QUINOA PILAF (UPMA) (PRESSURE COOKER)
Upma is a pilaf preparation from South India. (P.S. Upma is typically mildly spiced and served with coconut chutney or ginger chutney, e.g., recipes #110219, #116586. For more spice, select a chutney which suits your tastes.) This recipe is different from most Upma recipes in using a pressure cooker and quinoa instead of semolina. You can substitute 1-1/4 cup semolina (more traditional) for the quinoa and your choice of chopped seasonal vegetables for the peas. - Put all the ingredients into a pressure cooker. Stir once.
- Cook on medium to medium-high heat.
- After three whistles, remove from heat.
- After the pressure reduces (5 to 10 minutes), open.
- Garnish with chopped coriander leaves.
- Serve hot with chutney.

QUICK INDIAN CURRY WITH COCONUT QUINOA (PRESSURE COOKER)
I love Indian flavors, but all the cream based sauces make it tough for me to eat it as often as I would like! I had a craving for some Indian curry, a fridge full of good vegetables to use and some ideas to cut a lot of the fat. It came out pretty well, though I think I will increase a sharp spice next time, I think ginger would be a good call. I did the sauce at the same time as the vegetables which lessened the total time.

Steps:
- Measure 2 cups warm water and add saffron threads. Let soak for now.
- Meanwhile, cut up all the vegetables.
- Put the quinoa, garbanzo beans, raisins, coconut extract, and saffron water into the bottom of your pressure cooker and then place a vegetable steaming rack above this (the kind that open up like a flower).
- Put the vegetables in the steaming rack, starting with the squash and sweet potato, then the pepper, eggplant and beans.
- Oil the gasket, close and lock the pressure cooker, and set heat to medium-high. When high pressure has been reached, cook for 5 to 6 minutes. Depressurize with a quick-release method.
- Meanwhile, in a medium saucepan, melt your buttery substance, and saute cumin seeds until fragrant, 2 or 3 minutes.
- Add onions and saute until soft but not browned.
- Add evaporated milk and remaining spices and simmer until slightly thickened, ten minutes or so.
- Move the vegetables from the rack to a large serving bowl and pour the curry sauce over them, tossing to coat.
- Remove the rack from the pressure cooker and fluff quinoa. If it is too watery, resume heating until desired consistency.
- Serve curry spooned over quinoa in bowls and enjoy with naan or pitas.

- Clean, wash and soak the rice for 10 minutes.
- Drain and keep aside.
- Heat the oil in a pressure cooker and add the bay leaf, clove, cinnamon and cumin seeds.
- When the seeds crackle, add the onion and ginger-green chilli paste and sauté till the onion turns translucent.
- Add the rice and sprouts and sauté for 2 minutes.
- Add the turmeric powder, chilli powder, ground coriander seeds and salt with 2 1/2 cups of hot water.
- Pressure cook for 2 whistles (15 minutes).
- Serve hot, garnished with the coriander.

- Heat pressure cooker with oil and butter, sauté onion until transparent.
- Add rice and mix well. Add chicken stock and peas, and bring to boil, close the lid, reduce the heat and cook for 6 minutes. Let pressure cooker to cool down slowly for about 6 minutes.

- Fry the bacon in a pressure cooker over medium-low heat so the grease melts and thickly coats the bottom of the pan. Add oil if the bacon is lean.
- Add the okra and raise heat to medium-high. Fry until the okra is tender, about 5 minutes. Add the paprika and mix well.
- Add the rice and saute for 2 minutes. Add the broth and salt. Put the lid and gauge on and bring up to pressure. Time for 16 minutes (for firm rice) to 18 minutes (for soft rice) from the time the gauge begins to rock. Bring down the pressure by running water over the pan sides.
