PRESSURE COOKER CHILI VERDE

Simple and easy to make, this Pressure Cooker Chili Verde that is melt in your mouth tender! Watch the recipe video, you'll find it after the directions.

4.5 lb country style pork 'ribs' (cut into cubes, or use pork butt/shoulder cut into large chunks)
1lb 6 oz tomatillos (625g (approx))
2 Anaheim peppers (skinned, seeded and chopped.)
1 onion (peeled and sliced)
6 cloves garlic (peeled)
olive oil
1/2 cup gluten free chicken stock (250mls)
1 tsp salt
1 tsp pepper
1 tsp ancho chili powder

Steps:

  • Roast the Anaheim peppers over an open flame on your gas stove, use tongs to turn them so that they blacken all over. If you do not have a gas stove you can broil them in a similar way.
  • Put the blackened peppers in a bowl with cling wrap over the bowl and the steam will help the skin to slide off after a few minutes.
  • Once you have peeled the peppers, remove the seeds and stem and add them to your food processor or blender.
  • Remove the outer husk from the tomatillos and wash and halve them.
  • Add the halved tomatillos, onion slices, and garlic into a large bowl and toss with about a tablespoon of olive oil, then place on a baking sheet and broil for about 10 minutes or until they get a little toasted on top.
  • Add the tomatillos, onions, and garlic, into your food processor with the chopped Anaheim peppers and blend to make the sauce.
  • Cut the country style ribs into large cubes.
  • Turn on the saute function in your Instant Pot or pressure cooker and add the oil, then brown the pork in batches.
  • Add all the pork back to the pressure cooker and add the salt, pepper, and Ancho chili powder and stir. Pour over the chicken broth, then the chili verde sauce, stir and put the lid on.
  • Lock the lid, turn the steam release vent to 'sealing' and using the 'manual' or 'pressure cook' button, adjust it to cook for 20 minutes at High Pressure, then let the pressure release naturally for about 10 minutes or more.
  • The Chili Verde may have a lot of liquid when you first open the lid, I like to simmer it using the saute button to reduce and thicken up the sauce which gives a nice rich flavor to the finished dish.

3 1/4 pounds pork shoulder, cut into thirds
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil, plus more as needed
1 large onion, thinly sliced
1 can (7 ounces) diced green chiles, such as Goya
1 3/4 cups medium green salsa, such as Xochitl
Accompaniments for Serving: Tortilla chips, cilantro, sour cream, cotija cheese, sliced radishes serrano or jalapeño chiles, and sliced avocado

Steps:

  • Season pork with salt and pepper. Heat 2 tablespoons oil in an electric pressure cooker set to sauté. Working in batches, brown pork all over (adding 1 more tablespoon oil if needed), 16 to 20 minutes total. Remove pork and switch cooker off. Let pork cool slightly; cut into 1-inch chunks.
  • Return cooker to sauté setting. Add onion, season with salt and pepper, and cook until translucent, about 3 minutes. Return pork to cooker with canned chiles and salsa. Secure lid and manually set cooker to high. Set timer for 35 minutes and let come to pressure.
  • Once time is complete, switch off and manually release pressure, then remove lid. Let cool 10 minutes; skim fat. Serve with accompaniments.

4 medium carrot, sliced

1 cup minced fresh cilantro

Steps:

  • Select saute setting on a 6-qt. electric pressure cooker and adjust for high heat; add oil. In batches, saute the pork, carrots, onion and garlic until browned. 2 tablespoons olive oil, or more as needed, divided
10 tomatillos - husked, stemmed, and halved
3 jalapeno peppers, halved and seeded
5 cloves garlic, crushed
2 ½ cups chicken broth, divided
3 pounds boneless pork shoulder, cut into 1 1/2-inch cubes
1 medium yellow onion, chopped
1 green bell pepper, seeded and chopped
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon coarse salt
½ teaspoon cracked black pepper
¼ cup chopped fresh cilantro

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®), select Saute function, and add 1 tablespoon olive oil. Add tomatillos, jalapenos, and crushed garlic to the hot oil. Saute, flipping once or twice, until lightly browned, 6 to 7 minutes. (Remove garlic earlier if it browns sooner.)
  • Transfer vegetables to the bowl of a food processor and puree with 2 cups chicken broth until smooth.
  • Clean and dry the inner pot of the Instant Pot®. Select Saute function and heat remaining olive oil. Add pork, onion, bell pepper, oregano, cumin, salt, and pepper. Stir and saute, adding more oil if necessary, until pork is browned on all sides and vegetables are soft, 7 to 8 minutes. Cancel Saute function. Pour in remaining chicken broth and scrape the bottom of the pot with a wooden spoon to loosen any browned bits. Stir in reserved tomatillo puree.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Unlock and remove the lid. Stir in chopped cilantro.

Chili in the electric pressure cooker is super fast and extremely convenient. This version is on the gently spiced side, so if you're looking for more heat, feel free to increase the chili powder or add a big pinch of cayenne - or throw a couple of extra jalapeños into the pot. Keep in mind that the leaner the beef, the less flavorful the chili. Eighty percent is a good bet here. You can also substitute ground pork or dark meat turkey. Leftover chili freezes like a dream.

