These Au Gratin Potatoes with American Cheese are a classic comfort food side dish recipe from my family's Chicago supper club restaurant. This tasty side dish is loaded with cheeses, milk, potatoes, and spices! Served in casserole dishes or individual ramekins for the perfect accompaniment to your dinner.

8 lb potatoes
1 cup butter
1/2 cup flour
2 tablespoons salt
1 gallon milk
3 lbs american cheese (grated)
1 lb parmesan (grated)
1 tablespoon (paprika)

Steps:

  • Peel potatoes, and boil them in a pot of hot water for about 30-40 minutes, until tender. Drain and set aside to cool.
  • Once cool, grate the potatoes with a regular cheese grater.
  • In a pan over medium heat: melt butter, add flour and blend slowly. Add 1/2 of the milk and all of the cheese. When cheese is melted add salt and remaining milk. Add grated potatoes and mix well until a medium custard consistency forms.
  • Place potatoes in individual casserole dishes or ramekins. Sprinkle parmesan cheese and paprika on top. Bake in hot over or broiler until cheese is bubbling. Enjoy!

4 large baking potatoes
1/4 cup onion, chopped
1/4 cup green bell pepper, chopped
1/4 cup celery, chopped
2 garlic cloves, minced
3 tablespoons butter
1 cup shrimp, coarsley chopped
1/2 cup sour cream
1 teaspoon fresh lemon juice
1/2 teaspoon steak sauce or 1/2 teaspoon Worcestershire sauce
1 dash hot sauce
1/2 cup mozzarella cheese, shredded
4 tablespoons parmesan cheese, shredded

Steps:

  • Bake potatoes, scoop out centers and mash.
  • Preheat oven to 350*F.
  • Place skins on baking sheet that has been sprayed with cooking spray.
  • In butter, saute onion, green pepper, celery, garlic for 3 minutes, add shrimp, saute 2 minutes. Add to mashed potatoes.
  • Mix together sour cream, lemon juice, steak sauce, hot sauce, and mozzerella, and stir into mashed potato mixture.
  • Fill potato skin shells and top each with 1 tablespoon parmesan. Bake for 20-25 minutes.

This recipe has been around our family for many years, it's simple to make but very good and a great side dish to almost any meal.

Number Of Ingredients 8

4 cups potatoes, peeled and thinly sliced
3 tablespoons butter
1 1/2 cups half-and-half cream
4 eggs
2 teaspoons salt
1/2 teaspoon white pepper
1/4 teaspoon ground nutmeg (to garnish)
fresh minced parsley (to garnish)

Steps:

  • In a saucepan, boil potatoes until almost tender. Drain and pat dry. Arrange a layer of potatoes over the bottom of a buttered 13x9 baking dish or one of its equivalent. Sprinkle with salt and pepper and dot with butter. Continue to layer until all potaotes are used. Combine the half and half and eggs and beat well. Pour over the potatoes. Bake at 350* for 25-30 minutes or until potaotes are tender and the custard is just set but still soft. Garnish with the nutmeg and parsley.

This is a type of potato casserole. You microwave it, so it's quick. I got a variation of this from my aunt a very long time ago and changed a couple of things to make it better for my family. If you don't have the bacon (or time to use it) skip it. It'll still be good.

4 slices bacon, crumbled
4 medium potatoes, sliced thin
1/4 cup onion, chopped
1/4 cup water
1/3 cup mayonnaise
1/2 cup sour cream
1 cup shredded cheddar cheese
1/2 teaspoon salt
1 dash pepper

Steps:

  • Slice potatoes into 1 1/2 quart dish. Add onions and water. Cover with a lid and microwave on high for 12-14 minutes, stirring halfway through cooking time.
  • Except bacon, combine remaining ingredients. Add to potatoes and mix lightly.
  • Sprinkle bacon on top and microwave on high for 1 1/2 to 2 minutes to heat thoroughly.
