Potato Sausage Soup is an old fashioned sausage soup recipe. This simple potato soup recipe uses breakfast sausage, diced potatoes, celery, and onion which is thickened up with a simple roux. Recipes like this one stand the test of time because of the easy instruction and basic ingredients.

3-4 stalks celery, cleaned and diced
4-5 potatoes, diced
2 medium onions, diced
1 pound pork sausage
3 Tablespoons butter
3 Tablespoons flour
3 cups milk
2-3 shakes ground nutmeg
salt and pepper, generously to taste

Steps:

  • Add diced celery, potatoes and onions to a medium saucepan, and cover with just enough water to cover vegetables. Cook until fork tender.
  • Meanwhile, brown and crumble sausage; drain excess grease if needed.
  • Add browned sausage to potato mixture.
  • In a small saucepan, melt butter. Add flour, stirring for 30 seconds with whisk. Add milk and cook and stir until thick.
  • Once milk sauce is thick, add it to the potato mixture. Bring the soup to a boil until thickened and hot.
  • Season with nutmeg, starting with one shake. Taste and add up to three shakes. Season generously with salt and pepper to taste.

1 shallot, minced
1/2 cup(s) shredded carrots
2 cup(s) chicken broth
2 cup(s) cold mashed potatoes
1 cup(s) milk
2 cup(s) cheddar cheese, shredded
6 breakfast sausage links, cooked and sliced into "coins"
1 tablespoon(s) chives, dried
salt and pepper, to taste

Steps:

  • Place shallot and carrots into a large saucepan and add broth. Bring to a boil; turn down to a simmer and cook 5 minutes.
  • Stir in potatoes, milk and cheese. Stir until cheese is melted. Add more milk if too thick.
  • Stir in sausage "coins" and dried chives and simmer until heated through. Season with salt and pepper.

Best potato soup with sausage ever with a variation of the original German soup. My family loves this soup and I never have leftovers. This recipe is one my grandmother used to make when I was growing up and I have always loved this.

1 pound bulk mild Italian sausage
1 pound kielbasa smoked sausage, cut lengthwise and sliced into 1/2-inch pieces
4 cups diced potatoes, or more to taste
4 cups water
2 cups chicken broth
1 cup heavy whipping cream
1 stalk celery, diced, or more to taste
2 cubes chicken bouillon
1 tablespoon minced garlic
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
⅓ teaspoon crushed red pepper, or more to taste

Steps:

  • Heat a large pot over medium-high heat. Cook and stir Italian and kielbasa sausages in the hot skillet until browned, 5 to 7 minutes. Drain grease.
  • Stir potatoes, water, chicken broth, heavy cream, celery, bouillon, garlic, salt, pepper, garlic powder, and red pepper into the pot. Reduce heat and let simmer until potatoes are tender, about 1 1/2 hours.

1/2 pound smoked kielbasa, diced
6 medium potatoes, peeled and cubed
2 cups frozen corn
1-1/2 cups chicken broth
1 celery rib, sliced
1/4 cup sliced carrot
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups whole milk
2/3 cup shredded cheddar cheese
1 teaspoon minced fresh parsley

Steps:

  • In a large saucepan, brown sausage; drain. Set sausage aside. In the same pan, combine the potatoes, corn, broth, celery, carrot and seasonings. Bring to a boil. , Reduce heat; cover and simmer for 15 minutes or until vegetables are tender. Add the milk, cheese, parsley and sausage. Cook and stir over low heat until cheese is melted and soup is heated through.

  • In a large dutch oven combine chicken broth, potatoes, celery, carrots, onions, salt and pepper. Bring to a simmer and allow to simmer until veggies are tender. This should take about 15-20 minutes depending on the size of the vegetables. Smaller pieces will cook more quickly.
  • When veggies are simmering and sausage In a separate large saucepan on medium heat, melt butter and whisk in flour until combined and creamy. Slowly add milk, about one cup at a time, whisking well after each addition. Whisk or stir almost continuously. Add in cheese and stir until melted and combined with milk mixture. Remove from heat.
  • When vegetables are tender, add cheese mixture directly to the dutch oven containing the veggies and broth. Stir well to combine. When sausage is done cooking, remove from Sizzling Sausage Grill and slice into bite size pieces. Add to soup and stir to combine. Serve immediately. If desired garnish with additional cheese and/or green onions.
