CLASSIC BRAN MUFFINS



Classic Bran Muffins image

A delicious source of fiber! My family have them almost every morning. Great healthy muffins! You may substitute dates for the raisins if you wish.

Number Of Ingredients 11

1 ½ cups wheat bran
1 cup buttermilk
⅓ cup vegetable oil
1 egg
⅔ cup brown sugar
½ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
  • Mix together wheat bran and buttermilk; let stand for 10 minutes.
  • Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
  • Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!

Best Ever Bran Muffins image

This recipe is from my Aunt and is the best bran muffin recipe I have ever tasted. You can replace whole wheat flour for regular flour to lighten it up a bit. Enjoy!!

Number Of Ingredients 12

2 cups 100% bran
2 cups water
1 cup margarine
2 cups sugar
4 item(s) eggs
1 cup molasses
5 cups flour
3 tablespoons baking soda
1 teaspoon table salt
4 cups buttermilk
4 cups bran flakes
1 cup raisins

Steps:

  • Boil the water. Place 100% Bran in a bowl and add boiling water - let soak.
  • In a very large bowl, mix sugar and margarine; add eggs & molasses.
  • Mix in flour, baking soda, & salt.
  • Add Bran flakes, 100% bran mixture and buttermilk - mix well.
  • Bake @ 400 C for 15 minutes.

Queen's Bran Muffins image

This recipe came from a friend which I tweaked, and I have used it for years. They are best right out of the oven, but also freeze well. This makes a lot so you have plenty to share! Teens love them, too. I am continually asked for the recipe so I decided to post so I would not loose it.

Number Of Ingredients 10

2 cups boiling water
4 cups fruit and high fiber cereal (or any high fiber cereal flavor you like)
2 cups bran flakes
1 cup sugar
1 cup applesauce
1 quart buttermilk
5 teaspoons baking soda
5 cups all-purpose flour
1/2 teaspoon salt
4 eggs

Steps:

  • Combine cereal in extra-large bowl and pour bowling water over it to soften while you make the batter.
  • In a mixer, cream together sugar and apple sauce. Add eggs one at a time to incorporate.
  • Combine flour, baking soda and salt. Slowly add flour mixture to the mixer, alternating between flour and buttermilk to make batter. Scrape down sides of the bowl as needed. Once, combined, pour batter over cereal and stir until all is incorporated. Let the mixture sit a few minutes so cereal will soften in the batter.
  • Spoon into greased muffin tins. Bake in preheated oven at 400* for 16-18 minutes. Do not overcook. They are best when they are "just done" and not beyond that so the centers stay really moist.

  • In a small mixing bowl, pour the boiling water over the half cup of cereal. When cooled, mix in the vegetable oil and egg.
  • While the water/bran mixture cools, whisk together the flour, sugar, baking soda, baking powder and salt in a large mixing bowl. Stir in the raisins.
  • In a large measuring cup, combine the buttermilk and brown sugar, and stir into the dry ingredients. Stir in remaining cereal, then the softened bran mixture.
  • When you're ready to bake, preheat the oven to 375°F for 15 minutes. Line a muffin tin with papers, and spray the insides of the papers. Or just grease the muffin cups themselves, if you like a crustier muffin edge.
  • Stir the batter once or twice, then scoop a heaping 1/4-cup of batter into each prepared muffin cup.
  • Remove from the oven, cool in the pan on a rack for 10 minutes before removing the muffins from the pan.
