HOUSE SALAD WITH CANDIED PECANS



House Salad with Candied Pecans image

A restaurant-worthy House Salad with greens, candied pecans, dried cranberries, blue cheese and mandarin oranges in a creamy homemade dressing -- and easy enough for any night of the week!

Number Of Ingredients 19

½ cup water
½ cup granulated sugar
2 ½ cups coarsely chopped pecans
Kosher salt, to taste
1 ½ cups mayonnaise
2 teaspoons sugar
1 teaspoon lemon juice
½ teaspoon kosher salt
¼ teaspoon freshly-ground black pepper
¼ teaspoon onion powder
¼ teaspoon garlic powder
3 tablespoons distilled white vinegar
1 teaspoon prepared yellow mustard
3 tablespoons olive oil
3 cups spring mix lettuce
¾ cup sweetened dried cranberries, such as Craisins
¾ cup crumbled blue cheese
¾ cup mandarin oranges, drained
⅓ cup candied pecans

Steps:

  • Preheat oven to 375° F. Line a baking sheet with parchment paper.
  • In a small saucepan on the stovetop, combine sugar and water. Bring to a boil, whisking to dissolve the sugar. Remove from the heat, stir in the pecans; toss to coat. Spread the nuts on a single layer on the prepared baking sheet. Toast in the oven for about 8-10 minutes, or until toasty. Keep a close eye on them so that they don't burn. While still warm, sprinkle the nuts with a little bit of kosher salt to taste. Set aside to cool completely. Once cool, you can store the candied nuts in an airtight container at room temperature for up to a month.
  • In a small bowl, whisk together the mayonnaise, sugar, lemon juice, kosher salt, black pepper, onion powder and garlic powder. Add the vinegar and mustard, whisk to combine.
  • Whisk in the oil, one tablespoon at a time, blending well after each addition. The mixture should be thick, but pourable. If it's too thick, gradually whisk in some water until it reaches the desired consistency. Store in an airtight jar in the refrigerator for up to 1 week.
  • Arrange the lettuce greens on individual salad plates or on a large serving platter. Top with candied pecans, blue cheese, cranberries and oranges. Just before serving, drizzle the dressing over the salad, to taste.

Perfection Salad image

A type of jellied coleslaw. Crisp cabbage, peppers and celery in a tangy from-scratch lemon jelly. Delicious served on a bed of lettuce with a dollop of good mayonnaise on the side.

Number Of Ingredients 12

2 TBS unflavoured powdered gelatin
120ml cold water (1/2 cup)
120ml boiling water (1/2 cup)
50g granulated sugar (1/4 cup)
120ml white or cider vinegar (1/2 cup)
2 TBS fresh lemon juice
1/2 tsp salt
1/4 tsp coarse black pepper
1 cup finely shredded white cabbage
1 cup finely chopped or sliced celery
2 TBS finely chopped red bell pepper
1 TBS finely chopped green bell pepper

Steps:

  • Sprinkle the gelatin over cold water in a bowl. Let it sit for about 5 minutes to soften. Whisk in the boiling water to dissolve along with the sugar, vinegar, lemon juice and salt. Stir until the gelatin and sugar have completely dissolved. Place in the refrigerator just until the mixture begins to thicken somewhat and becomes syrupy. (from 25 to 35 minutes.)
  • When the mixture has become like a thick syrup, stir in all of the vegetables and the black pepper. Taste and adjust the seasoning as desired. You may or may not need more salt.
  • Pour into a mold or a bowl. If the salad is to be served unmolded, rinse the mold first with cold water and put the mixture into the wet mold. A square baking dish can also be used and should also be rinsed and left wet. Chill in the refrigerator for several hours until set.
  • Serve either from the bowl, or unmold by dipping the mold quickly into hot water, loosening it round the rim with a sharp knife, covering it with a serving dish and then quickly in one fast motion, reversing so that the serving dish is on the bottom and the mold on the top. Give it a firm shake and then remove the mold.
  • If it doesn't unmold, either dip it again in hot water or wrap the mold for a minute in a dish towel that has been dipped in hot water an quickly wrung out and try again.
  • To serve in cubes, dip the baking dish quickly into hot water. Cut the cubes with a sharp knife, run the knife around the sides to loosen and then remove the cubes with a flexible spatula.

