OVEN-FRIED RANCH CHICKEN

1 cup buttermilk
1/2 cup mayonnaise
4 sprigs thyme, leaves stripped and chopped
1 1/2 teaspoons paprika
3/4 teaspoon onion powder
3/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Kosher salt
2 3-to-4-pound chickens, each cut into 8 pieces
Cooking spray
3 1/2 cups breadcrumbs (preferably panko)
1/3 cup chopped fresh chives
Freshly ground black pepper

Steps:

  • Whisk the buttermilk, mayonnaise, half of the thyme, 1 teaspoon paprika, the onion and garlic powders, cayenne and 1 teaspoon salt in a large bowl. Add the chicken and toss to coat; cover and refrigerate at least 3 hours or overnight.
  • Position racks in the upper and lower thirds of the oven and preheat the oven to 400 degrees F. Line 2 baking sheets with aluminum foil and set a wire rack on each; coat the racks with cooking spray. Combine the breadcrumbs, chives, the remaining thyme and 1/2 teaspoon paprika, 1 teaspoon salt and 1/2 teaspoon black pepper in a shallow bowl.
  • Remove the chicken from the marinade and dredge in the breadcrumb mixture, pressing to adhere. Put the white meat on one wire rack and the dark meat on the other rack, skin-side up. Coat the chicken with cooking spray. Transfer to the oven, placing the dark meat on the bottom oven rack; bake until the crust is golden and a thermometer inserted into the thickest part of the meat registers 165 degrees F, 50 to 55 minutes. Let cool slightly on the wire racks, 10 minutes. Season with salt.

2 tablespoons vegetable oil
2 cups dry bread crumbs
1 cup ranch-style salad dressing (such as Hidden Valley® Original Ranch®)
4 skinless, boneless chicken breast halves - lightly pounded to an even thickness

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease baking sheet with vegetable oil.
  • Put bread crumbs and ranch dressing into separate bowls.
  • Dip chicken into ranch dressing and press into bread crumbs to coat. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Arrange onto prepared baking sheet.
  • Bake in preheated oven until no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

2 tablespoons olive oil
4 red potatoes, cut into large cubes
1 (16 ounce) package carrots, cut diagonally into bite-size pieces
1 stalk celery, cut diagonally into bite-size pieces
1 sweet onion, sliced - divided
1 (4.5 pound) whole chicken
salt and ground black pepper to taste
garlic powder, or to taste
½ cup cubed margarine, divided
1 large lemon, sliced
1 teaspoon minced garlic
1 stalk celery, cut into 3 pieces
1 ⅔ tablespoons minced garlic

Steps:

  • Preheat oven to 385 degrees F (196 degrees C).
  • Pour olive oil into a large bowl; toss potatoes, carrots, bite-size pieces of celery, and 3/4 of the sliced onion in the oil to coat. Set remaining onion aside. Transfer oiled vegetables to a large cast iron skillet.
  • Rinse chicken and pat thoroughly dry with paper towels. Generously season the chicken, inside and out, with salt, black pepper, and garlic powder. Place the remaining 1/4 of the sliced onion, 1/4 cup margarine, lemon slices, 1 teaspoon minced garlic, and large pieces of celery into the cavity of the chicken.
  • Place the chicken atop the oiled vegetables; scatter remaining 1/4 cup of margarine pieces and 1 2/3 tablespoon minced garlic in small amounts around the vegetables.
  • Roast chicken and vegetables in the preheated oven until the skin is browned and crisp, the vegetables are tender, and an instant-read meat thermometer inserted into the thickest part of a thigh reads 165 degrees F (75 degrees C), about 1 hour and 45 minutes. Let chicken rest for 10 minutes before carving and serving with vegetables.

In this recipe, you brine and season a family-sized roaster with ranch dip mix for a deep, rich flavor.

8 cups water
3/4 cup sugar
1/2 cup kosher salt
2 (1 ounce) envelopes ranch dip mix
3 tablespoons chopped fresh dill
6 -7 lbs roasting chickens
1 lb medium red potatoes, quartered
1 lb carrot, cut into 2-inch pieces
2 tablespoons olive oil

Steps:

  • In 2-1/2-quart microwave-safe bowl, microwave 2 cups water on High in 1-minute intervals until just boiling. Stir in sugar and salt until dissolved. Reserve 1 T. dip mix; stir remaining mix into liquid mixture. Stir in 6 cups water and 2 T. dill; cool mixture to room temperature. Place chicken in 2-gallon plastic food storage bag in large bowl.
  • Pour liquid mixture over chicken; seal bag. Refrigerate at least 4 hours but no longer than 8 hours.
  • Preheat oven to 350 degrees. Remove chicken from brine; discard brine; pat chicken dry. Place chicken in shallow roasting pan; sprinkle with 1 t. reserved dip mix. Roast 1 hour.
  • In bowl, toss potatoes and carrots with oil and remaining 2 t. dip mix until coated; arrange around chicken in pan. Roast until meat thermometer inserted into thickest part of thigh away from bone registers 180 degrees and vegetables are tender, 45 minutes to 1 hour. Transfer to chicken platter; sprinkle with 1 t. of remaining dill. Let stand 10 minutes before carving. Toss vegetables with remaining 2 t. dill; serve vegetables with chicken.
