QUICKIE BAKED BEAN PIE!
Fast and inexpensive.....and most of all, TASTY! Takes no more than 45 minutes to the table. What more can you ask for on a busy week night?

Steps:
- START THE CLOCK!
- Preheat oven to 350 degrees.
- Slice ham into 6-8 slices, brush or spread maple syrup over each slice and lay in circle around inside of a 9-inch pieplate. Set aside.
- In sauce pan, heat to boiling the beans, relish and onion.
- Pour into center of pieplate, top with cheese and bake for 20 minutes or until the tops of the ham have started to brown.
- STOP THE CLOCK! YOU ARE DONE!

PINTO BEAN PIE
You won't believe how delicious this is. I often prepare this for friends for "shock" effect. They always forgive me after the first bite. (then they ask for the recipe when their plate is clean...)

Steps:
- Beat eggs with sugar, then blend in the milk, vanilla and butter.
- Combine the flour, salt and baking powder and stir into the egg mixture till well blended.
- Blend in the beans and turn into pieshell.
- Bake at 350 degrees till firm.
BLACK BEAN PIE
Serve this hearty dish with a dollop of cilantro laden sour cream, some Spanish rice, and a mixed green salad. The ingredients for this recipe make a very small 7 inch pie. If you are using a normal sized pan, you might want to increase the amount of black beans to 2 cans, and adjust only the seasonings accordingly. The chopped onion and peppers can remain the same.

Steps:
- Heat oven to 325 degrees.
- In a saucepan over medium heat, add oil and saute onion, green pepper until tender.
- Add beans, salsa, red pepper, chili powder, cayenne and salt and pepper.
- Reduce heat to low and simmer for 15 minutes.
- Spoon half of the mixture into one of the pie crusts lining a pie plate.
- Cover with half of the cheese.
- Spoon remaining bean mix on top and then the rest of the cheese.
- Cover with second pie crust.
- Bake for 1 hour.

Steps:
- For the crust - In a food processor or blender pulse crackers until they resemble coarse crumbs.
- In a bowl, combine crackers and butter.
- Press into a 9 inch pie plate.
- Bake at 350 degrees for about 8 minutes.
- For the filling - Meanwhile, in a skillet, heat oil over medium heat.
- Add onion and cook until softened.
- Add garlic and cumin and cook for about 1 minute.
- Stir in beans, corn and salsa.
- Bring to a boil and add cream cheese and cook, stirring, until cheese is melted and the mixture holds together - about 2 minutes.
- Remove from heat.
- Spread evenly over cooked crust.
- Bake at 350 for about 10 minutes
- Remember oven do vary but needs to be heated thru completely.

- Heat oven to 400 degrees.
- Lightly grease 10 X 1 1/2" pie plate.
- Mix beans, mushrooms, onion, garlic and cheese in pie plate. Beat remaining ingredients until smooth, 15 seconds in blender on high speed or 1 minute with hand beater. Pour into pie plate.Bake until golden brown and knife inserted halfway between center and edge comes out clean, 30 to 35 minute Let stand 5 minute before cutting. Refrigerate any remaining pie.

Steps:
- Preheat oven to 400 degrees.
- Grease bottom of cast iron skillet with Crisco and sprinkle with salt.
- Bring skillet to med-high temperature.
- Crumble ground beef all over skillet.
- After a minute or so, turn heat to medium.
- Use a heavy duty spoon to squash beef while browning to keep an even crumble.
- Add 1/4 c onion, 1 tsp thyme, a light layer of black pepper, ground mustard, and cayenne.
- Add 1 can of butter beans, reserve liquid.
- Let cook for a bit.
- Add 1/2 the reserved bean liquid.
- Let cook for a bit.
- Sprinkle with flour to thicken.
- Then add the remaining bean liquid.
- Let cook down until it is moist but not soupy.
- Put into mixing bowl and let cool to warm temperature.
- Make double pie crust. Use your preferred recipe. Make sure to prick bottom crust with fork. Do not bake prior to filling.
- Add chopped pickles.
- If the mixture is cooled, mix in 2 eggs.
- Scoop into pie shell, cover with top crust, cut three vent slits into top.
- Cook for 30 minutes.
- Let cool for 20 to 30 minutes.
- Eat :).