2 1/2 c broken pretzels
2 Tbsp sugar
3/4 c melted oleo
1-8oz pkg cream cheese, room temperature
1 c powdered sugar
1 1/2 c cool whip
1-6 oz pkg strawberry or cherry gelatin (sugar free is okay)

Steps:

  • 1. Combine pretzels, sugar and oleo. Spread in the bottom of a 9 X 13 pan. Bake at 350 degrees for 10 minutes. Allow to cool completely.
  • 2. Beat together powdered sugar, cream cheese. Fold in cool whip. Spread over the cooled pretzel crust.
  • 3. Prepare gelatin and let cool until syrupeyand almost solid. Slowly pour over the cream cheese layer. Chill until firm. Overnight is best.

POMEGRANATE-CRANBERRY SALAD

1 cup boiling water
1/2 cup cold water
1-2/3 cups pomegranate seeds
1 can (14 ounces) whole-berry cranberry sauce
1 can (8 ounces) unsweetened crushed pineapple, drained
3/4 cup chopped pecans
Optional: Frozen whipped topping, thawed, and additional chopped pecans

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Add cold water; stir. Add the pomegranate seeds, cranberry sauce, pineapple and pecans. Pour into a 1-1/2-qt. serving bowl. Refrigerate for 4-5 hours or until firm. If desired, top with whipped topping and additional pecans.

1 can (29 ounces) sliced peaches, drained
1-1/2 cups boiling water
2 packages (3 ounces each) lemon gelatin
1 can (12 ounces) ginger ale, chilled
1/3 cup chopped walnuts, toasted

Steps:

  • Arrange half of the peach slices in a 6-cup ring mold coated with cooking spray. In a small bowl, add boiling water to gelatin; stir 2 minutes to completely dissolve., Stir in ginger ale. Pour half of the mixture over peaches; sprinkle with walnuts. Refrigerate 30 minutes or until set but not firm. Let remaining gelatin mixture stand at room temperature., Carefully arrange remaining peach slices over gelatin in mold. Spoon remaining gelatin mixture over top. Refrigerate until firm. Unmold onto a serving plate.

LIME GELATIN SALAD I

This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

1 cup boiling water
1 (6 ounce) package lime flavored Jell-O® mix
1 (20 ounce) can crushed pineapple, drained with juice reserved
1 (8 ounce) package cream cheese, softened
2 cups heavy cream
1 cup chopped pecans

Steps:

  • In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
  • Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
  • In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

PERFECTION SALAD:
2 pkg (6 ounces each) lime jell-o
4 c boiling water
3 c cold water
2 c finely shredded cabbage
1 c finely shredded carrot
1/4 c thinly sliced celery
1 c crushed pineapple, well drained
1 pkg (3 ounces) lemon jell-o (plus water called for on package)
OPTIONAL DRESSING:
1 c mayonnaise or miracle whip
1-2 Tbsp milk, (more or less to your preference)
1-2 Tbsp sugar, (more or less to taste)

Steps:

  • 1. Combine the 2 packages of lime Jell-O with 4 cups of hot water in a large bowl, stirring until dissolved. Stir in cold water. Immediately add vegetables and well drained pineapple. Pour mixture into a mold or serving dish. Refrigerate until mixture has set (about 2 or 3 hours).
  • 2. Prepare the lemon Jell-O package following directions on package. Pour over the first mixture after it has set. Refrigerate the salad for several hours more or overnight. Unmold by dipping into hot water for 10 seconds.
  • 3. OPTIONAL: Serve with a sauce made of 1 cup mayonnaise or Miracle Whip thinned with 1-2 tablespoons milk, and sweetened with 1-2 tablespoons sugar. mix well until sugar is dissolved. Adjust amounts of milk and sugar to your taste. Spoon over salad as it is served.

This salad has been a family favorite for over four generations, requested every Thanksgiving and Christmas. It is smooth and creamy with the crunch of pecans, and light green in color. It has a very unique flavor, and goes very quickly at our home. Any left over crushed pineapple and cottage cheese make a great snack for kids.

  • Stir the mayonnaise and evaporated milk together in a mixing bowl. Stir in the gelatin mixture until completely blended. Mix in the crushed pineapple, cottage cheese, and pecans. Pour the gelatin mixture into a serving bowl. Refrigerate at least 4 hours or overnight.
