FLANK STEAK WITH HERB SAUCE AND THREE CHEESE WAFFLE HASH BROWNS



Flank Steak with Herb Sauce and Three Cheese Waffle Hash Browns image

1 cup chopped fresh herbs, such as basil, mint, cilantro and parsley
2/3 cup olive oil
1/4 cup red wine vinegar
1 serrano chile pepper, seeded and finely chopped
1 garlic clove, finely grated
1/2 shallot, chopped
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
5 cups frozen shredded hash brown potatoes, thawed
6 tablespoons salted butter, melted
1/2 cup shredded Cheddar
1/2 cup shredded pepper jack cheese
1/2 cup shredded mozzarella
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
Nonstick cooking spray, for the waffle iron
1 1/2 pounds flank steak
Kosher salt and freshly ground black pepper

Steps:

  • For the herb sauce: Whisk together the herbs, olive oil, vinegar, serrano, garlic, shallot, salt and pepper in a small bowl. Set aside.
  • For the three cheese waffle hash browns: Preheat a waffle iron to medium.
  • Toss the shredded potatoes in a bowl with the melted butter, the three cheeses and the salt and pepper. Mix until well combined.
  • Spray the top and bottom of the waffle iron well with cooking spray. Put a mounded cup of the potato mixture (about 1 1/4 cups worth) in each well and gently pat down. (They will start to sizzle.)
  • Close the waffle iron and cook until the hash browns are golden brown and crispy; time will vary based on your waffle iron, but it will take roughly 12 minutes. (Check on them occasionally to make sure they aren't burning.) Use a butter knife or fish spatula to gently and very carefully remove the hash browns. They are very fragile when they are hot and just out of the iron.
  • For the flank steak: Meanwhile, preheat a grill or grill pan to medium-high. Pat the steak dry and sprinkle liberally with salt and pepper. Grill the steak for about 5 minutes on each side for medium-rare. Set on a cutting board to rest for 10 minutes.
  • Thinly slice the steak against the grain. Divide the hash browns and steak among 4 plates and drizzle the steak with the herb sauce.

These are not a sweet waffle! I use them to serve creamed beef or chicken for a quick, easy supper. They are very light, very tasty, and they smell heavenly.

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon garlic salt
1 teaspoon dried parsley
½ teaspoon dried rosemary
¼ teaspoon dried tarragon
1 ½ cups shredded smoked Gouda cheese
2 cups buttermilk
3 eggs, separated
⅔ cup light sour cream
½ cup vegetable oil

Steps:

  • In a large bowl, stir together the flour, baking powder, baking soda, garlic salt, parsley, rosemary and tarragon. Stir in the shredded Gouda. Set aside.
  • In another bowl, mix together the egg yolks, buttermilk, sour cream and vegetable oil until well blended. Pour the wet ingredients into the flour mixture, and stir until just blended. In a separate clean bowl, whip the egg whites until stiff peaks form. Fold into the waffle batter.
  • Heat the waffle iron, and grease with vegetable oil spray. Use the recommended amount of batter for each waffle according to your iron. Close the lid, and cook until golden brown. Waffles can be held in a warm oven while the others are cooking. Serve with creamed beef or chicken.

2 tsp. baking powder
1 egg
1/2 cup milk
2 Tbsp. oil
1 cup ORE-IDA Shredded Hash Brown Potatoes
2 Tbsp. chopped fresh parsley

Steps:

  • Spray electric waffle iron with cooking spray. Heat iron to medium heat.
  • Meanwhile, combine first 3 ingredients in large bowl. Whisk egg, milk and oil in medium bowl until blended. Add to flour mixture; stir just until blended. (Do not overmix.) Stir in potatoes and parsley.
  • Pour amount of batter directed by manufacturer onto grids of waffle iron. Close lid quickly. (Do not open until waffle is done.) Cook according to manufacturer's directions. When done, left waffle off grid with fork. Repeat with remaining batter.

325g leftover mashed potatoes, at room temperature (see 'goes well with', below)
118ml whole milk
100g plain flour
1⁄2 tsp bicarbonate of soda
2 spring onions, finely sliced
melted butter, for the waffle maker
smoked salmon or cooked bacon, poached or fried eggs, soured cream or crème fraîche and chives, to serve (optional)
1⁄4 tsp poppy seeds
1⁄4 tsp toasted sesame seeds
1⁄4 tsp garlic granules
1 tsp crispy onions

Steps:

  • Heat a waffle maker. Mix the ingredients for the seasoning in a small bowl to combine. In a larger bowl, mix the mash with the milk, then add the flour, bicarb, ½ tsp salt and 1 tsp sugar. Fold in the spring onions and seasoning mix.
  • Brush the waffle maker with a little melted butter. Spoon in half the batter and spread it out. Cook for 5 mins, or until golden and cooked through.
  • Lift the waffle onto a plate using a fork or spatula, and loosely cover to keep warm. Brush the waffle maker with a little more melted butter and repeat the process with the remaining batter.
  • Top the waffles with smoked salmon or bacon rashers, if using, and a fried or poached egg, as preferred. Season and serve with dollops of soured cream or crème fraîche, if you like.

2 medium (about 13 ounces) Yukon gold potatoes
1 1/2 teaspoons coarse salt, plus more for saucepan
2 cups all-purpose flour
1 teaspoon sugar
1 teaspoon baking soda
1 1/2 teaspoons baking powder
3 large eggs, separated
2 cups nonfat buttermilk
8 tablespoons (1 stick) unsalted butter, melted

Steps:

  • Peel potatoes, and cut each into eighths. Place in a medium saucepan of cold salted water. Bring to a boil, and simmer until potatoes are very tender, about 8 minutes. Drain, and set aside in a bowl to cool. Mash into coarse pieces with a fork or pastry cutter.
  • Heat the waffle iron. In a large bowl, sift together all purpose flour, sugar, baking soda, baking powder, and salt. Set aside.
  • In a medium bowl, whisk together egg yolks, buttermilk, and butter. Pour into the dry ingredients, and stir briefly, until just combined. Stir in potatoes.
  • In another medium bowl, beat egg whites until stiff but not dry. Fold into the batter.
  • Ladle about 1/3 cup batter onto each section of the waffle grid; spread batter almost to the edges. Close lid; bake until no steam emerges from waffle iron, 5 to 6 minutes.
  • Transfer waffles to a baking sheet; place in an oven set to low heat, about 200 degrees, while using remaining batter. Serve warm.
