Pureed Vegetable Soups image

When we crave foods that are hearty and satisfying, pureed vegetable soups fit the bill on both counts. Pick your vegetable -- almost any will do -- and before you know it, you'll be dipping a spoon in a comforting, creamy bowlful that's surprisingly low in fat and calories.

2 tablespoons olive oil
1 onion, coarsely chopped
Coarse salt and ground pepper
Vegetable of choice, such as butternut squash (see below for quantities and other options)
1 can (14.5 ounces) reduced-sodium chicken broth
1 to 3 teaspoons fresh lemon juice

Steps:

  • In a large Dutch oven or pot, heat oil over medium. Add onion. Season with salt; cook, stirring occasionally, until softened, 5 to 7 minutes.
  • Add vegetable, broth, and enough water (4 to 5 cups) to cover. Bring to a boil; reduce heat to medium, and simmer until vegetable is tender, about 20 minutes.
  • Working in batches, puree brothand vegetables in a blender untilsmooth, transferring to a clean potas you work. To prevent spattering, fill blender only halfway, and allow heat to escape: Remove cap from hole in lid, and cover lid firmly with a dish towel. Adjust soups consistency with a little water if necessary. Season with salt, pepper, and lemon juice to taste.

The vegetable scraps from our spiralizer turn into a lovely, simple pureed vegetable soup. Simmer until soft, then use an immersion blender right in the pot.

6 cups various chopped vegetables
8 cups low-sodium vegetable broth , or chicken broth
Salt, to taste
Freshly ground black pepper, to taste
Optional: 1/2 cup heavy cream
Garnish: Sriracha, to taste

Steps:

  • Gather the ingredients.
  • In a large pot, combine the vegetables and broth. Bring to a simmer over high heat, reduce the heat, and simmer partially covered, until all of the vegetables are very tender.
  • Using an immersion blender, puree the soup until smooth, seasoning with salt and pepper.
  • Stir in the cream if desired, and serve hot in bowls, garnished with a tad of Sriracha, if desired.

Purely vegatable soup image

This is a low calorie, low fat, belly filling soup that is so flavorful -especially if made the day before. , you can change out the vegetables depending on your preferences and the season. Now that the kids are grown and gone, I still make a large pot of this soup and then freeze a good portion. I love to heat a portion in the morning, place in a thermos and take to work for lunch. It is the perfect thing to keep me away from the cafeteria food and vending machines.

Number Of Ingredients 9

1/2 small cabbage sliced
1 pound(s) green beans , washed and cut into 2" pieces
5 - carrots - sliced 1/2"
1 - onion, course chopped
3 clove(s) garlic , minced
1 can(s) diced tomatoes
32 ounce(s) vegatable broth
- salt, pepper, thyme and other spices you prefer
- you can add any other veggies you prefer-

Steps:

  • Put all ingredients into a large pot. Be sure that liquid is almost to the top of the veggies. If not, add some water. You don't want to cover your veggies with the liquid because the cabbage will cook down quite a bit. You don't wantto have more broth then veggies. Bring to a low simmer. Simmer for about 30 minutes then check to see if veggies are tender.
  • Bring to a low simmer and cook for about 30 minutes. Check to see if veggies are tender - if not, continue to cook and check every 10 minutes or so. The cook times will vary depending on the type of veggies you use and the cut size of the pieces.

This is pretty close to what my mom used to make. I've always thought of it as healthy and filling. There is no meat and very little fat in this recipe. I created this recipe on a cold and rainy winter day on which it definitely hit the spot.

2 cups chopped baby carrots
2 baking potatoes, cut into cubes
1 small sweet onion, chopped
2 stalks celery, chopped
1 (14 ounce) can great Northern beans, rinsed and drained
½ small head cabbage, chopped
1 (14 ounce) can diced tomatoes
2 cups cut fresh green beans (1/2 inch pieces)
1 (32 ounce) carton chicken broth
2 (14 ounce) cans vegetable stock
2 cups water
1 ½ teaspoons dried basil
1 pinch rubbed sage
1 pinch dried thyme leaves
salt to taste

Steps:

  • Combine the baby carrots, potatoes, onion, celery, beans, cabbage, tomatoes, green beans, chicken broth, vegetable stock, water, basil, sage, thyme, and salt in a large pot; bring to a boil. Reduce heat to low; cover. Simmer until vegetables are tender, about 90 minutes.
