EASY GREEN CHILE ENCHILADAS



Easy Green Chile Enchiladas image

1/2 onion, diced
1 tablespoon butter
One 15-ounce can green enchilada sauce
Two 4-ounce cans chopped green chilies
2 cups freshly grated Cheddar-Jack cheese
12 yellow corn tortillas
Store-bought salsa, for serving
Sour cream, for serving
Fresh cilantro leaves, for serving

Steps:

  • In a small skillet, saute the onions with the butter over medium-low heat until the onions are nice and golden brown.
  • In a small saucepan, combine the green enchilada sauce with the green chilies and heat until very warm.
  • In the microwave or in the oven (on a baking sheet), melt some cheese all over the top of each tortilla so that it covers most of the surface area.
  • To serve, stack three cheesy tortillas on top of one another. Spoon green sauce over the top and add store-bought salsa, sour cream and cilantro as needed. Delish and so, so easy!

4 boneless, skinless chicken breasts (cooked and shredded)
9 10-inch flour tortillas
1 28 ounce can green enchilada sauce
2 cups Monterey jack cheese (shredded)
1 8 ounce container sour cream

Steps:

  • Preheat oven to 350 degrees. Lightly grease a 8x11" baking dish.
  • Pour 1/4 of the enchilada sauce on the bottom of the baking dish.
  • Rip up 3 tortillas and cover the enchilada sauce layer. Top with half the chicken, 2/3 cup of cheese, 1/2 cup sour cream, and another fourth of the enchilada sauce. Repeat.
  • Top the last layer of tortillas with the last of the enchilada sauce and the last 2/3 cup of cheese.
  • over and bake for 45 minutes. Serve warm.

5-Ingredient Fix Contest Entry. I have a large family, (12 of us) and I buy the large bags of tortilla chips from a grocery warehouse. We always had a fourth of a bag left because by then they would be all crushed and the kids wouldn't eat them. One day my husband gave me a challenge to try to come up with some way to use the crushed chips, at the same time one of my grandsons decided he was going vegetarian. So I took it on as a double challenge and also decided I could only use what I had on hand. This is how the recipe was born. Ingredients can be adjusted to fit whatever size casserole dish you might want to use. Serve with a dollop of sour cream and a side of mexican rice (optional) I make it in a large alluminum tray (20 3/4"L x 12 13/16"W x 3 3/8"D) the qty of the ingredients are for this pan but can be adjusted for any size casserole pan.

12 cups crushed tortilla chips
3 (28 ounce) cans green enchilada sauce
2 (20 ounce) packages Simply Potatoes Diced Potatoes with Onion
6 cups pre-shredded mozzarella cheese or 6 cups monterey jack cheese
3 cups Cotija cheese or 3 cups parmesan cheese

Steps:

  • Pour a third of one can enchilada sauce on the bottom of the pan, or just enough to coat the bottom.
  • Spread 4 cups of tortilla chips in an even layer on top of the sauce.
  • Spread 1 bag Simply Potatoes diced potatoes with onions over the chips.
  • Pour remaining open can of enchilada sauce over the potatoes.
  • Sprinkle 2 cups of shredded cheese and 1 cup cotija or parmesean over the sauce. Repeat layers again starting with the chips, then potatoes, 1 can sauce, then cheeses.
  • Last layer is chips the last can of sauce and the rest of the cheeses.
  • Bake in a 350 degree oven for approximately 30 mins, or until sauce and cheese is bubbly and the cheese is slightly browned. Let rest 20 minutes.

1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
1 lb shredded cooked chicken
1 (15 ounce) can green enchilada sauce
1 (4 ounce) can diced green chilies
1 (8 ounce) bag crystal farms shredded monterey jack cheese

Steps:

  • Preheat oven 400°F.
  • While chicken is cooking combine green chili enchilada sauce and diced green chilis in a bowl.
  • Stir in potatoes until coated.
  • Stir in 1 cup of shredded cheese reserve 1 cup for later.
  • Stir in cooled shredded chicken.
  • Pour into lightly greased 9x13 pan.
  • Sprinkle remaining cheese on top.
  • Bake at 400F for 45 to 50 minutes.

My husband and I were feeling nostalgic for green chile (we used to live in NM), so we dug into the precious Hatch supply and this is what I came up with. If you can't get ahold of Hatch, try for the most flavorful green enchilada sauce you can find. If you can get Hatch--send some to me LOL! The steps look involved but really this takes no time at all.

1 (14 ounce) can green enchilada sauce (preferably Hatch)
6 (6 inch) corn tortillas
1 1/4 cups cooked chicken breasts, shredded
1/2 cup bell pepper, chopped
1/2 cup onion, chopped
1/2 cup frozen corn
3 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fat free sour cream (to taste)
1 cup reduced-fat cheddar cheese

Steps:

  • Preheat oven to 350.
  • In a non-stick skillet coated with cooking spray saute onions, garlic, bell pepper, and corn until tender.
  • Remove from heat.
  • Stir in chicken, salt, and pepper, then add 1/2 c of enchilada sauce. Mix well.
  • Spread 1/4 c enchilada sauce on the bottom of an 11x7 inch pan.
  • Spread 4 tortillas with sour cream, then place in pan. Pour half the chicken mixture on top.
  • Add 1/4 cheese and top with two tortillas.
  • Pour 1/4 c enchilada sauce over tortillas, then cover with remaining chicken mixture and 1/4 c cheese.
  • Spread 1 T of sour cream on two tortillas, then place them CREAM SIDE DOWN on top of casserole. You will want to layer them crossways from the two tortillas below (trust me, this works).
  • Spread 1/4 c enchilada sauce on top of tortillas, then sprinkle with remaining 1/2 c cheese.
  • Bake at 350 for 20-25 minutes or until cheese is bubbly.

I got my picture in the paper for this one! My friends' husbands always fall in love with this when I bring it to parties! My 4 picky kids eat it! If you want to skip the charring step, simply tear the tortillas into fourths so they absorb the sauce better.

4 skinless, boneless chicken breast halves
garlic salt to taste
18 (6 inch) corn tortillas, torn in half
1 (28 ounce) can green chile enchilada sauce
1 (16 ounce) package shredded Monterey Jack cheese
1 (8 ounce) container reduced fat sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Season chicken with garlic salt. Arrange in the prepared baking dish. Bake 45 minutes in the preheated oven, until no longer pink and juices run clear. Cool, shred, and set aside.
  • With metal tongs, char each tortilla half over the open flame of a gas stove burner for about 1 minute, until lightly puffed.
  • Pour about 1/2 inch enchilada sauce in the bottom of a medium baking dish, and arrange 6 tortillas in a single layer. Top with 1/2 the chicken, 1/3 cheese, 1/2 the sour cream, and 1/3 of the remaining enchilada sauce. Repeat. Coat remaining tortillas thoroughly with remaining enchilada sauce, and arrange on top of the layers. Sprinkle with remaining cheese, and top with any remaining enchilada sauce
  • Cover, and bake 45 minutes in the preheated oven. Cool slightly before serving.
