3 cups chopped yellow onions (2 onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
3 (10-ounce) packages frozen chopped spinach, defrosted
6 extra-large eggs, beaten
2 teaspoons grated nutmeg
1/2 cup freshly grated Parmesan cheese
3 tablespoons plain dry bread crumbs
1/2 pound good feta, cut into 1/2-inch cubes
1/2 cup pignoli (pine nuts)
1/4 pound salted butter, melted
6 sheets phyllo dough, defrosted

Steps:

  • Preheat the oven to 375 degrees. In a medium saute pan on medium heat, saute the onions with the olive oil until translucent and slightly browned, 10 to 15 minutes. Add the salt and pepper and allow to cool slightly. Squeeze out and discard as much of the liquid from the spinach as possible. Put the spinach into a bowl and then gently mix in the onions, eggs, nutmeg, Parmesan cheese, bread crumbs, feta, and pignoli. Butter an ovenproof, nonstick, 8-inch saute pan and line it with 6 stacked sheets of phyllo dough, brushing each with melted butter and letting the edges hang over the pan. Pour the spinach mixture into the middle of the phyllo and neatly fold the edges up and over the top to seal in the filling. Brush the top well with melted butter. Bake for 1 hour, until the top is golden brown and the filling is set. Remove from the oven and allow to cool completely. Serve at room temperature.

Steps:

  • Slice chicken breast to make it thinner, place on frying pan at medium-high heat. Cook on each side for several minutes until the center is no longer pink. Slice into small chunks and set aside.
  • Cook macaroni noodles as it says on packaging. In a medium sized sauce pan melt butter at medium heat. Whisk in milk, salt, pepper, and garlic powder.
  • Bring to a boil and whisk in flour, then turn to medium-low heat and whisk in Parmesan cheese. Whisk continuously for 1 minute or until smooth.
  • Add Ranch Dressing, thawed spinach, and chicken. Mix in pasta and it is ready to serve!

2 lbs red potatoes, peeled and cut into chunks
1 (1 ounce) package Hidden Valley Original Ranch Seasoning Mix
1/2 cup sour cream
1 tablespoon vegetable oil
1/4 cup chopped shallot
2 garlic cloves, minced
1 cup chopped baby carrots
1 1/2 lbs ground beef
1 cup beef broth
2 tablespoons tomato paste
1 tablespoon balsamic vinegar
1 tablespoon molasses
1/8 teaspoon cayenne pepper
2 tablespoons melted butter
1/2 cup panko breadcrumbs
1/3 cup grated parmesan cheese

Steps:

  • Preheat oven to 375°F.
  • Bring potatoes to a boil in a large pot of salted water. Cook until tender for 15 to 20 minutes. Drain and mash potatoes. Stir in dressing mix and sour cream.
  • Meanwhile, heat oil in a large skillet over medium heat. Add shallots and garlic; cook until begin to brown, about 2 minutes. Add carrots and ground beef; cook until beef is no longer pink. Drain the fat; add broth, tomato paste, vinegar, molasses and cayenne pepper. Cook until mixture is slightly thickened, about 10 minutes.
  • Pour beef mixture into a 1½-quart baking dish. Spread mashed potatoes over meat mixture. Combine butter, breadcrumbs and parmesan cheese; sprinkle over potato layer.
  • Bake pie for 20 minutes or until heated through and golden brown.

1 (8 ounce) packet Hidden Valley Original Ranch Seasoning Mix
4 slices bacon
1 lb sea scallops, patted dry
1 tablespoon butter
12 ounces Baby Spinach, fresh
1 garlic clove, sliced thin
1/2 shallot, sliced thin
1/4 cup parmesan cheese, grated
1 lemon, juice of

Steps:

  • 1) In a cool skillet, start cooking your bacon over medium/low heat until crispy. (The lower the heat, the more bacon fat you'll render out, which is good.).
  • 2) In a small plastic sealable bag, combine 1/2 the packet of Hidden Valley Original Ranch Seasoning Mix, parmesan cheese, and scallops. Gentle mix/coat the scallops in the mixture.
  • 3) Once the bacon is crispy, remove from skillet, and turn heat up to medium. Keep ALL the fat in there. Sear the scallops on one side, roughly 2-3 minutes. Do not move them until they have cooked about halfway through. Then flip to the other side and sear another 1.5-2 minutes. Then remove from the pan.
  • 4) Add the garlic, shallots, butter, and other half of Hidden Valley Original Ranch Seasoning Mix to the pan. Sauté for 2-3 minutes, and then add you spinach and allow it to steam and wilt, stirring after about 1-2 minutes. Then add the lemon juice and crumble up the bacon into the spinach.
  • 5) Create a small bed of spinach on your plate and place your scallops on top of it. Enjoy!

