BLT QUINOA BOWLS
I absolutely love a BLT with sliced avocado and an egg. Recently, I've been trying out grain bowls, and I thought the flavors of my favorite sandwich would work really well. My family agreed! -Elisabeth Larsen, Pleasant Grove, Utah

- Prepare quinoa according to package directions. Combine 3 tablespoons olive oil, basil, 1 tablespoon vinegar and lemon juice. Add to cooked quinoa; stir to combine., Place 2-3 in. of water in a large skillet with high sides; add remaining vinegar. Bring to a boil; adjust heat to maintain a gentle simmer. Break 1 cold egg at a time into a small cup; holding cup close to surface of water, slip egg into water. Cook, uncovered, until whites are completely set and yolks begin to thicken but are not hard, 3-5 minutes. Using a slotted spoon, lift eggs out of water. Keep warm., In a large skillet, heat remaining oil over medium heat. Cook tomatoes until they begin to release their juices, 8-10 minutes. Add arugula; cook and stir just until arugula is wilted, 1-2 minutes., To serve, divide quinoa evenly among 4 bowls. Add cherry tomatoes, arugula, avocado slices and crumbled bacon. Top each with a poached egg.

Steps:
- Cook pasta according to package instructions, drain the pasta and rinse under cold water, set aside to cool.
- In a small bowl, combine the ingredients for the dressing and whisk until creamy.
- In a large salad bowl, add the cooked pasta, chopped romaine, halved tomatoes, cooked bacon, and chopped red onion and toss.
- Just before serving, add the dressing to taste and gently toss until combined.

- The night before school, cook the pasta following pack instructions and run under cold water to cool quickly. Mix in the bacon, spinach, tomatoes, crème fraîche and mustard, and season with a little salt. Spoon into an airtight container and keep overnight in the fridge.

- While the cashews are soaking for your dressing, I suggest chopping all your veggies and having them ready to go. You can also cook your bacon: add bacon to a large skillet or pan and place over medium heat, cook bacon on both sides until crispy and golden brown. If the pan starts to smoke at any point, simply lower the heat. I always cook my bacon on medium low heat. Once bacon is done, blot with a paper towel to absorb excess grease, then chop into bite sized pieces and set aside.
- Next cook your pasta until al dente, drain and then place in a large bowl. Add all of the jalapeno cashew dressing, then stir together to combine. Next add the chopped bacon, corn (I prefer grilled or sauteed), halved cherry tomatoes, sliced red onion, romaine lettuce and avocado. Gently toss again, then taste and adjust seasonings as necessary, adding more salt and pepper if you’d like. Serves 6, or 4 as a larger meal. Garnish with extra corn, tomatoes, red onion, avocado and bacon.

- Add the quinoa and vegetable broth to a small pot. Bring to a boil, then reduce heat and simmer until the broth is completely absorbed, approx. 12-15 minutes. Stir often towards the end of cooking. Set aside to cool slightly.
- While the quinoa is cooking, add all the dressing ingredients in a small bowl and mix well. Set aside, Then chop up your veggies, if you haven't already.
- Transfer your cooked quinoa to a large bowl and add all the veggies and mix. Then pour the dressing on top and mix well to evenly coat. Chill for 1 hour or longer, or enjoy immediately.

- If necessary, cook the bacon according to one of my easy methods listed below. When cool enough to handle, cut into chunky, bite-sized pieces.
- Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, according to package instructions. Drain the pasta in a colander, then rinse under cold water to stop its cooking. Shake off as much water as possible, then place it in a large serving bowl.
- In a small bowl or measuring cup, whisk together the ranch dressing: Greek yogurt, milk, olive oil, garlic powder, black pepper, onion powder, dillweed, salt, cayenne pepper, and Worcestershire. Pour over the noodles, then toss to coat.
- Gently fold in the cherry tomatoes, romaine, spinach, 3 tablespoons chives, and reserved bacon. Sprinkle with additional chives for garnish. Taste and adjust seasoning as desired. Serve right away, at room temperature, or chilled.
