Had these in New Orleans and loved them, so I tried different combos and liked this best.

Number Of Ingredients 6

1 ½ cups toasted pecans
1 ½ cups white sugar
⅜ cup butter
¾ cup brown sugar
½ cup milk
1 teaspoon vanilla extract

Steps:

  • Line a baking sheet with aluminum foil.
  • In large saucepan over medium heat, combine pecans, sugar, butter, brown sugar, milk and vanilla. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
  • Drop by spoonfuls onto prepared baking sheet. Let cool completely.

Great quick and easy recipe from New Orleans, Louisana "Cajun Cookin' School". Picked up the recipe at their store/kitchen/cafe on my way back from Katrina Hurricane Relief along the Gulf Coast of USA. Has been a great treat for friends with a sweet tooth. LOL Actually my wife loves them too. I Bake'em, bag'em 6 in a bag, and we eat'em, whenever!

Number Of Ingredients 5

1 1/2 cups pecans, chopped
1 1/2 cups brown sugar
3/4 cup all-purpose flour
1/2 cup butter, melted
3 eggs, beaten

Steps:

  • Mix all dry ingredients together in small bowl.
  • Add melted butter to beaten eggs and then add dry ingredients. Refrigerate for 10 minutes.
  • Use metal mini-muffin pans and spray with a non-stick cooking spray for baking or with flour. You MUST use metal pans and non stick spray or muffins will stick in pans.
  • Use a tablespoon and spoon each muffun about 3/4 full into muffin pans. Use a second spoon to slide the mix cleanly off.
  • Preheat oven to 350 degrees and bake for 20 minutes. Remove from oven and let rest 5 minutes. Gently tap pans upside down and muffins will fall out.

CRANBERRY-PISTACHIO CORNMEAL BISCOTTI

Green pistachios and red cranberries combine to make a cookie perfect for Christmas. Cornmeal gives these biscotti an extra crumbly and sandy texture, while the dried cranberries add a chewy element.

1 1/4 cups all-purpose flour
1 1/4 cups yellow cornmeal
1/2 teaspoon baking powder
1/2 teaspoon coarse salt
6 tablespoons unsalted butter, room temperature
1 cup sugar
2 large eggs
1 tablespoon finely grated lemon zest
1 cup dried cranberries
1 cup chopped pistachios

Steps:

  • Preheat oven to 350 degrees with rack in center. Whisk together flour, cornmeal, baking powder, and salt.
  • Put butter in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until smooth. Add sugar and mix until pale and fluffy. Mix in eggs one at a time, until well combined. Reduce speed to low. Add flour mixture all at once; mix until just combined. Add lemon zest, cranberries, and pistachios and mix until combined.
  • Transfer dough to a baking sheet lined with parchment paper. Pat into a log that is roughly 14 by 3 1/2 inches. Bake until firm, lightly browned, and slightly cracked on top, 30 to 35 minutes. Let cool on sheet on a wire rack, about 15 minutes.
  • Transfer log to a cutting board. Using a serrated knife, cut on the diagonal into 1/2-inch-thick slices. Arrange slices on a baking sheet lined with parchment. Bake cookies, rotating sheet halfway through, until they begin to brown at edges, 15 to 18 minutes.

No-stick flour and oil baking spray
1 (15-ounce) box corn bread mix, (not corn muffin mix)
3/4 cup light brown sugar
1 pound pecans halves (3.4-ounce) package
5 large eggs, or 1 cup liquid egg substitute
1 teaspoon vanilla extract

Steps:

  • Heat the oven to 350°F. Coat the interior of a 9- by 13-inch glass baking dish with baking spray. Combine the cornbread mix, sugar, and pecans in a large bowl. Add the eggs and vanilla, and mix with a large fork until the dry ingredients have been moistened (if the batter is crumbly, add a little more egg or a teaspoon of milk). Scrape the batter into the dish and flatten into an even layer, using a spatula or the back of a wide wooden spoon. Bake until a tester inserted in the center comes out clean, about 30 minutes. Remove the pan from the oven. Cover with a cutting board, invert, and remove the pan. Let cool for 15 minutes. Cut the cake in half lengthwise, scoring the surface with a serrated knife and then cutting through with a straight-edge knife. Cut each half into 15 to 16 rectangular strips. Return the strips to the pan, setting each on one of its narrow sides, like dominoes. You might have to make a second layer to fit all of the biscotti in the pan. PINEAPPLE AND BLUEBERRY CORNBREAD

No-stick spray oil
1 (15-ounce) box corn bread mix
1 egg, large or extra-large
1/2 cup vegetable oil
3/4 cup pineapple juice
1 (14-ounce) can blueberries in water, well drained, or 1 pound frozen blueberries thawed and drained

Steps:

  • Heat the oven to 375°F. Spray a 10-inch skillet with a metal handle with oil and place in the oven while you prepare the batter.Beat the cornbread mix, egg, oil, and pineapple juice in a large bowl with a whisk until smooth and the consistency of unbeaten cream. Fold in the blueberries. Carefully remove the hot skillet from the oven, using a thick pot holder, and place it on a scorch-proof surface. Scrape the batter into the pan and smooth the surface. Bake until the top is golden and the center springs back to gentle pressure, about 30 minutes.Cool on a wire rack in the skillet for 5 minutes before cutting into wedges and serving.From Homemade In A Hurry.   • Whisk together 2 eggs and buttermilk. With processor running, gradually add egg mixture through food chute, and process just until well moistened. (Batter will be thick.)
  • Spread dough into a 12- x 4-inch rectangle on a parchment paper-lined baking sheet using lightly greased hands. Lightly beat remaining egg; brush over dough. Sprinkle with remaining cheese.
  • Bake at 350° for 20 minutes or until pale golden brown and firm. Let cool on baking sheet on a wire rack 10 minutes. Reduce oven temperature to 300°.
