CHEESY RANCH CHICKEN NOODLE BAKE
Egg noodles combine with chicken in a creamy, cheesy, Ranch infused sauce in this home-style casserole topped with butter cracker crumbs.

Steps:
- Preheat oven to 350 degrees. Grease a 9x13 inch baking dish.
- In a medium bowl, toss together the ingredients for the topping; set aside.
- For the casserole, cook noodles in boiling, salted water for 1-2 minutes. rinse with cold water and drain.
- In a large saute pan or Dutch oven, melt 4 tablespoons butter. Add onion and garlic and saute until soft and fragrant, 3-5 minutes. Stir in flour and ranch seasoning and cook a few minutes longer.
- Whisk in broth and half and half. Bring to a boil and simmer until thickened. Reduce heat and stir in cream cheese. Cook and stir until cream cheese is melted.
- Stir in noodles, chicken, shredded cheese and parsley. Season with salt and pepper, to taste. Transfer noodle mixture to the prepared pan.
- Sprinkle topping over casserole. Bake, uncovered, until golden and bubbly, 25-30 minutes.

In a large skillet, heat the oil over medium heat, add the mushrooms and cook for 5 minutes or until the mushrooms are browned. Remove the mushrooms from the skillet. - Put a large sauce pan, half full of water on to boil.
- Set a medium sized stainless mixing bowl on the sauce pan (double boiler).
- In a small pan cook the Ramen, Drain.
- Place the noodles in the s/s bowl.
- mix in the Dressing and Cheese.
- Stir continuously.
- ***WARNING*** BE EXTREMELY CAREFUL REGARDING THE STEAM!
- WEAR A COOKING MITT TO HOLD THE MIXING BOWL!
- When the cheese is throughly melted, serve immediately.
- Goes well with a garden salad or coleslaw, fresh bread sticks, and a nice Chianti.

- Cook pasta or prepare tofu noodles according to package directions and set aside.
- Heat the olive oil in a large non-stick skillet over medium heat. Add garlic and cook 1 minute.
- Add chicken and bacon. Cook, stirring until chicken is cooked through and no longer pink. Remove to a plate.
- Add spinach, broth, and 1 tsp ranch to skillet. Stir and cook until liquid is absorbed, and spinach is heated through, about 3-4 minutes.
- Reduce heat to medium-low. Add chicken, bacon, noodles, tomatoes, and remaining ranch seasoning to skillet, stirring and mixing until heated through.
- Toss with parmesan and serve hot.
