Caramelized Persimmons with Prosciutto image

Give persimmons the creme brulee treatment with a touch of sugar and the kitchen torch, then top with prosciutto for a lovely fall appetizer.

12 thin Fuyu persimmon slices
3 tablespoons sugar, preferably turbinado
12 prosciutto slices

Steps:

  • Lay persimmon slices on a baking sheet; sprinkle with sugar. Caramelize with a kitchen torch (or broil). Drape each with a slice of prosciutto.

2 ripe Fuyu persimmons
Kosher salt and freshly ground pepper
8 thin slices prosciutto (about 2 1/2 ounces), cut in half crosswise
16 small fresh basil leaves
1 1/2 ounces aged provolone, cut into 16 small pieces
Extra-virgin olive oil, for drizzling
White balsamic vinegar, for drizzling

Steps:

  • Trim the stem end of the persimmons, then slice each into 8 wedges. Season with salt and pepper.
  • Lay out a piece of prosciutto. Top with a persimmon wedge, basil leaf and piece of provolone; roll up. Repeat with the remaining ingredients. Arrange on a platter; drizzle with olive oil and vinegar and season with pepper.

Adding chopped dried figs to tapenade lends a fruity note that contrasts with the briny Kalamata olives in this thick, garlic-spiked spread. Here, it's served alongside silky slices of prosciutto and juicy persimmon to echo and round out those sweet-salty flavors. If you're starting with soft, plump dried figs, you don't need to soak them first. Just chop them up and add to the food processor with the olives. Leftover tapenade will keep for at least a week or two in the fridge, and makes a terrific condiment for sandwiches, or serve it with roasted chicken or meats.

1/2 cup dried figs, stems trimmed
1/2 cup pitted Kalamata olives
2 anchovy fillets
1 teaspoon fresh lemon juice, more to taste
1 small garlic clove, coarsely chopped
3/4 teaspoon minced fresh rosemary
1/4 cup extra-virgin olive oil, more if needed
Prosciutto, for serving
Persimmon wedges, for serving
Toasted country bread, crackers or breadsticks, for serving

Steps:

  • Place figs in a bowl and cover with boiling water. Let sit until soft and pliable, 5 to 10 minutes, then drain and coarsely chop.
  • In a food processor, combine chopped figs, olives, anchovies, lemon juice, garlic and rosemary. With the motor running, slowly drizzle in olive oil, and process until mixture becomes a paste, 1 to 3 minutes, scraping down the sides once or twice. Taste and add more lemon juice and olive oil if you like.
  • Spoon tapenade into a bowl or crock and serve alongside thinly sliced prosciutto, persimmon wedges and bread, crackers or breadsticks.

1 ounce thin-sliced prosciutto, preferably imported

Steps:

  • Peel persimmon and remove leafy top. Cut into 12 wedges.
  • Cut prosciutto into 12 strips, each about an inch wide. Wrap persimmon wedges with prosciutto and secure with toothpicks.

3 ounces thinly sliced prosciutto
1/3 cup pecans (1 1/2 ounces)
1/4 cup fresh lime juice (from about 2 limes)
1 tablespoon Dijon mustard
1 tablespoon finely chopped shallot
1 teaspoon honey
1 small garlic clove, finely grated
Kosher salt
Freshly ground black pepper
1/2 cup extra-virgin olive oil
1 1/2 pounds Tuscan kale (about 2 large bunches), stemmed, leaves thinly sliced
2 Fuyu persimmons, peeled, halved lengthwise, thinly sliced
3 ounces firm, creamy feta cheese, such as Bulgarian, crumbled (about 3/4 cup)
1 cup loosely packed mint leaves, thinly sliced, plus more for serving

Steps:

  • Heat oven to 350°F. Lay out prosciutto slices on a rimmed baking sheet. Bake until almost crisp, 16-18 minutes. Transfer to wire rack and let cool completely on baking sheet (prosciutto will continue to crisp as it cools). Crumble and set aside.
  • Meanwhile, spread pecans on a rimmed baking sheet and toast in oven, tossing once or twice, until fragrant, 8-10 minutes. Let cool, then coarsely chop. Set aside.
  • Whisk lime juice, mustard, shallot, honey, garlic, 1 tsp. salt, and 1/4 tsp. pepper in a medium bowl, then whisk in oil in a slow, steady stream. Set aside.
  • In a large mixing bowl, combine kale with about 3/4 of the dressing and use your hands to massage dressing into kale. Add more dressing as needed (you may not need all of it). Reserve any leftover dressing for another use.
  • Add half of the persimmons, feta, mint, and prosciutto, toss together to combine, and season with salt and pepper to taste. Transfer to a serving bowl, and top with pecans and remaining persimmons, feta, mint, and prosciutto.
  • Do ahead
  • Dressing can be prepared 3 days ahead; cover and chill. Nuts can be toasted and chopped 1 day ahead; cover and keep at room temperature. Kale can be sliced 1 day ahead; place in an airtight container and chill. Salad can be tossed together 30 minutes ahead; keep at room temperature.

  • In a small bowl, combine the rosemary, 1 teaspoon of the thyme, garlic and the 1 tablespoon of oil. Set aside.
  • Slice about ½ inch off the stem end of each persimmon, and about ¼ inch off the bottoms, and peel them. Cut two of them into rounds, as thinly as possible. Set aside. Then cut the third one into approximately ½ inch wedges and set it aside (separate from the rounds).
  • Working on a clean, dry surface, use a boning knife to trim the pork of any excess fat. Next, butterfly it in a roll cut. To do this, cutting lengthwise, slice about ½ inch from the edge, starting to cut down at a 45 degree angle. When the knife is about ½ inch from the bottom of the tenderloin, angle it parallel to your work surface and continue to slice, gently pulling the pork back as you go. You’ll end up with a somewhat flat piece that’s about ½ inch thick. Now sprinkle it very lightly with water, and then place a large piece of plastic wrap on top. Use a smooth meat pounder or the bottom of your smallest sauté pan, to pound the pork until it’s as smooth and even as possible, if possible without thinning it. (It will tear if it's too thin.)
