CLASSIC FONDUE

Number Of Ingredients 13

8 ounces raclette or Swiss cheese, grated
8 ounces Gruyere cheese, grated
2 tablespoons cornstarch
1 cup sauvignon blanc or other dry white wine
1 clove garlic, pressed
Zest of 1 lemon
1 tablespoon kirsch
1/2 teaspoon freshly ground black pepper
1/4 teaspoon dry mustard
Crusty Bread, recipe follows, for serving
2 Granny Smith apples, sliced, for serving
2 pears, sliced, for serving
1 loaf crusty bread

Steps:

  • Combine the raclette and Gruyere in a bowl and add the cornstarch. Toss well to coat the cheeses in the cornstarch; set aside.
  • In a pot over medium heat, warm the wine, garlic and lemon zest. Do not allow this to come to a boil or the fondue may be grainy in the end.
  • Slowly add the cheese mix a handful at a time, stirring and allowing each handful to melt completely before adding the next. Repeat until all the cheese is in the pot. Once completely smooth, stir in the kirsch, pepper and mustard. Pour the mixture into a fondue pot with a burner underneath to keep warm. Serve with Crusty Bread, apples and pears.
  • Preheat the oven to 350 degrees F.
  • Put the loaf of bread on a baking sheet and bake for 15 minutes to crisp. Allow to cool, then tear into chunks for serving. Set aside.

3/4 cup beer
2 cups shredded cheddar cheese
2 teaspoons prepared mustard
1 teaspoon Worcestershire sauce

Steps:

  • Add the soup and beer to a saucepan; bring mixture to a boil over medium heat; stir continuously.
  • Gradually add shredded cheese, mustard, and Worcestershire sauce; stir continuously until cheese melts.
  • Transfer to a fondue pot or chafing dish.
  • Serve with chunks of crusty bread.

Cook this gooey beer-spiked cheese dip on the stove before transferring it to a ceramic fondue pot. Serve with cubes of bread or steamed vegetables such as cauliflower, Brussels sprouts or potato.

1 bottle (12 oz/341 mL) dark ale or beer
1/2 tsp dry mustard
1/2 tsp chicken bouillon mix
1/8 tsp garlic powder
1/8 tsp cayenne pepper
1/8 tsp nutmeg
2 tbsp cold water
2 tbsp cornstarch
2 cups shredded cheddar cheese
1 cup cubed Velveeta cheese

Steps:

  • Combine beer, mustard, chicken bouillon, garlic powder, cayenne and nutmeg in a large saucepan. Bring to a boil over medium heat.
  • Whisk together cold water and cornstarch until blended; stir into ale mixture.
  • Cook until thickened and bubbly, about 2 minutes. Reduce heat to low.
  • Gradually add cheddar cheese and Velveeta cheese, stirring until melted.
  • Transfer to a ceramic fondue pot. Serve warm with assorted steamed vegetables, french bread cubes or bread sticks.

1 loaf (1 pound) French bread, cubed
1/4 cup chopped onion
1 tablespoon butter
1 teaspoon minced garlic
1 cup beer or nonalcoholic beer
4 cups shredded cheddar cheese
1 tablespoon all-purpose flour
2 to 4 tablespoons half-and-half cream

Steps:

  • Place bread cubes in a single layer in an ungreased 15x10x1-in. baking pan. Bake at 450° for 5-7 minutes or until lightly crisp, stirring twice., Meanwhile, in a small saucepan, saute onion in butter until tender. Add garlic; cook 1 minute longer. Stir in beer. Bring to a boil; reduce heat to medium-low. Toss cheese and flour; stir into saucepan until melted. Stir in 2 tablespoons cream., Transfer to a small fondue pot or 1-1/2-qt. slow cooker. Keep warm; add additional cream if fondue thickens. Serve with toasted bread cubes.

8 ounces shredded sharp Cheddar cheese
8 ounces shredded Swiss cheese
2 tablespoons all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
1 clove garlic, halved
1 (12 fluid ounce) can or bottle beer
1 dash hot pepper sauce (such as Tabasco®)

Steps:

  • Combine Cheddar cheese, Swiss cheese, flour, salt, and black pepper in a bowl.
  • Rub cut side of garlic clove around bottom and sides of fondue pot.
  • Pour beer into fondue pot and slowly bring to a simmer over medium-low heat, about 5 minutes.
  • Gradually stir cheese mixture into beer, adding small amounts at a time, until cheese is melted and blended, 10 to 15 minutes.
  • Stir hot pepper sauce into cheese mixture.

  • After the beer has simmered for a minute or two, add the heavy cream, stir and simmer for another couple of minutes.
