SIMPLE LOBSTER TARTARE



Simple Lobster Tartare image

Yield 4 servings

Number Of Ingredients 17

2 pounds lobster (cooked for four minutes)
8 asparagus spears, trimmed
1/2 cucumber, halved lengthwise and de-seeded
Freshly ground black pepper
2 cups olive oil
Juice of 1 lime
Good handful of chopped mixed herbs, such as basil, tarragon or lemon balm
1 hand of garlic, halved
2 egg yolks*
1 tablespoon white wine vinegar
1 teaspoon grainy mustard
5 anchovy fillets in oil, drained and coarsely chopped
5 basil leaves, chopped
3/4 cup olive oil
1 tablespoon hot water
4 large sprigs of chervil

Steps:

  • Two days before serving: Cook lobster. Crack shells and claws. Mix together all the marinade ingredients in a separate jug or bowl and pour over the lobster. Leave in the refrigerator overnight.
  • Next day: Cook the asparagus in boiling, salted water until just tender. Refresh in cold water and drain. Then cut it into 1/2-inch dice and reserve. Chop the cucumber into pieces the same size as the asparagus. Make the anchovy mayonnaise: put all the ingredients except the olive oil and hot water in a blender or food processor and whisk together. Add the olive oil; drop by drop, continuing to blend and gradually increasing the addition of the oil to a trickle. Then add the hot water until you have a thick, smooth mayonnaise (it is important to add the oil slowly and steadily in this way, rather than all at once, or you may run the risk of the mixture curdling). Season with pepper to taste. Reserve.
  • Just before serving, assemble the Tartare: Remove the lobster from the marinade, cut it into cubes of a similar size to the asparagus and cucumber and combine all three together in a bowl. Add the anchovy mayonnaise and season with pepper (the anchovies will probably make the mixture salty enough). Mix thoroughly. To serve, either pile the mixture into shallow bowls or plates of for a neater presentation, place a 2 1/2-inch diameter pastry cutter in the center of each bowl or plate. Pack each ring with the lobster and asparagus mixture, pressing down as you do so. Neaten off the top, then carefully lift off the pastry rings. Garnish each serving of tartare with a good sprig of chervil and serve with the bread.

2 pounds filet mignon, diced*
1/2 small red onion, finely diced
2 tablespoons capers, drained
1 tablespoon chopped fresh parsley
1 tablespoon Dijon mustard
2 tablespoons olive oil
2 teaspoons Worcestershire sauce
2 teaspoons hot sauce (recommended: Tabasco)
1 large egg yolk
Kosher salt and freshly ground black pepper
Grilled country bread, for serving

Steps:

  • Place the filet mignon in the bowl of a food processor and pulse just until ground. Transfer to a chilled bowl. Mix in the onions, capers, parsley, Dijon, oil, Worcestershire, hot sauce and egg. Season with salt and pepper. Serve immediately with grilled country bread.

2 anchovy fillets
2 cloves of crushed garlic, peeled
1 teaspoon capers
1 egg
2 tablespoons Dijon mustard
Salt
Freshly ground black pepper
1/4 cup olive oil
1 pound freshly ground beef tenderloin
1/4 cup minced shallots
4 tablespoons chopped egg whites
4 tablespoons chopped egg yolks
4 tablespoons brunoise red onions
4 tablespoons finely chopped fresh parsley leaves
8 slices of white bread, crust removed, tossed in olive oil, seasoned with salt and pepper and toasted

Steps:

  • In a small wooden mixing bowl, combine the anchovy, capers and garlic. Using the back of a fork, crush the two and form a paste. Add the egg and mustard. Whisk well. Season with salt, pepper and Worcestershire sauce. Whisk in the oil, to form an emulsion. In a cold mixing bowl, combine the tenderloin and shallots. Season with salt and pepper. Add the emulsion and mix well. Form the tartare into 4 ounce rounds, about 1-inch thick. Place in the center of four cold plates. Garnish each with traditional garnishes. Serve with toast points.

1 pound well-trimmed boneless beef short ribs
3 tablespoons all-purpose flour
1/2 teaspoon pepper
2 tablespoons olive oil
1 medium onion, coarsely chopped
4 garlic cloves, minced
1-1/2 cups beef stock, divided
1/4 cup Sriracha chili sauce
3 tablespoons ketchup
2 tablespoons Worcestershire sauce
1 tablespoon packed brown sugar
3 cups frozen french-fried potatoes (about 11 ounces)
1 cup cheese curds or 4 ounces white cheddar cheese, broken into small chunks

Steps:

  • Toss short ribs with flour and pepper, shaking off excess; reserve remaining flour mixture. In a large skillet, heat oil over medium-high heat; brown ribs on all sides. Transfer to a 3-qt. slow cooker, reserving drippings. , In same skillet, saute onion in drippings over medium heat until tender, 2-3 minutes. Add garlic; cook and stir 1 minute. Stir in 1 cup stock; bring to a boil, stirring to loosen browned bits from pan., In a small bowl, whisk reserved flour mixture, chili sauce, ketchup, Worcestershire sauce, brown sugar and remaining stock until smooth; stir into onion mixture. Pour over ribs., Cook, covered, on low until ribs are tender, 6-8 hours. Remove ribs; shred with 2 forks and keep warm. Skim fat from onion mixture; puree using an immersion blender. (Or cool slightly and puree in a blender; return to slow cooker to heat through.), Cook potatoes according to package directions. Serve beef over potatoes; top with gravy and cheese curds.
