This is a great go to recipe. It's easy and relatively inexpensive to make.

Steps:
- 1. Heat oven to 350 degrees. Combine all ingredientsin large bowl; mix lightly but thoroughly. Bake 50-55 minutes or until meatloaf is to medium doneness. (Beef 160 degrees, Turkey 170).
- 2. Twenty minutes before the meatloaf is done, drain off grease and liquid. Cover the meatloaf with 1/2 cup of the grated onion. Mix the remaining sauce ingredients in a pan and heat slightly, do not boil. Brush on top of meatloaf. If you like more sauce you can always double the ingredients. Let stand 5 minutes before slicing.

- Combine all ingredients; mix well.
- Press firmly into ungreased 8x4x2 inch loaf pan.
- Bake for 1 hour in 350* oven.
- Let stand 5 minutes before slicing.
- For Hamburgers: Omit egg; reduce tomato juice to ½ cup. Shape into 8 patties.
- For Meatballs: Omit tomato juice and egg; add 2/3 cup milk. Shape into 16 meatballs. Brown in large skillet in small amount of oil. Drain. Combine 1 - 12oz can tomato paste, 1 cup water, 1 ½ tsp oregano leaves and 1 tsp salt. Add to meatballs; simmer 30 minutes. 8 servings.

OUR FAVORITE MEATLOAF
This ultimate meatloaf recipe took rounds and rounds of testing to get just right. Our final version incorporates an ideal blend of seasoned ground beef and pork, aromatics, and breadcrumbs and bakes in a freeform loaf on a baking sheet instead of in a loaf pan for maximum browning. The result is a loaf that is savory, tender, and juicy, yet holds together well when sliced.

Steps:
- Position rack in center of oven; preheat to 350°F. Line a rimmed baking sheet or 13x9" shallow baking dish with foil. Soak breadcrumbs in milk in a large bowl until ready to use.
- Pulse onion, celery, and garlic in a food processor until finely chopped. (Alternatively, you can finely chop by hand.)
- Heat oil in a large skillet over medium. Add onion mixture, 1 tsp. salt, and 1/2 tsp. pepper. Cook, stirring occasionally, until softened, 5-7 minutes. Remove from heat, stir in Worcestershire, and scrape into bowl with breadcrumb mixture. Add beef, pork, eggs, 1/4 cup ketchup, and remaining 1 1/4 tsp. salt and 1 tsp. pepper, then mix with your hands to combine.
- Form meatloaf mixture into a long, well-packed, approximately 5"-wide loaf shape on prepared baking sheet. Brush top of loaf with 1/4 cup ketchup. Bake meatloaf until an instant-read thermometer inserted into the center registers 155°F, 60-75 minutes. Let rest 15 minutes before slicing. Serve with more ketchup alongside.

- Piquant Sauce: 3 Tbsp.
- brown sugar,1/4 c catsup, 1/4 tsp.
- nutmeg 1 tsp.
- dry mustard mix all together and spread over meatloaf before baking.

MY PRIZE WINNING MEATLOAF
It took my almost ten years of experimenting with different techniques and flavors before I got it just right. It won first place in last year's kentukcy state fair meatloaf and meatball contest.

- Mix all ingredients (except the last four) well and shape into a a loaf. Bake for 30 minutes on 400 degrees and then glaze with last four ingredients and bake 30 more and then slice and serve.
- Cook's tips-to soak up grease, place a couple of slices on the bottom of your pan before baking.For more flavor, make 1 hour before baking and chill in the fridge for flavors to fully marry together.
