Rachael says: "Grilling the entire bird is the ultimate flavor bomb-cooking meat on the bone keeps things juicy while the skin crisps up, and turns out an outer layer brimming with flavor. Plus, a whole grilled chicken makes for a stunning presentation. The chicken will need to be butterflied (see instructions below) so that it lies flat and grills evenly over direct heat. Bonus: This cuts down the cooking time by half. And small, hibachi-size grills need not apply, as you'll need extra grate space to move the chicken around when inevitable flare-ups occur" I say... 4 garlic cloves, chopped

2 teaspoons dried ancho chile powder (or chili powder)
1 canned chipotle chile in adobo, finely chopped, plus 2 tablespoons sauce
1 teaspoon sweet smoked paprika
1 lime, juice of
one 3 1/2-pound chicken, butterflied

Steps:

  • Butterfly Chicken: place the chicken, breast side down, on a work surface. Find the backbone-it runs from neck to tail. Using kitchen shears, cut along one side of the backbone; repeat along the other side to remove it. Flip over the chicken, so it's breast side up. With the palm of your hand, press down to crack the breastbone, so the chicken lies flat.
  • Preparation/Grilling: 1.Using the flat side of a chef's knife, mash the garlic and 1 1/2 teaspoons salt into a paste. Transfer to a bowl, then stir in the ancho chile powder, chipotle chile and adobo sauce, paprika and lime juice.
  • Using your fingers, loosen the chicken skin all over, being careful not to tear the skin and avoiding the area closest to the removed backbone. Rub the paste all over the chicken, smearing it first under the skin, then on the underside of the chicken, then over the skin. Transfer to a gallon-size resealable plastic bag and refrigerate for at least 4 hours or overnight.
  • Preheat a grill to medium. Position the chicken, skin side down, on an oiled cooking grate, using tongs and a spatula to lay the chicken flat and stretch it out to its full size. Grill, turning every 10 minutes, until an instant-read thermometer registers 170° or juices run clear when pierced with a knife and the skin is crisp, 35 to 40 minutes. (If any flare-ups occur, move the chicken to a different spot on the grill and cover briefly.) Let rest for 10 minutes before carving.

1/3 cup sliced almonds, a couple of handfuls
1 quart chicken stock
1 lemon, zested
2 to 3 sprigs fresh thyme
4 tablespoons butter, divided
1 1/2 cups white rice
1 1/2 to 1 3/4 pounds chicken breast cutlets, 8 cutlets
Salt and pepper
1 teaspoon poultry seasoning, 1/3 palm full
2 tablespoons plus about 1/2 cup all-purpose flour, divided
2 tablespoons extra-virgin olive oil, 2 turns of pan
1 1/3 pounds, a large bunch, asparagus spears, trimmed of tough ends
6 or 7 large button mushrooms, sliced
1/3 cup half-and-half
1 rounded tablespoon Dijon mustard
2 tablespoons, a couple sprigs, fresh tarragon, leaves chopped
2 scallions, chopped

Steps:

  • Toast almonds in a small skillet until golden. Set aside.
  • Bring 2 3/4 cups chicken stock, the zest of 1 lemon, thyme sprigs and a tablespoon of butter to a boil in a medium pot with a tight fitting lid. Add rice to water, stir. Return the water to a boil then reduce heat to simmer and cove the pot. Cook 18 minutes or until tender, remove from heat. Remove the thyme sprigs, the leaves will have fallen off in the rice.
  • While the rice cooks, season chicken with salt, pepper and poultry seasoning. Dredge chicken in about half cup of flour then discard the rest. Heat a large skillet over medium to medium-high heat. Add 2 tablespoons extra-virgin olive oil, 2 turns of the pan, and 1 tablespoon butter to the large skillet. To the hot butter and oil, add the cutlets and cook 3 to 4 minutes on each side. Remove the meat to a large platter and cover with foil to keep warm.
  • Bring an inch or 2 of water to a simmer in a shallow pan and season with salt. Add asparagus and cook 4 minutes until just tender but green. Remove and add to chicken platter to keep warm.
  • Return chicken skillet to the heat and add 2 tablespoons butter. Melt butter, add the mushrooms and saute for a couple of minutes. Whisk in 2 rounded tablespoons flour. Cook the flour 1 minute then whisk in 1/3 cup white wine, a couple of glugs. Cook off wine, 30 seconds, then whisk in 1 1/4 cups of chicken stock (remainder of the quart) then the half-and-half. When sauce bubbles, stir in mustard and tarragon and let sauce simmer and thicken 2 to 3 minutes.
  • Stir scallions into rice and fluff with fork. Make a bed of rice on each dinner plate. Top with a serving of steamed asparagus then 2 cutlets of chicken. Cover the chicken with the tarragon sauce, allowing the gravy to spill over edges into asparagus and rice. Sprinkle the plates with toasted nuts. Wow! Can you believe you made this?

