Broccoli Bacon Ranch Pasta Salad - this delicious salad is loaded with veggies (broccoli, cherry tomatoes, sweet peas), sharp Cheddar cheese, pasta shells, and bacon! Tossed in creamy Ranch dressing.

- In a large bowl, combined chopped blanched broccoli, chopped cooked bacon, whole cherry tomatoes, shredded sharp cheddar cheese, cooked sweet peas, cooked pasta shells.
- In a medium bowl, combine mayo and milk and add 1 or 2 tablespoons of dry Ranch mix. Mix well and taste to see if you need to add more dry Ranch mix to the dressing.
- Gradually add the salad dressing to the large bowl with the salad ingredients. Some people like lots of dressing on their salad, some don't - let your taste be your guide as far as how much dressing to add!

- Cook pasta according to package instructions. Remember to salt the pasta water so the noodles have some flavor. I use about 1 teaspoon salt. Drain the pasta and rinse under cold water so pasta can cool.
- In a mixing bowl combine the cooled pasta, broccoli, cucumber, tomatoes, and parmesan cheese. Stir. Add ranch and stir again to coat the noodles and veggies in the ranch.
- Serve right away or let it refrigerate for 1-2 hours before serving. Pasta salad tends to dry out in the fridge so don't leave it in there too long before serving. If needed, add some additional dressing and give it a good stir to moisten it back up.
- ** If you are making the homemade ranch dressing, I would suggest making it before you make the salad so it has plenty of time to refrigerate and get cold. Combine all the ranch dressing ingredients into a small bowl and stir with a wire whisk. It makes just enough for the salad. For leftovers, I just use store-bought ranch dressing to moisten it back up.

Yummy! This is a great dish to take to barbecues, football parties, pot lucks. **I have no idea the # of ounces, but you want the large size Ranch (not the jumbo, just large) and the regular package of penne pasta.

- Fry bacon crisp & crumble. You don't want it to still be hot when you add it to pasta salad.
- Boil pasta according to package instructions.
- While pasta is boiling, cut broccoli into bite size florets.
- Rinse pasta in cold water & drain.
- In large mixing bowl combine pasta, broccoli, olives, ranch dressing to taste, crumbled bacon and salt & pepper.
- (grated chees & grated carrots are nice variations.).
- Chill before serving. I like to make it the day before I plan to serve it.

A great side dish for the summer picnic. I made this on accident when I put some soup ingredients into the bowl instead of the stock pot. I doctored it up and added other ingredients, and voila! Use your favorite pasta shape.

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the bow tie pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink. Transfer to a bowl, and refrigerate until cool, at least 30 minutes.
- Meanwhile, place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate, let cool, and chop.
- In a large salad bowl, stir together the ranch dressing, bacon, Parmesan cheese, carrot, celery, and red onion until well combined. Lightly stir in the cooled pasta to coat with dressing, and refrigerate 2 hours to blend flavors before serving.

- Cook pasta al-dente according to the package directions. Drain and rinse in cool water until no longer hot.
- While pasta is cooking, prepare the rest of the ingredients: clean the bell peppers, remove the seeds, and pith, and chop them into small ⅓ inch pieces. Dice the scallions. Chop the broccoli into small pieces.
- Optional: If you don't love raw broccoli or prefer the softer texture of slightly cooked broccoli, cook the broccoli florets in the microwave on medium for 2-3 minutes to steam them. Allow to cool or rinse under cold water.
- In a large bowl, combine the chopped peppers, broccoli, scallions, shredded cheeses, and cooked pasta, as well as any other add-ins you like. Add the Ranch dressing and mix well. Season with salt and pepper, if desired (I find that I don't need salt when using Ranch dressing), or add additional dressing if needed.
