Easy Puffed Wheat Cake image

This recipe has been around longer than I have. It is one of those recipes that I never mess up. I make this for school lunches and press into muffin tins for perfect lunch-size pieces. It never lasts long in our house.

8 cups puffed wheat cereal
⅓ cup butter
1 cup packed brown sugar
½ cup corn syrup
2 tablespoons cocoa powder
1 teaspoon vanilla extract

Steps:

  • Pour cereal into a large bowl.
  • Melt butter in a saucepan over medium-low heat. Stir brown sugar, corn syrup, cocoa powder, and vanilla extract into melted butter; cook until mixture begins to bubble, 5 to 10 minutes. Remove saucepan from heat, pour butter mixture over cereal, and stir to until cereal is coated. Spoon and press cereal mixture into muffin cups or a 9x13-inch casserole dish.

This Chocolate Puffed Wheat Square is a classic dessert recipe made with whole grain puffed wheat and a sticky chocolate sauce.

9 cups plain puffed wheat cereal ((not the sugar-coated variety))
2/3 cup unsalted butter
1 cup brown sugar (packed)
2/3 cup dark corn syrup
1/2 cup cocoa powder
1/2 teaspoon vanilla extract
a pinch of sea salt

Steps:

  • Measure the puffed wheat cereal into a large bowl and set aside.
  • Grease a 9-inch by 13-inch rectangular baking pan and line it with parchment paper (if desired).
  • In a medium pan on the stove, over medium-low heat, add the butter, brown sugar, corn syrup, cocoa powder, vanilla and salt.
  • Using a whisk, gently stir the mixture together as everything melts and comes to a soft boil.
  • Remove the pan from the heat and pour the mixture over the puffed wheat cereal. Stir everything together very well with a spatula.
  • Press the mixture into the prepared pan and place in the fridge for about 1 hour.
  • Slice and serve, or store in an airtight container at room temperature until ready to serve.

I used to make a batch of these every two days for my cafe. They were extremely popular and always sold out. A delicious and light chocolate square that packs well in lunches. I like to make for Halloween treats by simply scattering Reese's pieces over the top and pushing into top of square while still warm in pan. Enjoy!

12 cups puffed wheat cereal
10 marshmallows
1 cup packed brown sugar
½ cup corn syrup
6 tablespoons unsweetened cocoa powder
⅓ cup butter
1 teaspoon vanilla extract

Steps:

  • Grease a large bowl and a 9x13-inch baking dish.
  • Place cereal in the prepared bowl.
  • Combine marshmallows, brown sugar, corn syrup, cocoa powder, and butter in a small saucepan; cook and stir over medium-low heat until smooth and bubbling. Remove saucepan from heat and stir in vanilla extract.
  • Pour chocolate mixture over cereal and stir until evenly coated. Press cereal mixture into the prepared baking dish and cool for 10 minutes. Turn cereal mixture onto a work surface and cut into 12 or 24 squares using a serrated knife. Individually wrap squares in plastic wrap or store in an airtight container.

I couldn't believe this quick snack was not a part of Recipezaar yet!! I grew up loving this and now my kids enjoy it too. I like to vary the sprinkles to match the season. Wilton has some awesome festive sprinkles that I like to use. Adding the cocoa will produce a chocolate flavour and omitting it will give a caramel flavour.Cook and prep time doesn't include cool time.

1/4 cup butter or 1/4 cup margarine
3/4 cup corn syrup
1 cup brown sugar
1 teaspoon vanilla
1 teaspoon cocoa (optional)
8 cups puffed wheat cereal
candy sprinkles

Steps:

  • Measure puffed wheat into a large bowl.
  • Melt butter in a saucepan.
  • Add syrup, sugar, cocoa.
  • When mixture begins to boil, boil for 3 minutes and then remove from heat.
  • Add vanilla.
  • Pour over puffed wheat and mix well.
  • Press into a 9X12 inch cake pan.
  • scatter sprinkles while still warm and pat down to be sure they will stick.
  • Cool completely.

  • Melt butter in saucepan. Add syrup, sugar, cocoa, marshmallows and vanilla. When mixture begins to bubble, remove from heat; add puffed wheat and mix well. Put in a buttered 9 x 12-inch pan. Press down with spoon. Cut in squares.