2 tablespoons olive oil
1 pound ground beef
2 teaspoons kosher salt, more as needed
1 large onion, diced
1 green bell pepper, seeded and diced
1 jalapeño, seeded or not, diced
4 cloves garlic, finely grated or minced
2 tablespoons chili powder
1 tablespoon tomato paste
1/2 teaspoon ground cumin
1 teaspoon dried oregano
1 (13.5-ounce) can diced tomatoes
2 (15-ounce) cans pinto or kidney beans, drained and rinsed
1/3 cup chopped cilantro leaves and tender stems
Fresh lime juice, to taste
Sour cream, for serving
Cubed avocado, for serving (optional)
Pickled jalapeño, for serving (optional)

Steps:

  • Heat the oil in the pressure cooker (see Tip) set to the sauté function on high if possible. Add beef, spread it over the bottom of the pot over the oil, and let it brown without stirring for 7 minutes. Give it a good stir and sauté for 1 more minute, then use a slotted spoon to transfer it to a plate. Season meat with 1 teaspoon salt.
  • Stir in onion, bell pepper, jalapeño, garlic and 1/2 teaspoon salt; cook until softened, about 5 minutes.
  • Stir in chili powder, tomato paste, and cumin, cook until fragrant, about 1 minute. Stir in beef and any juices from the plate, oregano, tomatoes, beans and remaining 1/2 teaspoon salt, then cover and cook on high pressure for 8 minutes. Let pressure release naturally.
  • Stir in cilantro and a squeeze or two of lime juice, then taste and adjust seasonings if necessary. Serve with sour cream, avocado and pickled jalapeño if you like.

4 lbs boneless pork shoulder, cut into 2 inch chunks
4 tomatillos, husked and quartered
2 poblano peppers, diced and seeded
2 anheim bell peppers, diced and seeded
2 jalapenos, diced and seeded
1 (4 1/2 ounce) can green chilies
1 onion, peeled and diced
6 garlic cloves, peeled and diced
2 teaspoons salt
1 tablespoon ground cumin
1 tablespoon dried Mexican oregano
1 cup fresh cilantro, roughly chopped
2 limes, quartered
1/2 cup Cotija cheese

Steps:

  • Seed and chop all your veggies. Put them in the pressure cooker and saute (this brings out the juices - if you don't do this you won't have enough liquid to come to pressure).
  • While they are heating add all your spices. Then add the cubed meat. If your pork shoulder had a bone you can throw this in for flavor.
  • Seal your pressure cooker, bring to pressure, and cook 25 minutes. Allow natural pressure release.
  • Remove the meat and puree the veggies and juice either in a food processor or blender. Add the meat back inches Top with cilantro, a squeeze of lime juice, and cotija, and enjoy!

I have been experimenting with different recipes in an attempt to duplicate the Chile Verde at my favorite Mexican restaurant. This is my best attempt so far and I made it up while looking for ingredients at the grocery store. It's nicely spicy but not too hot.

5 lbs pork sirloin roast, cubed into 1/2 inch chunks
1 large onion, chopped
1 large green pepper, chopped
4 cloves garlic, presses or finely chopped
2 (7 ounce) cans salsa verde (I used Herdez brand)
2 (4 ounce) cans diced green chilies
1 (14 1/2 ounce) can diced tomatoes
2 tablespoons oregano
2 teaspoons ground cumin
2 teaspoons coriander
1 teaspoon black pepper
4 chicken bouillon cubes
4 tablespoons diced jalapeno peppers
1/8 teaspoon cayenne pepper (optional)
2 cups water

Steps:

  • Put all ingredients in a pressure cooker.
  • Lock lid and bring up to pressure on high heat, lower temperature and simmer at 15 psi for 40 minutes.
  • (If you don't have a pressure cooker you can simmer on the stove for approximately 3 hours until pork is tender, adding more water as necessary).
  • Remove from heat and let the pressure come down.
  • Remove the lid and simmer until the liquid is reduced by about half.
  • Serve with warm flour tortillas, grated cheese and sour cream.

  • Optional Flavor Boosting - Roast Tomatillos & Peppers: Set oven to "Broil" function, preheat for 5 minutes. Place the baking sheet with tomatillos & peppers on the top rack, broil for 5 - 8 minutes. Allow peppers to cool down, then peel away Poblano and Anaheim peppers' outer brown skins. Cut peppers in half lengthwise, remove stems & membranes, then roughly chop them up. *Pro Tip: Keep the seeds if you like a more spicy chili verde, or discard the seeds if you prefer a more mild chili verde.
  • Brown Chicken in Instant Pot: Press "Saute" button to "Sauté More" to heat up Instant Pot. Wait until it says "HOT" on the screen (~8 mins). *Pro Tip: Make sure Instant Pot is as hot as it can be to induce a Maillard reaction. Add 1 tbsp olive oil (15ml) in Instant Pot's inner pot. Ensure the whole bottom is coated with olive oil. Pat dry chicken thighs with a paper towel, then lightly season one side with kosher salt. Place 6 chicken thighs in Instant Pot. Brown the first side of chicken for 3 minutes and 30 seconds, brown the other side for 3 minutes, then set aside. *Pro Tip: Normally, we don’t recommend overcrowding when browning chicken in Instant Pot, but it will work fine for this recipe. To save time, you don't have to brown all the chicken.
  • Saute Onion and Garlic: Add in sliced onions, then saute for 3 minutes. Add in 2 tsp (1.2g) dried oregano, 2 tsp (6g) ground cumin seeds, 2 cloves, minced garlic, then saute for 30 seconds until fragrant.
  • Deglaze Instant Pot: Pour ½ cup (125ml) unsalted chicken stock in Instant Pot, then deglaze by scrubbing all the flavorful brown bits off the bottom of the pot with a wooden spoon. Give it a quick mix.
