I hate lima beans. They are grainy and gross. My husband LOVES them so one day I accidentally made lima beans that I absolutely adored. It was a timing mistake, but a delightful mistake! The beans were supposed to cook for 20 minutes but I set the timer for 60!

2 large smoked ham hocks
1 1/2 cups water
2 (12 ounce) packages frozen lima beans
2 teaspoons McCormick's Montreal Brand steak seasoning
1 pinch thyme
1 pinch chives
2 carrots, pared and chunked
2 celery ribs, with leaves diced
1 small onion, diced
2 scallions, diced white part and pale green part

Steps:

  • Put the hocks and water into your pressure cooker and set for one hour on high pressure.
  • When done, remove to a bowl while the rest of the ingredients cook.
  • Add all the veggies and seasonings to the liquid in the pressure cooker and set to high pressure for one hour.
  • Meanwhile, pick the meat out of the hocks and dice.
  • When the time is up on the pressure cooker let it cool down naturally and then add the meat back to the cooker.
  • Test a lima bean - they should be creamy with no grainy texture at all. If they are grainy turn the pressure cooker on for about 15 more minutes.
  • Serve it up with Yankee corn bread!
  • This recipe is for frozen lima beans, not dried or canned.

I was trying to re-work my frozen lima beans into something I could entice the kids with and came up with this dish. It was so simple with its zesty sweet flavor, and the kids ate every bite.

1 (16 ounce) bag frozen lima beans
5 slices bacon
1/3 cup diced red onion
1/3 cup brown sugar
salt and pepper

Steps:

  • Boil the lima beans according to package (about 10-12 minutes-I used pressure cooker for 5 minutes).
  • While beans are cooking fry bacon in a medium frying pan on medium heat until crisp and drain.
  • Add the red onion and cook additional 5 minutes.
  • Add lima beans, salt, and pepper to pan.
  • Sprinkle brown sugar and stir.
  • Add a couple Tablespoons water for saucier texture.
  • Serve.

These are the best pressure-cooked butter beans you will ever eat, guaranteed!

1 pound dried large lima beans (butter beans)
1 pound bacon
4 cups water, or more as needed
1 (12 fluid ounce) can or bottle beer
½ teaspoon ground cumin
½ jalapeno pepper, seeded and minced
1 clove garlic, minced

Steps:

  • Place beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight.
  • Place bacon in the open pressure cooker and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and remove pressure cooker from heat, reserving the bacon grease in the pressure cooker to cool, about 10 minutes.
  • Stir 4 cups water into cooled bacon grease; add beer and cumin.
  • Drain and rinse the soaked beans and add to the water mixture in the pressure cooker.
  • Place the lid on the pressure cooker and secure tightly. Cook beans according to manufacturers' instructions for 15 psi over medium-high heat, about 30 minutes; release the pressure.
  • Stir jalapeno pepper and garlic into beans. Crumple bacon over beans.
  • Close pressure cooker again and bring to 15 psi over medium heat and immediately turn off heat. Remove pressure cooker from heat and allow pressure naturally decrease to 0 psi.
