PULAU NEPALESE BASMATI RICE DISH
This is an amazing rice side dish with complex flavors, but simple prep! It has a sweet and salty element to it and the spices will make your kitchen SING! Originally made for a Girl Scout function, but EVERYONE loved it and it is now a family favorite! (Found on a Nepali website.) Also re-heats easily. The golden raisins add the most delicious bit of sweet to the rice!

Steps:
- Wash the rice several times and let it soak for 30 minutes.
- Drain the rice well in a sieve.
- Heat the oil in a skillet over medium-low heat and cook onion until soft.
- Add all ingredients & spices, (except salt) to the pan and stir fry for 2 minutes over medium heat.
- Add 2 cups of water to the pan with salt and bring to a boil then cover tightly and.
- turn the heat to low.
- Simmer for 20 minutes, adding additional water during cooking, if necessary, until rice is tender and fluffy and all the water is absorbed.
- Remove bay leaf, cloves and cinnamon sticks before serving.
EASY KABLI -- SPICED BASMATI RICE WITH CARROTS AND RAISINS
This is my easy adaptation of an Afgani rice dish recipe. It has a hint of sweetness to complement the savory flavors. A big hit for our whole family, and a tasty way to dress up rice!

Steps:
- Set raisins to soak in water for 15-30 minutes. If time allows, drain this water off and use it to cook the rice. Otherwise, discard soaking water. This will make the raisins plump and juicy in the dish.
- Bring water to boil in a small to medium pot. Add margarine, rice, and the five dry spices to the water. Stir. Cover. Reduce heat to very low. Simmer rice for 15 minutes, then remove from heat and let sit another 5 minutes. These cooking times are given by my brand of rice. Adjust if needed for your brand.
- While rice is cooking, peel carrots, then shred, or shave into short strips with a vegetable peeler. Feed carrot stubs to hungry kids, if applicable.
- When cooked rice is standing by, heat oil in a small skillet on medium high heat. Add sugar and stir until it dissolves. Add carrot shavings and drained, soaked raisins to the skillet. Saute and stir until carrots wilt a bit. Remove from heat.
- Fluff rice with a spoon or fork and garnish with carrot and raisin mixture. Enjoy!

TRADITIONAL BAHRAINI MUHAMMAR - SWEET RICE DISH
This is one of the most famous Bahraini dishes. It is a sweet rice dish which is typically served with fish. I just wanted to add: this recipe calls for 6 cloves, HOWEVER, I think it REALLY ONLY NEEDS 2 cloves!

Steps:
- Soak together saffron, cardamom, cloves, and rosewater; leave aside to steep.
- Add rice to 6 cups of lightly salted boiling water: boil to half cooked - about 8 minutes; drain.
- Stir sugar through the hot rice.
- Heat the ghee or butter in the same pan the rice was boiled and add the sweetened rice. Sprinkle the rose water mix on top.
- Cover the rim of pan with a cloth or paper towels and place lid on tightly.
- Cook over very low heat about 20-25 minutes. Transfer to serving platter.
- Top with melted butter.
ROYAL RICE DISH
This is a tasty and easy side dish for those who aren't in the mood for potatoes. Beef Consomme should be used, since beef broth will not give the flavor needed for this dish. Since consomme and boullion cubes have a high salt content, I don't add salt. After dish is done, add salt if you think it needs it. The cooking time may seem long, but by simmering it this long, flavors intensify.

Steps:
- Brown ground beef in large frying pan and drain.
- Add onion, green pepper, garlic salt and pepper and cook until onion is soft.
- Stir in tomatoes, corn, taco seasoning, sugar, chili powder, water and rice and cover.
- Simmer for about 20 minutes, until the rice is cooked and the liquid is all absorbed.
- We like to serve it into bowls, sprinkle the cheese on the top and eat it with the corn chips.
- Add sour cream if you like!

Steps:
- Combine rice and broth in saucepan and bring to boil.
- Reduce heat to low, cover and simmer until rice is tender and broth absorbed, about 20 minutes.
- In a medium skillet, melt butter over medium-high heat and add onions and sugar.
- Saute until butter is absorbed and onion is translucent and soft.
- Lower heat and cook onions for another 15 minutes or until they are caramelised.
- Stir in cranberries and mushrooms.
- Cover skillet and cook for 10 minutes until cranberries soften and swell.
- Stir in nuts and orange zest, then fold into the cooked rice.
- Add salt to taste.
