set aside to cool then turn heat down to 350 degrees. Once spaghetti squash is cool enough to handle, shred squash with a fork then add to a large bowl. Can be done a day ahead of time.
  • Meanwhile, add chopped bacon to a large, 12” skillet then place over medium heat. Saute until bacon has browned then transfer to a plate. Remove all but 2 Tablespoons bacon grease from skillet then turn heat up to medium-high. Add chicken and shallots or onion, season with seasoned salt and pepper, then saute until the chicken has cooked through. Add spinach and garlic then saute until spinach has wilted, 1 minute. Scrape mixture into the bowl with the spaghetti squash.
  • Add ranch, eggs, and half the cooked bacon to the bowl, plus additional seasoned salt and pepper, then mix well to combine. Pour mixture into an 8x8” baking dish (or similar sized baking dish) then top with remaining bacon. Bake uncovered for 45-60 minutes or until the center has completely set and sides are golden brown. Let cool for 15 minutes before slicing and serving.