1 1/2 teaspoons black peppercorns
4 cloves garlic, minced
1/2 teaspoon kosher salt
1 lemon, zested
extra virgin olive oil
1 onion, cut into 3 to 4-inch pieces
3 carrots, cut into 3 to 4-inch pieces
3 stalks celery, cut into 3 to 4-inch pieces
3 -4 lbs broiler-fryer chickens
1 cup red wine
8 ounces chicken stock
2 -3 sprigs thyme
canola oil

Steps:

  • Position the oven rack 8 inches from the flame/coil and turn broiler to high.
  • Crack peppercorns with a mortar and pestle until coarsely ground.
  • Add garlic and salt and work well.
  • Add lemon zest and just enough oil to form a paste.
  • Cut vegetables into pieces and place in a deep roasting pan.
  • Place chicken on a plastic cutting board breast-side down.
  • Using kitchen shears, cut ribs down one side of back bone and then the other and remove.
  • Open chicken like a book and remove the keel bone separating the breast halves by slicing through the thin membrane covering it, then by placing two fingers underneath the bone and levering it out.
  • Turn chicken breast-side up and spread out like a butterfly by pressing down on the breast and pulling the legs towards you.
  • Loosen the skin at the neck and the edges of the thighs.
  • Evenly distribute the garlic mixture under the skin, saving 2 teaspoons for the jus.
  • Drizzle the skin with oil and rub in, being sure to cover the bird evenly.
  • Drizzle oil on bone side of chicken as well.
  • Arrange bird in roasting pan, breast up, atop vegetables.
  • Place pan in oven being sure to leave the oven door ajar.
  • Check bird in 10 minutes.
  • If the skin is a dark mahogany, hold the drumstick ends with paper towels and flip bone-side up.
  • Cook 12-15 minutes or until the internal temperature reaches 165 degrees.
  • Juices must run clear.
  • Remove and place chicken into a deep bowl and cover loosely with foil.
  • Tilt pan so that any fat will pool at corner.
  • Siphon this off with a bulb baster.
  • (This fat is great in vinaigrettes).
  • Set pan over 2 burners set on high.
  • Deglaze pan with a few shots of red wine and scrape brown bits from bottom using a carrot chunk held with tongs.
  • Add chicken stock, thyme, the remaining garlic paste and reduce briefly to make a jus.
  • Strain out vegetables and discard.
  • Slice chicken onto plates or serve in quarters.
  • Sauce lightly with jus and serve.

1 cup kosher salt, for brine (or 1/2 cup table salt)
1/2 cup granulated sugar
1 (3 1/2-4 lb) roasting chickens
2 1/2 lbs russet potatoes, peeled and sliced 1/8 to 1/4-inch thick (4 to 5 medium)
vegetable oil cooking spray (nonstick)
1 1/2 tablespoons olive oil
3/4 teaspoon table salt (for potatoes)
ground black pepper

Steps:

  • Dissolve salt and sugar in 2 quarts cold water in large container. Immerse chicken and refrigerate until fully seasoned, about 1 hour. Meanwhile, adjust oven rack to lower-middle position and heat oven to 500°.
  • Line bottom of broiler pan with foil and spray with nonstick vegetable cooking spray. Remove chicken from brine and rinse thoroughly under cold running water. Following illustrations 1 through 6, butterfly chicken, flatten breastbone, apply flavored butter (if using), and position chicken on broiler pan rack; thoroughly pat dry with paper towels.
  • Toss potatoes with 1 tablespoon oil, salt and pepper to taste in medium bowl. Spread potatoes in even layer in foil-lined broiler pan bottom. Place broiler pan rack with chicken on top. Rub chicken with remaining 1 1/2 teaspoons oil and sprinkle with pepper.
  • Roast chicken until spotty brown, about 20 minutes. Rotate pan and continue to roast until skin has crisped and turned a deep brown and an instant-read internal thermometer registers 160° in thickest part of breast, 20 to 25 minutes longer. Transfer chicken to cutting board. With potholders, remove broiler pan rack; soak up excess grease from potatoes with several sheets paper towels. Remove foil liner with potatoes from broiler pan bottom and invert foil and potatoes onto cookie sheet or second cutting board. Carefully peel back foil, using a metal spatula to help scrape potatoes off foil as needed. With additional paper towels, pat off remaining grease.

This is a favourite from 30 Minute Meals although I alter it a bit. For example, it works out quite well with all bone-in dark meat. Some sherry or cider vinegar can be substitued for some of the wine and wine vinegar. I have been liberal with cooking time since leaving the bone in increases the cooking time. Preparation is VERY easy, though -- despite the number of steps which are truly easy.

2 lbs boneless skinless chicken thighs (leave bone in if you wish) (optional) or 1 1/2 lbs chicken tenderloins, depending on cost (optional)
1/4 teaspoon salt (or to taste)
fresh ground black pepper, to taste
3 tablespoons extra virgin olive oil
6 garlic cloves, crushed
3 tablespoons white wine vinegar
2 tablespoons butter
2 shallots, chopped
6 sprigs fresh rosemary, finely chopped
2 tablespoons flour
1 cup dry white wine
2 cups beef broth (yes, beef broth)

Steps:

  • Heat a large, heavy, deep skillet over medium high heat.
  • Season chicken with salt and pepper.
  • Add 2 tablespoons extra-virgin olive oil, half the chicken pieces and a couple of crushed cloves of garlic.
  • Brown chicken 2 minutes on each side and remove from pan.
  • Add remaining oil and swirl around pan. Add remaining chicken pieces and garlic. Brown chicken 2 minutes on each side and remove.
  • Add vinegar to the pan and let it sizzle till most evaporates.
  • Add butter, shallots, and rosemary to the pan and cook 2 minutes.
  • Add flour and cook 1 minute.
  • Whisk in wine and allow to reduce and thicken for 1 minute.
  • Whisk in broth and bring liquids up to a low boil.
  • Return chicken to the pan and simmer over moderate heat 7 to 8 minutes for boneless (or nearly double that for bone-in) to cook chicken thoroughly.
