Crisco® Butter No-Stick Cooking Spray
1 (18.25 oz.) box Pillsbury® Reduced Sugar Yellow Cake
1/3 stick Crisco® Butter Shortening Sticks or 1/3 cup Crisco® Butter Shortening
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/8 tsp. ground cloves
1 cup peeled and shredded Granny Smith apple (about 1 large)
1 cup chopped walnuts
1 large egg
1/2 cup Pillsbury® Reduced Sugar Vanilla Frosting
1/4 tsp. ground cinnamon

Steps:

  • HEAT oven to 375 degrees F. Spray cookie sheets with no-stick cooking spray.
  • COMBINE cake mix and shortening in a medium bowl with an electric mixer at medium speed until a coarse meal forms. Sprinkle spices over mixture. Add apple, walnuts and egg, mixing on low speed until a smooth dough forms. Drop tablespoonsfuls of dough 2 inches apart on prepared cookie sheets.
  • BAKE 11 to 13 minutes or until edges are light golden brown. Cool for 1 minute. Remove to cooling rack.
  • PLACE frosting and 1/4 teaspoon cinnamon into the corner of a 1-quart resealable food storage bag. Knead to combine. Seal bag. Microwave 5 seconds on HIGH (100% power). Snip small edge off bag corner. Squeeze bag to drizzle cooled cookies with frosting. Sprinkle with additional ground cinnamon.

1/2 cup butter, softened
2/3 cup white sugar
2/3 cup brown sugar, packed
1 egg
1/4 cup apple juice
2 1/4 cups flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon nutmeg
1 cup apple, peeled, and finely chopped (Granny Smith apples are best)
1 cup chopped walnuts
1/4 cup butter, softened
3 cups icing sugar
1 teaspoon vanilla
3 -4 tablespoons apple juice

Steps:

  • Set oven to 375 degrees F.
  • In a mixing bowl cream butter and both sugars together.
  • Beat in the egg and apple juice.
  • In a small bowl combine the dry ingredients.
  • Gradually add the dry ingredients to the creamed mixture; blend well.
  • Mix in the chopped apples and nuts.
  • Drop dough by heaping teaspoonfuls onto a greased cookie sheet about 2 inches apart.
  • Bake for 12-13 minutes, or until golden brown.
  • Place on wire rack to cool.
  • For frosting: Beat all frosting ingredients until smooth; frost cookies.

These were a happy accident! I didn't have enough carrots so I had to use shredded apple. They turned out delish. In between a cookie and a scone. Soft and cake like. Plus-your house will smell delightful!!

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon cinnamon
1 pinch of grated nutmeg
3/4 cup unsalted butter, at room temperature
2/3 cup granulated sugar
1/3 cup light brown sugar
1 egg
1/2 teaspoon vanilla extract
1 cup shredded carrot (about 3, peeled and trimmed)
1/2 cup apple, shredded (with or without peel. I used gala with peel, but whatever you have is fine)
1 cup dried cranberries
1/2 cup coarsely chopped pecans (optional)

Steps:

  • Position oven racks in the upper-middle and lower-middle positions and preheat the oven to 375 degrees F. Line two baking sheets with parchment paper or silicone baking mats.
  • Whisk together the flour, baking powder, salt, ginger, cinnamon, and nutmeg.
  • With a stand or hand mixer, beat the butter on medium speed until creamy and smooth. Add the sugars and beat until light and fluffy, about 2 minutes, then add the egg and beat for another minute. Reduce the mixer speed to low and beat in the vanilla. Continuing on low speed, add the flour mixture in 2 or 3 batches and beat only until they just disappear into the mix. The dough will be very thick, but don't overbeat to incorporate the flour. Using a rubber spatula, mix in the carrots, apples, cranberries and pecans.
  • Spoon about three heaping tablespoonfuls of dough (or use a large cookie scoop, which is what I did) onto the prepared baking sheets at a time, leaving about an inch of space between them. Using your fingers, every so slightly flatted the tops of the cookies.
  • Bake for 16 to 18 minutes, rotating the sheets from top to bottom and front to back at the midway point. The cookies should be light brown and only just firm on top. Carefully transfer the cookies to racks to cool to room temperature. Store in an airtight container at room temperature.

1/2 cup packed light brown sugar
1/4 cup pure maple syrup
1 teaspoon pure vanilla extract
1 large egg, at room temperature
1 1/2 cups all-purpose flour
1 tablespoon apple pie spice
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 to 2 small apples, cored and cut into thin rounds (about 1/8-inch thick)
1/4 cup gold sanding sugar or coarse sugar

Steps:

  • Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.
  • Place the butter and brown sugar in the bowl of a stand mixer fitted with the paddle attachment and beat until combined, about 2 minutes. Add the maple syrup, vanilla and egg. Beat on medium speed until homogenous, about 1 minute more.
  • Whisk together the flour, apple pie spice, baking soda and salt in a medium bowl. Pour half of the dry ingredients into the butter mixture and beat on low speed until combined. Repeat with the remaining dry ingredients until a loose, wet dough comes together. Allow the dough to rest for about 10 minutes in the refrigerator; it will thicken slightly as the flour becomes hydrated.
  • Using a 3-tablespoon size scoop, make large mounds of dough on the prepared baking sheets, leaving at least 3 inches of space between each cookie. Place an apple ring on top of each mound and press gently down to secure. Generously sprinkle each apple slice with sanding sugar.
  • Bake the cookies until deeply golden brown, about 15 minutes, rotating the tray halfway through the baking time. Allow the cookies to cool on the baking sheets for 5 minutes before moving to a wire rack.

1 cup apple (peeled and grated)
1 cup raisins or 1 cup dried cranberries
1 cup pecans
1/4 cup milk
icing
2 tablespoons butter
2 tablespoons brown sugar
3/4 cup powdered sugar
4 teaspoons milk

Steps:

  • Beat butter, sugar and egg well.
  • Add apple, milk, raisins and nuts.
  • Add all dry ingredients.
  • Drop onto greased sheets.
  • Bake 350° for 10 minutes or until done.
  • Cool and top with icing.
  • Icing: Melt butter and sugar in small pan.
  • Stir and bring to a boil over medium heat.
  • Simmer 2 minutes.
  • Remove heat add icing sugar and milk.
