PROTEIN POWER EGGS WITH MUSHROOMS AND KALE



Protein Power Eggs with Mushrooms and Kale image

This protein power-packed breakfast is fairly easy to prepare and great for anyone on a healthy-eating, high-protein low-carb diet. You can sub just about any veg, like spinach, onion, tomato, etc.

1 tablespoon extra-virgin olive oil
1 cup chopped kale leaves
½ cup sliced mushrooms
¼ teaspoon salt
¼ teaspoon ground black pepper
2 eggs
2 egg whites
1 tablespoon milk
cooking spray
1 stick low-fat string cheese, sliced on a bias into 1/8-inch pieces
1 tablespoon Sriracha hot sauce
1 sprig fresh parsley

Steps:

  • Heat olive oil in a skillet over medium heat; cook and stir kale, mushrooms, salt, and pepper until until mushrooms are tender, 5 to 10 minutes.
  • Whisk eggs, egg whites, and milk together in a bowl until frothy.
  • Spray a non-stick skillet with cooking spray and place over medium heat; cook and stir egg mixture until cooked through, about 5 minutes. Transfer eggs to a plate and top with string cheese and kale mixture. Garnish eggs with Sriracha and parsley.

  • No. 2 | Heat a frying pan on medium-high. Pour in olive oil, then add the mushrooms and sauté for 3 minutes, stirring often. Add the kale, season with salt and pepper, and continue to cooking, stirring occasionally, until tender, about 3 more minutes. Transfer the vegetables to a bowl to cool.
  • No. 3 | To the bowl of vegetables, add 1/3 cup of feta and the cream. Season with salt and pepper, and stir to combine.
  • No. 4 | Grease the inside of the mason jars with a light layer of butter. Spoon one-eighth of the vegetables and cream into the base of each jar, then crack an egg directly on top. Spoon remaining vegetables and cream on top, then sprinkle each with 1 tablespoon of feta cheese.
