From "Eight Weeks to Optimal Health". I haven't tried it yet but want to post it for safekeeping. Dr Weil says: Here is an unusual, healthy dessert made from the staple grain-like seed of the high Andes, now available in specialty food shops and health-food stores.

1 cup quinoa
2 cups apple juice
1 cup raisins
1 cup nuts, chopped
1 lemon, juice of
cinnamon
salt
2 teaspoons vanilla extract
sliced bananas (optional) or maple syrup (optional)

Steps:

  • Place the quinoa in a sieve and wash it well under cold running water. Drain and place in a pot with 2 cups cold water. Bring to a boil, cover, lower heat, and boil gently until all the water is absorbed, and quinoa is tender, about 15 minutes.
  • Measure 2 cups cooked quinoa and to it add the apple juice, raisins, nuts, lemon juice, and pinches of cinnamon and salt to taste.
  • Simmer, covered, for 15 minutes.
  • Remove from heat and stir in the vanilla extract.
  • Chill. Serve plain, or with berries or sliced banana or a little maple syrup if you want it sweeter.

This recipe is based on one from Dr. Andrew Weil's book, 8 Weeks to Optimum Health. I use the discarded broccoli stalks bottoms in recipe #135453 (#135453) - waste not want not!

1 lb fresh broccoli
1 tablespoon extra virgin olive oil
salt
4 -6 garlic cloves, chopped
red pepper flakes (optional)

Steps:

  • Prepare broccoli by trimming off the bottoms from the broccoli stalks and discarding (or freezing for later use). Cut off the main stem of each stalk; peel it to beneath the fibrous layer, and cut the flesh into bite-sized chunks. Break the head of the broccoli into bite-size pieces, and peel a bit of the skin from the small stems to make them more tender.
  • Rinse the broccoli in cold water and drain. Place in a pot with ¼ cup cold water, the olive oil, salt to taste, and the garlic. Add a pinch or more of the hot red pepper flakes if you prefer some heat.
  • Bring to a boil, cover tightly, and steam until the broccoli is bright green and crisp-tender, no more than 5 minutes. Remove with a slotted spoon and serve at once. You can also add the broccoli (with any remaining liquid) to cooked pasta (Dr. Weil prefers penne or rigatoni), seasoning with grated Parmesan cheese if you like.

With this one, you really get to have your dessert and eat it too! Quinoa is extremely healthy: "Nutritionally, quinoa might be considered a supergrain--although it is not really a grain, but the seed of a leafy plant that's distantly related to spinach. Quinoa has excellent reserves of protein, and unlike other grains, is not missing the amino acid lysine, so the protein is more complete (a trait it shares with other "non-true" grains such as buckwheat and amaranth). The World Health Organization has rated the quality of protein in quinoa at least equivalent to that in milk. Quinoa offers more iron than other grains and contains high levels of potassium and riboflavin, as well as other B vitamins: B6, niacin, and thiamin. It is also a good source of magnesium, zinc, copper, and manganese, and has some folate (folic acid)." (www.WholeHealthMD.com) Recipe from Eden Organics.

1 cup quinoa, rinsed
2 1/2 cups soymilk
1 pinch salt
1 teaspoon tahini sesame butter
2 tablespoons maple syrup or 2 tablespoons honey
2 tablespoons kudzu or 2 tablespoons arrowroot, dissolved in
2 tablespoons cold water
1 tablespoon vanilla extract
1/2 teaspoon nutmeg, Freshly grated or 1/2 teaspoon ground cinnamon
fruit or nuts, to serve

Steps:

  • Mix quinoa, soymilk and salt together in a saucepan and bring to a boil.
  • Cover and simmer for 20 minutes.
  • Add sesame butter and barley malt and mix well.
  • Add kudzu or arrowroot and stir constantly until mixture thickens.
  • Add vanilla and spices.
  • Top with your choice of nuts or fruit. Delicious warm or chilled.