1 1/3 cups cubed ham, cut in 1/4-inch cubes
3 tablespoons minced shallots
1 tablespoon minced dried chives

Steps:

  • 1. Heat oven to 350-degrees F.
  • 2. In large mixing bowl, beat eggs. Beat in half-and-half and ranch seasoning mix.
  • 3. Stir in remaining ingredients.

The Original Ranch dressing and seasoning dip is stuffed into the crust leaving no crust uneaten! With a side of the dip to dip the crust into. This recipe uses one package of The Original Ranch dressing and seasoning dip divided amongst the recipe. Take note in the photos the crust opens making it a perfect vessel to scoop up the dip. I always have roasted garlic in my refrigerator. If you want try it with fresh sliced very thin and may want to cut back to 2-3 cloves.

  • Shrimp:.
  • Place the towel dried shrimp in to a bowl season with The Original Ranch dressing and seasoning dip, paprika, pepper and oregano. Set aside to marinade.
  • Cheese Mixture:.
  • Mix the cheeses together set aside.
  • Place dry stone or a large rim-less oiled pan in oven to heat.
  • On a floured work surface roll dough out to a large circle.
  • Place on a generously floured / (corn meal) pizza peel (or cardboard square, or rim-less baking sheet).
  • Top the dough:.
  • Brush some of the oil from the bottom of the spinach mixture on the edge of the crust. Sprinkle the tablespoon of The Original Ranch dressing and seasoning dip along the edge. Then take the edge and fold it over to encrust the seasonings. Pressing to seal it.
  • Spread the spinach layer evenly right to the seam.
  • Top with the shrimp in a spiral on the outer edge and place four in the center.
  • Sprinkle the cheese evenly over the whole pie, center right to the edge.
  • Lower oven to 475.
  • Carefully shimmy the pie onto the heated stone or pan.
  • Bake 10-12 minutes.
  • Mean while prepare dip mixing the sour cream and The Original Ranch dressing and seasoning dip together. Set aside.
  • Remove with pizza wheel when bubbly and crisp to a wooden cutting board.
  • Let set for 5-10 minutes if you can wait. ;).
  • Slice and enjoy. When you get to the crispy crust dip it into the prepared The Original Ranch dip.

1 (16 ounce) package frozen chopped spinach, thawed and drained
3 eggs
1 ½ cups heavy cream
½ teaspoon salt

½ cup shredded Swiss cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9 inch pie pan with non-stick cooking spray.
  • Melt 2 tablespoons butter in a large saucepan over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. 8 tablespoons softened unsalted butter
2 ounces Hidden Valley® Original Ranch® Dressing and Seasoning Mix
2 boneless skinless chicken breasts
1/2 cup water
8 slices bakery fresh sourdough bread
4 ounces softened cream cheese
1/4 cup chopped black olives
1/2 cup canned artichoke heart, diced
4 teaspoons pimientos
1 tablespoon fresh grated lemon zest
1/3 cup grated parmesan cheese
2 cups fresh baby spinach leaves

Steps:

  • Combine 6 tablespoons of the softened butter, and 2 tablespoons of the Hidden Valley Original Ranch Dressing Seasoning Mix in a small bowl. Set ranch butter aside.
  • Sprinkle 4 teaspoons of the Hidden Valley Original Ranch Dressing Seasoning Mix over chicken to season. Over medium high heat, add remaining 2 tablespoons of butter, along with seasoned chicken breast to skillet. Cook on each side for about 4 minutes each side to brown. Add water and cover pan with lid to complete cooking. Remove chicken when juices run clear, and chicken is no longer pink. Let rest for about four minutes, then slice each breast horizontally to create 4 thin pieces, or cut chicken into thin vertical strips. Place chicken back into pan and toss in any extra pan drippings, keep warm until needed.
  • To create the Spanish Cheese Spread, combine cream cheese, olives, artichokes, pimentos, lemon zest, Parmesan cheese and remaining Hidden Valley Original Ranch Dressing Seasoning Mix in a bowl. Stir well to combine.
  • If using a Panini maker (the preferred way), adjust to manufactures recommended setting to preheat grill.
  • Using the reserved ranch butter, spread butter on top of each slice of bread.
  • To create Paninis, place one slice of bread, buttered side down on grill, followed by ¼ of the chicken. Pile ½ cup of baby spinach leaves on top of chicken. On the second slice of bread, spread ¼ of the Spanish Cheese Spread on the bottom or "unbuttered" side. Place bread on top of spinach, buttered side up. Close Panini maker and grill for about 8 minutes, or until golden brown. If you are able, grill 2 Panini's at a time. Keep Paninis in a warm in a 200 degree oven until all sandwiches are complete. Note: If you do not have a Panini maker, no worries, just toast sandwiches in a skillet over medium low heat, for about 4-5 minutes each side, or until bread is golden brown.
