RASPBERRY PROSECCO COCKTAIL

1 tablespoon Raspberry Syrup, recipe follows
1 tablespoon fresh lemon juice
Chilled prosecco, for serving
1 cup sugar
2 tablespoons fresh lemon juice
2 pints raspberries

Steps:

  • Add the Raspberry Syrup and lemon juice to the bottom of a champagne flute. Fill the glass with prosecco.
  • Place the sugar and 2 cups water in a medium saucepan over medium heat. Bring to a simmer, stirring occasionally, until the sugar is dissolved, 3 to 4 minutes. Add the lemon juice and raspberries and simmer, stirring occasionally, until the raspberries have broken down, about 10 minutes. Pour the mixture through a strainer and return to the pot. Simmer over medium heat until the syrup has thickened, about 10 minutes more. Let cool completely, then pour into an airtight container and store in the refrigerator for up 2 weeks.

Four 1/4-ounce packets gelatin
1 1/4 cups sugar
2 1/2 cups prosecco
1 cup club soda
3 tablespoons black raspberry liqueur
One 6-ounce container raspberries, plus additional raspberries for serving, optional

Steps:

  • Pour 2 cups water into a small saucepan and sprinkle the gelatin over the top. Let sit until the gelatin has absorbed liquid, about 1 minute. Bring to a boil over medium heat, stirring often with a wooden spoon to fully dissolve the gelatin. Pour the mixture into a bowl and add the sugar, stirring until dissolved. Let cool until just warm to the touch. Then add the prosecco, club soda and raspberry liqueur; stir until combined. Ladle 2 cups of the liquid into a Bundt pan. Sprinkle with the raspberries and refrigerate until pretty much set, 1 hour.
  • Once the first layer is set, pour the remaining liquid over the top. Refrigerate for another 3 hours, until fully set.
  • To unmold, dip the Bundt pan in a small amount of warm water for a few seconds, then cover the pan with a plate and invert so the mold releases onto the plate.
  • Serve with more raspberries if desired.

1 1/2 cups frozen cranberries
1 cup tequila blanco
2/3 cup fresh lime juice (from about 6 limes), plus 4 lime slices, for serving
6 tablespoons orange-flavored liqueur, such as triple sec
3 tablespoons unsweetened coconut milk
3 tablespoons superfine sugar
1/2 cup light corn syrup
2 tablespoons extra-fine shredded unsweetened coconut
Kosher salt

Steps:

  • Divide the cranberries among the sections of a standard (12-cube) ice cube tray. Fill the tray sections with water and freeze until frozen, at least 4 hours and up to overnight.
  • Add 1/2 cup of the tequila, 1/3 cup of the lime juice, 3 tablespoons of the orange liqueur, 1 1/2 tablespoons of the coconut milk and 1 tablespoon of the superfine sugar to a large cocktail shaker. Fill with plain ice cubes and shake vigorously until well mixed and very cold.
  • Pour the corn syrup onto a small shallow plate. Mix 1 tablespoon of the superfine sugar with the shredded coconut and 1 tablespoon salt on another shallow plate. Dip the rim of a margarita (or other wide-mouth) glass in the corn syrup, then dip the rim in the sugar mixture until well coated. Repeat with 3 more glasses. Pour the shaken margarita mixture into 2 of the prepared glasses. Add 3 of the cranberry ice cubes to each and garnish with a single lime slice.
  • Repeat with the remaining cocktail ingredients, dividing it between the remaining 2 prepared glasses and adding 3 cranberry ice cubes and a lime slice to each.

CAMPFIRE RASPBERRY LEMONADE COCKTAILS

Not only is this refreshing cocktail simple to serve up at a campsite, but the lemonade ice cubes also double as an ice pack in your cooler.

1 bunch fresh basil, leaves and stems
2 cups fresh squeezed lemon juice (from about 11 lemons)
1 bag frozen raspberries
Vodka, for serving, optional

Steps:

  • Boil the sugar with 1/2 cup water in a small saucepan over medium-high heat until the sugar dissolves, about 5 minutes. Add the basil to the syrup and let sit for 5 minutes.
  • Strain the basil syrup into a small pitcher and discard the basil. Whisk the lemon juice into basil syrup. Pour the mixture into 3 ice cube trays and freeze until solid, about 4 hours.
  • Pop the lemonade ice cubes into a large re-sealable plastic bag (freeze for up to 1 week).
  • When ready to serve, add the lemonade ice cubes, frozen raspberries and water to a tall pitcher. Stir until evenly mixed. Top with vodka, if using.
  • For camping: Pack the lemonade ice cubes and frozen raspberries in a cooler. Be sure to pack the remaining ingredients and a tall pitcher.

1 (6-ounce) package raspberry-flavored gelatin
1 cup boiling water
2 cups Prosecco or other sparkling wine, chilled
1 1/2 cups frozen raspberries, not thawed
1/3 cup mascarpone cheese, room temperature
1/2 cup walnuts, toasted and chopped

Steps:

  • Whisk the gelatin and boiling water in a medium bowl until the gelatin is dissolved, about 2 minutes. Refrigerate until lukewarm, about 25 minutes. Stir in the Prosecco. Cover and refrigerate until the gelatin thickens but does not set, stirring occasionally, about 1 hour. Stir in the raspberries (bubbles will form in the gelatin mixture). Divide the gelatin among 6 Champagne flutes or individual dessert bowls. Cover and refrigerate until the gelatin is set, at least 2 hours and up to 2 days.
  • Dollop the mascarpone cheese atop each serving, then sprinkle the walnuts over and serve.
