  • Preheat oven to 375 degrees F.

7-1/2 cups chopped peeled tart apples
5 cups fresh or frozen cranberries
2/3 cup sugar
1-1/2 cups quick-cooking oats
1/2 cup packed brown sugar
1/3 cup all-purpose flour
1/3 cup chopped pecans
1/4 teaspoon salt
1/2 cup butter, melted
Vanilla ice cream

Steps:

  • In a large bowl, combine the apples, cranberries and sugar. Transfer to a greased 13-in. x 9-in. baking dish. In a small bowl, combine the oats, brown sugar, flour, pecans and salt; stir in butter until crumbly. Sprinkle over apple mixture. 2 pounds Granny Smith apples - peeled, cored and thinly sliced
¾ cup cranberries
¼ cup white sugar
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
⅓ cup quick-cooking oats
⅓ cup all-purpose flour
½ cup packed light brown sugar
¼ cup butter, cut into pieces
½ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Butter an 8 inch square baking dish.
  • In a large bowl, mix together apples, cranberries, white sugar, cinnamon and nutmeg. Place evenly into baking dish.

One 14-ounce can whole-berry cranberry sauce
3/4 cup granulated sugar
2 tablespoons all-purpose flour
5 medium Granny Smith apples, peeled, cored and sliced into 1/4-inch slices
1 cup quick-cooking oats
1/3 cup all-purpose flour
1/3 cup firmly packed light brown sugar
1/4 cup (1/2 stick) salted butter, melted
1/4 cup chopped pecans
1 teaspoon ground cinnamon

Steps:

  • For the filling: Preheat the oven to 375 degrees F. Coat a 9-inch pie dish with the softened butter. Set aside.
  • In a large mixing bowl, stir together the cranberry sauce, granulated sugar and flour. Add the apples to the cranberry mixture, tossing to coat, and pour the mixture into the prepared pie dish.
  • For the crumb topping: In the same mixing bowl, stir together the oats, flour, brown sugar, melted butter, pecans and cinnamon. Sprinkle the mixture over the apples in the dish.

1/2 cup dried cranberries
2 tablespoons plus 1 cup flour
1/4 cup finely cut candied ginger
6 tablespoons granulated sugar
6 tablespoons brown sugar
2 cups chopped pecans
A few shakes salt
1/2 teaspoon cinnamon
2 teaspoons grated lemon rind
2 teaspoons lemon juice
1/2 cup chilled, unsalted butter

Steps:

  • Preheat oven to 375 degrees.
  • Mix the apples and cranberries with 2 tablespoons flour, and spoon into a 9-by-9-inch baking dish.
  • Combine the remaining flour and the rest of the ingredients, using your fingers or a pastry blender to thoroughly combine the crumb topping. Sprinkle the topping evenly over the apple-cranberry mixture. Cover with foil, and bake for 20 minutes. Remove the foil, and bake another 20 minutes, until the topping is browned and the filling is bubbling. Cool, cover and refrigerate.
  • To serve, preheat the oven to 350 degrees, and bring the crisp to room temperature. Bake for about 15 minutes, until the crisp is warmed throughout. Serve plain or with creme fraiche, if desired.
